It’s comforting and satisfying and seriously delicious. Serve this pasta in bowls topped with fresh chopped parsley and a sprinkle of ground black pepper, with lemon wedges on the side.

Vegan Spring Risotto With Mushrooms And Asparagus

If you need the meal to go further (or need to fancy it up) then a side salad like our vegan Greek salad would go great with this. Some fancy bread like our vegan focaccia would be delicious too.

Don’t overcook the asparagus. The asparagus should be al dente, firm but cooked. If you leave it too long then it will get too soft and break up when tossed with the pasta, so it should ideally be nice and firm.

Start with the asparagus while the pasta is cooking to save time. As soon as you put on the pasta to cook, get going with the asparagus so that it all comes together fast and no time is wasted.

Delicious Vegetarian Asparagus Recipes

Slice off the hard, woody ends of the asparagus spears and throw those away. Then slice the asparagus into 4 pieces. Leave the tips whole and slice the remaining pieces lengthways. This is our preferred way to cut asparagus for pasta but if you want to simplify it, you can just cut each spear of asparagus into 4 pieces (after throwing away the woody ends) and that’s it!

You can easily make this vegan asparagus pasta gluten free. All you need to do is use a gluten free pasta. Everything else will stay the same.

Vegan Lemon Asparagus Pasta

The past couple of times I’ve been to the grocery store I’ve seen lots of fresh asparagus. And not the thick, woody asparagus…the thin, tender asparagus that’s so delicious and easy to eat.

Roasting thin stalks of asparagus is easy and doesn’t take much time. Roasted asparagus is tasty on its own, but when you add a cheesy coating made from nutritional yeast, it’s hard to stop eating it. This easy veggie recipe is sure to become a favorite side dish for your family!

If you have a family that loves asparagus, you may want to double this recipe – just bake it on two cookie sheets.

Easy Roasted Asparagus (perfect & Oil Free)

Asparagus is generally available at the grocery store year-round, but spring is the best season to get it, as crops are harvested from the end of February to the beginning of June.

It’s up to you and your personal preference whether you choose thick or thin stalks of this veggie. The thin stalks of asparagus will cook much quicker than the thick stalks. But occasionally the thinner stalks will be stringy, so you don’t want to overcook them.

Roasted

Nutritional yeast is a delicious, savory topping for many things, including roasted cauliflower and even popcorn. It is gluten free, as is baker’s yeast. The type of yeast that isn’t gluten free is brewer’s yeast. Read more about gluten intolerance and yeast here.

How To Roast Asparagus!

If you can’t find nutritional yeast, you can use regular parmesan cheese (if you can have dairy), or just more seasonings. Roasted asparagus is just delicious with only salt and pepper, too!

You can store leftovers in the refrigerator for up to 3 days. However, this is best eaten fresh out of the oven.

Perfect Roasted Asparagus Recipe

So I’m adding to the asparagus recipes on TSV with this delicious sheet pan dinner. And if you don’t care for asparagus, you’ll find a couple of suggestions to replace it.

Let cool and serve with sliced avocado and plenty of parsley sprinkled overtop. Serve with a side of quinoa for even more protein and fiber.

This would make the perfect weeknight meal when you want something hearty, nutritious, fuss-free and on the table in under an hour. It’s also great for meal prepping and can be stored in the refrigerator for up to 5 – 6 days.

Roasted Asparagus And Mushrooms

Assemble: Add the potatoes, carrots and chickpeas to the sheet pan, drizzle with 1 1/2 tablespoon olive oil and 3/4 of the spices, toss to coat. Arrange the potatoes flesh side down, this will help them get crispy edges.

Add onion + asparagus: Carefully remove the pan from the oven, push the potato mixture to one side, add the onion and asparagus, add the remaining oil and herb/spice mix, toss to coat.

Continue roasting: Place sheet pan back in the oven and roast for 10 – 15 minutes more. Let cool a few minutes before serving.

Serve: Place in individual serving bowls and top with parsley sprinkled over top and sliced avocado on the side.
