And drizzled with vanilla glaze, these easy crumb bars made with melted butter make the perfect bite of sweetness. Recipe makes 16 bars.

I love these jam crumble bars because there’s no special equipment involved (no stand mixer or food processor necessary!). The buttery dough comes together easily in a mixing bowl and holds together nicely to use for both the crust and crumb topping.

Baking Pan–Use an 8-inch square baking pan lined with parchment paper for this recipe. Light-colored pans conduct heat evenly, and parchment paper keeps the bars from sticking to the pan.

Raspberry Bars (with Oatmeal Crumble Topping!)

Crust and Crumble–The crust and crumble are made with the same buttery dough. To make the dough, combine melted butter, sugar, brown sugar, vanilla extract, and almond extract in a large bowl. Combine dry ingredients in a separate bowl, then add to the butter mixture and fold in until incorporated.

Set aside 3/4 cup of dough to use for the topping, mixing in sliced almonds until mixture is crumbly. Chill the topping until ready to use. Press remaining dough evenly into the bottom of prepared baking pan.

Bake Crust–Bake the crust for 14 to 16 minutes, or until lightly golden and set. Transfer to a wire rack and let cool for 15 minutes.

Grated Shortbread Bars With Rose Jam Recipe

Assemble Jam Bars–Place jam in a small bowl and microwave for 10 seconds or until slightly warm. Whisk to loosen, then spread jam evenly over cooled crust. Sprinkle reserved dough over jam layer and return the pan to the oven.

Second Bake–Continue baking crumb bars for 30 to 35 minutes, or until the crumble topping is golden brown and the jam filling is slightly bubbly. Remove bars from the oven and cool completely in pan on a wire rack.

Vanilla Glaze–Whisk together melted butter, salt, vanilla, powdered sugar, and milk in a small bowl. Drizzle vanilla glaze over cooled bars and let set before serving.

To freeze these jam crumb bars, let cool completely. Once cooled, place the unglazed bars on a baking sheet and freeze flat for 1 hour. After 1 hour, transfer the bars to an airtight container and freeze up to 2 months.

There’s so much to love about this simple recipe. It comes together in just a few minutes, it can be enjoyed for breakfast or dessert, it can be served warm, chilled or room temp,

It can be made with any flavor of jam. Choose your favorite flavor of jam or preserves (I’m currently obsessed with Bonne Maman Four Fruits Preserves).

Line your 8×8 baking pan with foil or parchment paper, leaving a little overhang on two opposite sides. Once the bars are cool you can lift them right out of the pan and cut them easily.

After baking, allow the bars to cool, and you’ll be able to cut them into clean slices. I often serve these bars at room temperature or chilled so they’re firm enough to be held easily.

If you’d prefer to eat them warm, you can! They will be a bit less stable and need to be eaten with a fork or spoon (see photo below). When serving these warm I like to top them with a scoop of vanilla ice cream. It’s like eating a fruit crisp that is heavy on the topping, with jam instead of fruit.

This is a dessert, but if you wanted to cut yourself a square to nibble on along with your morning coffee I would pass zero judgment. I only ask that you invite me over to join you.

Jam: We prefer a jam that has a balance of sweet and tart flavors. Some favorites are tart cherry jam and Bonne Maman Four Fruit Preserves.

Recipe updated July 2023. We added weight measurements and an additional ¼ cup of flour.  We found that the bars were a bit more sturdy with the extra flour and we preferred that. If you have made this recipe before and enjoyed it as is, feel free to just use 1-cup of flour.

To begin: In the bowl of a food processor fitted with the steel blade, place the pecans, flour, coconut, oats, salt, and baking powder.

In the bowl of an electric mixer, beat the butter with the granulated sugar and brown sugar until light and creamy, a few minutes.

Place 2/3 of the dough over the bottom of the prepared baking dish, using an offset spatula to spread it into an even layer. (If you don’t have an offset spatula, lightly wet your fingers and press the dough into an even layer.)

Spread the jam over the surface of the dough, leaving ¼-inch space between the jam and thesides of the baking dish so the bars won’t stick quite so much to the foil.

Pinch off 1-inch clumps of the remaining dough and scatter evenly over top of the jam. The dough won’t cover the entire surface; that’s okay.

Let the jam bars cool in the baking dishon a rack for about 15 minutes. Using the foil overhang, lift the bars out of the pan and onto the countertop. Pull the foil away from the sides to prevent sticking, and then let sit until completely cool, a few hours.

Yes, they freeze nicely for up to 2 months. Prior to freezing, let them cool completely and store in an airtight container, separating layers with parchment paper or aluminum foil. Before serving, remove the bars from the container and let them come to room temperature.

Yes, you can replace either of these ingredients with an equal amount of another ingredient that does not need to be avoided, such as the oats, nuts, or coconut.
