I was going to start off today’s recipe by saying that lamb is the national meat of Australia. But then I stopped short, remembering how proud we are of our beef, and the seafood we catch in our pristine oceans, and how far we’ve come to make ethical and sustainably farmed chickens more accessible to everyday Aussies…..

We Aussies love our lamb. And we really love a good lamb chop. So here’s a wickedly good way to cook up your next lamb chops – lightly marinated in garlic and rosemary, aggressively seared to create an awesome crust, then doused liberally in a rosemary gravy made using the pan drippings.
How To Cook Lamb Loin Chops
You need very little for this recipe because lamb has so much flavour, we’re going to use it to the max and just compliment it with flavours that lamb loves: garlic and rosemary.
Being one of the stronger flavoured meats, lamb doesn’t really need marinating but in this recipe, I really like to drive home the rosemary flavour – and while I’m at it, I add a good wack of garlic flavour too (being that lamb loves both).
So I marinade the lamb chops in rosemary and garlic first before pan frying aggressively so they get a terrific crust (lamb loves a good sear, like steaks). Then while the lamb is resting, we use the pan drippings to make a rosemary gravy (it takes 3 minutes flat!).

Normal lamb chops might be highly flexible with regards to what they can be served with. But for this one, a creamy, gravy-soakable starchy side is essential. Preferably mashed potato – because lamb + gravy + peas is pretty much perfection on a plate.
If you’re out of potato, serve it over anything that can be used to smother with gravy – pasta, rice (plain, basmati, jasmine – or try this fabulous Seasoned Rice), polenta, couscous. Just trust me when I say that you won’t want to waste a drop of that rosemary gravy!
PS Oh – and as for greens! Green Bean Salad is always a firm favourite with lamb, or just a big leafy salad or garden salad with a classic Vinaigrette.

TIP: Garlic and rosemary burns when seared. Just brush off what you can before placing in skillet, then brush off any stray bits before plating up.

3. Gluten free - Skip flour, ensure stock is gluten free. Mix 1 1/2 tbsp cornflour/cornstarch with 2 tbsp water, then add that into the liquid in the pan. Mix, will thicken in 2 minutes or so.

Lamb Chops – You can use either lamb loin or lamb rib chop, so long as they’re about 1-1.25 inches in thickenss. (Note the temperature difference for each below, in the FAQs.)
An interesting fact is that all lamb chops are not alike – the term “lamb chop” is actually a reference to several cuts of meat. Most common types you will find are rib chops and loin chops. Other, and slightly less popular ones, are shoulder blade, sirloin, and leg chops. The texture of these cuts will be different and there is a slight difference in flavor as well.
Lamb is a very tender meat that has a distinctive rich and gamey flavor. The fat in lamb is evenly distributed through the meat, which helps with the tenderness and rich flavor.
Lamb Chops With Mustard Thyme Sauce

Before starting to cook, take the meat out of the refrigerator and the wrapping and leave them to warm up for about 30-45 minutes.

Preheat the skillet first and add olive oil. Sear the chops on a skillet for about 3-5 minutes (1) and flip (2).
Lamb Loin Chops
Let it melt and gently swish the pan to combine. Use a spoon to drizzle the meat with the flavorful butter (4). Cook another 3-5 minutes.
Once the thickest piece has reached the ideal internal temperature, remove them from the skillet and loosely tent them with foil. Let them rest for about 10 minutes.
PRO TIP: For the best flavor, combine the juices that drained off the meat as it rested with the flavorful butter in the pan, and pour that over the lamb chops while serving.
Baked Lamb Chops
Lamb chops are pretty small, so you want to aim at 2 or 3 chops per person. If you serve hearty, filling sides along with it, you can keep the amount of chops pretty low. If you serve light sides like vegetables, you may have to go up to 4 chops per person.
Lamb is a very tender cut of meat, so you want to be careful with the temperature. When it’s overdone, it will be tough, dried-out, and will taste much more gamey. With that being said, under-cooking the lamb will make the meat unpleasantly chewy.
Lamb rib chops (the ones that look like lollipops) are best when cooked to about 130°F. Loin chops (the ones that look like T-bones) are better when cooked to a higher temperature, about 140°F.

To measure the internal temperature, use an instant read thermometer and measure the center of the thickest part. Measure close to the bone but NOT touching the bone!
