Easy Butter Chicken Curry Recipe
Instructions heat a large skillet or medium saucepan over medium high heat add the oil butter and onions and cook onions down until lightly golden about 3 4 minutes add ginger and garlic and let cook for 30 seconds stirring so it doesn t burn add the chicken tomato paste and spices

Step 2 add the chicken pieces to the marinade and give everything a good mix cover the bowl with cling film and leave to marinate in the fridge if you are pushed for time 30 minutes is fine but it would be preferable to marinate the chicken for at least 3 hours and overnight is even better
Instructions melt ghee in a large dutch oven or pot over medium heat add onion garlic ginger and all the spices cook stirring often until the onions are soft about 5 minutes add the cubed chicken and sauté stirring constantly until the chicken has turned white
Transfer to a plate to serve or rest while you make the butter sauce place a karahi or large pan on the grate over the hottest part of the fire add the oil and half of the butter and bring to a sizzle then pour in the blended onions and fry for about 6 or 7 minutes stirring regularly
Set aside and let marinate for 20 minutes in a small bowl mix together yogurt ginger garlic paste garam masala coriander and cumin pour mixture over chicken and coat well cover with plastic wrap and marinate in the fridge for at least 4 hours or overnight in a large skillet over high heat melt 1 tbl butter
In the meantime finely chop the shallots garlic cloves and coriander heat the grill pan skillet over medium high heat drizzle 1 tablespoon of oil and grill the marinated chicken pieces for 2 3 minutes or until charred then turn sides and cook for another 2 3 minutes remove from pan and set aside
Add the chicken pieces to the marinade then cover and transfer to the fridge to marinate for 1 hour for the second marinade put all the ingredients apart from the chat masala into a mini food processor blend until smooth then add this to the marinated chicken and stir well to coat cover and transfer to the fridge to marinate for 4 hours
Let sit for 15 minutes to marinate melt 2 tablespoons of butter in a large pot over medium heat brown the chicken then remove from the pot melt another 2 tablespoons of butter in the pot then add the onion garam masala remaining teaspoon of chili powder the cumin ginger garlic cayenne cinnamon salt and pepper cook until fragrant
Preheat the oven to 375 degrees f 190 degrees c melt 2 tablespoons butter in a skillet over medium heat stir in onion and garlic and cook slowly until the onion caramelizes to a dark brown about 15 minutes meanwhile combine cream tomato sauce remaining butter salt cayenne pepper and garam masala in a saucepan over medium high heat
Cover again and chill for 3 4 hours or overnight heat the oven to 180c 160c fan gas 4 put the marinated chicken pieces on a grill rack set on a baking tray and bake for 8 10 mins brush the chicken pieces with a little oil and turn them over bake for another 10 12 mins until just cooked through
Heat the butter in a medium non stick frying pan and cook the garlic and ginger over a low heat for 1 2 minutes or until softened but not coloured stirring constantly add the garam masala
