Taiwanese beef rolls consist of thinly sliced, aromatic braised beef, wrapped with sweet hoisin sauce, fresh scallion, and cucumber in a crispy, flaky scallion pancake. If that description doesn’t have you immediately interested, I don’t know what will!

Including Beef Noodle Soup, Lu Rou Fan (Braised Pork with Egg Over Rice), Taiwanese Fried Chicken, Taiwanese Pork Chops, and Three Cup Chicken. You’ll see such dishes on most Taiwanese restaurant menus.

Chinese Scallion Pancakes (shallots/green Onion)

Another common item on said menu are these Taiwanese beef rolls, made with crispy green onion pancakes. It’s flaky, chewy, tender, sweet, refreshing, savory, and salty, all at the same time.

We ate at a local Taiwanese restaurant recently, and saw this delicious snack on the majority of the tables. We ordered it as well, and immediately wondered why we hadn’t covered a recipe here on the blog!

That said, if you don’t have a Chinese grocery near you, or would rather make your own from scratch, you can do so using any of our scallion pancake recipes:

Grilled Scallion Pancake Beef Rolls Recipe :: The Meatwave

This recipe is actually a great one to make ahead of time for a party, picnic, or quick lunch. The braised beef shank needs to chill in the fridge before slicing, so that can be done in advance.

The cucumber, scallions, and cilantro can be julienned/chopped ahead of time as well. Then all you need to do is fry up the scallion pancake, and assemble!

If you want to make the pancakes ahead, you can pan-fry them, then wrap in foil. You can also put them in an oven or toaster oven to reheat.

Scallion Pancake Beef Rolls

Slice the beef shank into 4 to 5-inch pieces. Place in a medium pot along with the ginger slices, and cover with water. Bring to a boil, and boil for 30 seconds. You’ll see foam and other impurities rising to the surface of the water. Drain, rinse the beef, and clean the pot. Discard the ginger slices. 

Add the beef back to the clean pot, and add the rock sugar, cinnamon stick, bay leaf, star anise, dried tangerine peel, cloves, Sichuan peppercorns, white or black peppercorns, garlic, scallions, Shaoxing wine, light soy sauce, and dark soy sauce.

Bring to a boil, then reduce the heat to a simmer. Cover and simmer for 1 hour, or until fork tender but still firm (the beef shouldn’t be fall-apart tender). Remove the beef from the pot, and allow to cool at room temperature. Cover and chill in the refrigerator until cooled completely (at least 2 hours or overnight). 

Chinese Scallion Pancakes (葱油饼)

Cook the scallion pancake in oil until crisp on both sides (follow package instructions). Meanwhile, thinly slice the beef and prepare your cucumber, scallions, and cilantro (if using).

That was my nephew performing a dance as part of a Montessori graduation for 6 year olds. This happened two years ago in Taiwan. I’ve never felt that 6 year olds need to graduate. I mean… what do they have to show forth? ABCs and 123s?

When you live long enough in a city that’s really small like Chiayi (in Taiwan), one becomes lazy. A 20 minute drive across town became too long a drive. So, if it wasn’t for the Hawaiian dance, I don’t think I would have ever bothered moving my body that distance.

1. The soy paste used in this recipe, though labeled paste, is actually in liquid form. It's thicker in consistency and slight sweeter than soy sauce. The brand I use is Kim Lan soy paste. It's easily found in most Asian markets. This is not the Korean bean paste, nor the Japanese miso paste, nor the many types of Chinese soy paste which are all in paste form.

2. Leftover broth: Braised additional beef. When done, add some water to broth to make beef noodles soup or add some chili bean sauce to make spicy beef noodles. To die for!

The first time I had heard of or seen Chinese Green Onion Pancake Beef Rolls was when I watched an episode of Guy Fieri's Triple D (Diners, Drive-Ins and Dives).

Slow-cooked beef (usually beef shank) is braised for long hours and placed atop the green onion pancakes, along with cucumbers, cilantro and hoisin sauce.

How To Make Scrumptious Scallion Pancakes

I use an Instant Pot to make easy work of braising the beef shank. (If you don't have an Instant Pot, you can certainly slow-cook the meat in a crock pot or in a heavy-bottomed pot for a few hours.)

Add in the hot boiled water bit by bit, and mix, until a dough forms. Depending on the humidity, you may need to add a little more water or flour.

Once the dough is formed, give it a rest for about 20 minutes. (This helps to relax the gluten in the flour, which makes it easier to roll out).

Roll the dough up into a log, and then coil it up. Flatten with your palm and leave it to rest for about 5 minutes.

Cook the pancake for about 3-4 minutes, until golden and crisp. Give the pancake a flip and continue cooking for another 2-3 minutes.

You can reheat the green onion pancake in a dry frying pan until warm and pliable, and then assemble with the remaining ingredients.
