Recipe For Chicken Liver Mousse
Chicken liver mousse always make me think of the sexy, cozy wine bar where I once worked in the West Village. I watched their mousse regularly provoke consummate liver-haters to clean the bowl with their fingers. Chicken liver mousse can do that; it's got everything going for it. It's creamy, fatty, savory, and puréed beyond recognition of anything anatomical.
Tom Mylan's version, from The Meat Hook Meat Book, is sure to twist some arms: a little funky, a little boozy, and rich enough to be dessert. Cream cheese, which I haven't seen very often in what is usually a very classic preparation, gives a lift of brightening tang. It is quick (though not 20-minutes quick) and simple to make, and will absolutely impress the guests who you better, for the sake of your arteries, invite over to help you enjoy this. And may I suggest a bottle of something sparkling?

What didn't: The name is a little misleading. It will definitely take you more than 20 minutes start to finish—in fact, more like an hour, once you wait for the cooked livers to cool.

Suggested tweaks: No tweaks, but I love Mylan's serving suggestions: Serve with crusty bread, cornichons or a similarly delicious pickle, and mustard. Or with Ritz crackers. Or on Wonder Bread with grape jelly.

If you are making this during any old pandemic lockdown, you must at least double the cognac - 2T is still very little, and serve for breakfast. Yep, breakfast.
Made exactly according to recipe, yummy but far too much lemon for us. Next time might try 1/4 the amount, maybe even less

Recipe: Enchanté's Chicken Liver Mousse Satisfies All
This was just delicious and made enough for 2 sessions of enjoying the mousse over crackers. I used only 3 TBsp of butter. It was more than enough to get the desired onctuousness.
Sieve it after step 3. Takes out the tiny thyme leaves that didn't get cooked and makes the mousse smoother. Takes about 5 mins more and is a little messy (use a wide-mouth bowl to catch it) but very worth the effort.
A lot of work and exotic ingredients that dont really come out against the liver and butter (pink pepper, marjoram). You buy cheap liver and end up spending 10x as much on the rest... Taste and texture is good but wont make again.
Easy Chicken Liver Pâté
Made it again, with 1/4-1/3 less lemon. Also, increased the salt a scoch. Finally, took 2 T cognac and reduced it over heat to 1T. Great.
This was great, I used Orange liquor instead of Congac as it was all I had on hand. Truly a crowd pleaser. Rich and decadent:

I tweaked the recipe a bit. Instead of using the herbs, I used 1 tablespoon of dijon mustard. Instead of cognac, I used port and omitted the lemon zest following another recipe I have for chicken liver pate. But the addition of heavy cream instead of cream cheese from my recipe makes all the difference. Delicious!!
