Strawberry Tree Jam Recipes

I didn’t notice it at first, the skinny tree with dark leaves in our shared garden at our new home in Settignano, in the hills above Florence. I was too taken by the green vines hanging like a curtain over our entrance, keeping the house cool in the humid Florentine summer. But now that it’s autumn and the the leaves still left on the vines have turned a shade of rose champagne, that skinny green tree is sporting bright vermillion fruit, like fuzzy cherries or red christmas balls. A gust of wind easily blows them to the ground, where they squash like over ripe persimmons.

, in Italian, are called Irish Strawberry trees in English. The whole plant is useful in the kitchen, from the leaves, which can be dried and taken as tea (used, apparently, as an anti-inflammatory). The wood is prized for the stove, as cooking over

Wood can lend good flavour to whatever you’re grilling. The berries are an interesting fruit that are used in jam and liqueurs and taste of something wild and ancient. Soft and mellow, with a flavour that’s hard to put my finger on — a little like jujubes, which, like

Cooked into jam, the flavour and colour is remarkably reminiscent of quince. And, like quince jam, it’s wonderful on its own but really shines when served with cheese. I first tasted it this way when visiting my friend Simona Quirini in her beautiful garden at her family’s restaurant,  Canto del Maggio — they have a proper kitchen garden complete with vegetables, fig trees, olive trees, wild herbs like myrtle, calamint and fennel and a hedge of strawberry trees, bursting with fruit.

Her jam was divine — the colour of caramel, ever so slightly grainy, as Simona likes to leave the seeds for texture, not too sweet and quince-like. She served it with a nutty pecorino cheese and I could have eaten just that all day long. She kindly sent me home not only with the recipe, but with two kilograms of

Well then put them in a large pot and cook them over medium heat until they are so soft that they begin to turn into a puree, when stirred, about 15 minutes. Stir, so that they don’t stick. [If you want a smoother jam, you can pass the cooked, soft fruit through a sieve or food mill at this point].

Heard The One About The Irish Strawberry?

Add the sugar and the lemon zest, if using, then cook again, turning up the heat slightly until it bubbles and turns glossy. This fruit is high in pectin so it will set quite quickly. Use the saucer test to check regularly — a tiny blob of jam on a frozen saucer should quickly tell you the jam is ready when it looks set and the surface ‘wrinkles’ when poked.

Place in sterilised jars (filled to 1.5 cm from the top) and seal the jars by boiling them in a wide saucepan for 10 minutes. Let cool completely before storing. These are my New Year’s resolutions. Everything happed in an instant. A dear family frid, Maura, gave me a jar of home-made strawberry treejam. I tasted a spoonful, th another. Th I asked her where she had found those delicious berries. The next day I was happilypicking arbutus berries inher gardand the very same day I was making jam. While bustling in the kitch, I realized that I was falling in love with that sweet and grainy berries, beautifully fading from yellow to scarlet.

… it is, in itself, a magical tree because duringautumn and winter it brings proudly on its branches at the very same time the leaves, the white flowers, which symbolize the hospitality, and the colorful and sweetish fruit.

Some curiosities. The strawberry tree is an ancit fruit, with a long history interwov with legds, myths and rituals. The Romans attributed to arbutus magical powers: ev now, in some areas, you can find strawberry tree branches with three berries hung at home to dear good luck. Its flowers were also laid on the graves as a sign of respect for those who had passed away.

During the Italian Risorgimto the strawberry tree was considered a symbol of the national unity. The fact of bringing on its branches, at the same time, the gre leaves, the white flowers and the red berries had uplifted the tree, in fact, as a symbol of the national tricolor flag.

Arbutus berries have euphoric and ergetic properties, they give a good mood: they contain much sugar that, whilethe fruit is riping, becomes partlyalcohol… it is therefore not advisable to consume large quantities of mature berries: they can cause youdizziness and drunkness!

Strawberry Tree Curse

Appartly itis also very easy to grow: it is a gerous plant, which does not requiremuch atttion and is thereforesuitable for those who, like me, don’t have a gre thumb. This is the reason I included the strawberry treein my New Year’s resolutions: let’s start with something simple, uh!? It will be great to have some magic in the orchard, hidd in red and sugary berries, berries that tickle you and your sses wh you caress them!

).Sprinkle the berrieswith the juice of an orange and cook on low heat for about t minutes, stirring frequtly with a wood spoon until the fruit becomes soft.

Now sieve the softed fruit. Crush the berrieswith a wood spoon and collect the pulp in a saucepan. There will be a great deal of waste:I evtually had 350 g of smooth, orange and velvety pulp, starting from 750 gof fruit. Return the pulp to theheat and stir in the brown sugar and 5 tablespoons of brandy. Bring back to the boil and keep on stirring with a wood spoon for about 10 minutes. Remove from the heat and ladle into sterilized glass jars.

Sterilization. Pour jam into sterilized jars and close tight. Put the jars in a large pot and cover with water: bring to a boil. Let simmer for 20 minutes and th remove from the heat. Let the jars cool completely in the pan, th remove them from water. You can store them for several months in a dry, cool and dark place.

Taste test. The strawberry tree jam has a special texture, it reminds me of the quince jam, but it also has some nuances of flavor that bring to the mind the fig jam. I find it unique, perfect for breakfast on a slice of toasted bread or in the afternoon as quick snack with some cookies, to give a special touch to a momt of relax.

Few days I talked to you all about el lendj (aka strawberry tree fruits) I recently found in the market. i had them sitting around on the counter for a day or two. The kids randomly popping them in their mouths throughout the day. But having bought about a kilo, I needed to get them used up quickly.

Although the season for preserving is long over, here in Algeria we enjoy several deliciously preservable fruits and vegetables.Linda from Algerian Cuisine group on Facebook shared her mother's jam using these these little berries. I promptly went to test out the recipe, slightly adapting to use less sugar and the addition of orange.

Strawberry Tree Jam (corbezzolo Jam)

The result was a totally unique jam that reminded me of a quince and fig butter. The color of the jam a beautiful bright peachy orange with little flecks of from the berries' outter peel. So pretty and delicious! I think it will be become one of my winter recipes.

Strawberry Chia Jam — Under A Lemon Tree

Spread on any your favorite pancakes, Beghrir, Maârek / M'semmen, bread, or breakfast breads. My favorite is La Mouna, an Algerian orange scented brioche ... coming soon!

After cooling you can store the jam for 6 -12 months in a dry, cool and dark place. And unsteritlized jam in the fridge for about week and half.

Quickest and easiest way to sterilize jars is to wash and rinse your jars leaving them a little wet. Place them in the microwave for about 45 seconds. Remove with kitchen mits.
