Place the fruit into a food processor and blend until very smooth return to the original pan and add an equal weight of sugar cook over a low heat stirring constantly until the sugar dissolves

Wash and coarsely chop the quinces before placing them in a saucepan with a heavy bottom bring the quinces to a boil in water that barely covers them cover and gently simmer until tender pour the fruit through sterilized muslin or a jelly bag into a clean pail or basin

Put the quinces their peel and 2 litres water in a large pan bring to the boil then cover and reduce to a simmer cook for 2 hours or until the fruit is very soft spoon the quinces and liquid into a jelly bag muslin set over a large pan set aside to strain for at least 12 hours or overnight

Straightaway place a waxed disc over the surface then seal with a lid wipe the jars with a warm damp cloth don t put the labels on until the jam is cold otherwise the heat will prevent them sticking properly and they ll fall off for sure store in a cool dry and preferably dark place too much light is not good for storage while

Put the water in a 6 to 8 quart saucepan and bring to a boil add the grated quince lemon zest and lemon juice allow the mixture to simmer until the quince is soft this might take about 10 to 15 minutes stir in the sugar and bring to a boil again lower the heat to medium high and cook the quince for about an hour stirring occasionally
