Easy Keto Low-Carb Pizza Casserole is a quick healthy recipe perfect for meal prep. This dish is baked with cream cheese, pepperoni, and ground beef, a great crustless pizza substitute.
The idea for this casserole came to me for a few reasons. For starters, I see a lot of people who are following a keto diet, post that they eat the cheese and toppings off their pizza and they toss out the crust.

This is a huge waste of food, this casserole is BETTER and won’t waste a bunch of food! I also have a thing for casseroles and I have several popular dishes on the site.
The Best Keto Pizza Casserole Recipe
You can make most of the casserole ahead of time. You can cook the ground beef and the cream cheese and marinara.
If you plan to make the dish ahead I do not recommend you add the cream and eggs. Save that, along with the shredded cheese for right before you bake the dish in the oven.
Cream isn’t usually an ingredient you want to freeze. I have frozen this casserole, fully cooked. Upon reheating, it was still good, but it did not taste as good as it would if you eat it within a few days.

Keto Cauliflower Pizza Dinner Casserole
As I mentioned we used Rao’s Homemade Marinara which is 4 net carbs per 1/2 cup. The Italian sausage we used was bought in the fresh meat section of the local grocery store and was approximately 1 carb per link (I removed the meat from the casings before cooking).
The great thing about pizza is that there are so many ways to make it. Feel free to customize this baked pizza casserole with any of your favorite pizza toppings (as long as they are low carb!).

Simple Chicken Margherita Keto Pizza Casserole With Cauliflower Rice
Sausage, pepperoni, and cheese are the pizza toppings I love most, so of course that’s what I used for this Low-Carb Deconstructed Pizza Casserole recipe! But you can definitely replace the sausage with ground beef or use other toppings like ham, green bell pepper, olives, or even bacon if you want to switch it up a bit. And if you look in the comments on the post you’ll see people make it with a variety of toppings.
Like most casserole recipes, this pizza casserole will freeze well and can be reheated in the microwave or a hot oven. Unfortunately at my house it usually disappears before I can get any in the freezer!

This low-carb pizza casserole would be great for low-carb and Keto diets, and it’s also gluten-free. It can also work for the original South Beach Diet with the right ingredients. Low-carb diet plans will probably prefer pork sausage and pepperoni and full-fat cheese. If you’re following the original South Beach Diet, they’d recommend turkey Italian sausage, turkey pepperoni, and reduced fat Mozzarella.
