Braised Red Cabbage is one of my favorite easy side dishes! Serve this colorful dish alongside stuffed pork tenderloin for a healthy and easy weeknight dinner!

Red cabbage recipes go back as far as the Great Depression and still appear frequently on tables across the country all year round.  Who doesn’t have fond memories of our grandmother’s cooking red cabbage on the stove while the rest of the dinner was being prepared?

Simple

This easy red cabbage recipe is a snap to put together because it requires so few ingredients and so little real prep. Braised Red Cabbage is a traditional recipe often found served alongside German main dishes.

German Red Cabbage With Apples (rotkohl)

Some braised cabbage recipes call for coarsely chopped red cabbage or thinly sliced. This cabbage cooks for a long time so I chop it about 1/2″ thick.  In this recipe, the apples are peeled and thinly sliced as apple peels can be a bit tough and chewy. Any way you slice it, the final result is a nutritious, filling, and surprisingly low carb side dish.

Most purple cabbage recipes call for it chopped or sliced and served cold in salads or slaws. Sauteed red cabbage is usually lightly cooked in oil or bacon grease and so that it stays a little bit crunchy.

But this easy braised cabbage recipe is simmered down slowly so the sweetness of the apple and the tartness of the vinegar soak into the cabbage to create a colorfully fragrant dish! The flavor is a light sweet and sour, and the longer cook time makes a big  difference in the flavor of the dish.

Apple cider vinegar helps maintain the bright color of the cabbage as well as marinates the apple and cabbage flavors together resulting in a side dish that can be served hot or cold. You can top this braised cabbage with apple with a dollop of sour cream or serve alongside pork chops or meatloaf. Served cold, it can be a tangy and crunchy substitute for lettuce in a sandwich or wrap or served as a side salad with a hot bowl of chicken noodle soup!

Braised red cabbage can even be frozen for future use. Just be sure it is completely chilled and then portion into freezer bags and lie flat on a cookie sheet. Once frozen, stack horizontally or vertically. When you are ready to use, simply thaw, drain and re-adjust the seasonings!

Step Spicy Sesame Sauteed Red Cabbage

Cooking red cabbage is easy. Bring a large pan to medium high heat. Add olive oil, cabbage, salt, and pepper. Reduce heat to medium low.

Having said that, it can be done cooking whenever you are done cooking it! We eat cabbage raw all the time in slaw, so if you get 20 minutes in and it's soft enough for you and that's what you like then be done with cooking and eat faster!

If the purple cabbage is burning or sticking to the pan, reduce the heat and add a little water until the cabbage becomes unstuck. Covering the pan with a lid for a couple minutes will add some steam as well and make it cook a little faster. It will need to be uncovered eventually to get the browned caramelization.

Cook the red cabbage covered if you want to speed up the process. I prefer to cook cabbage uncovered if I have the time to try to get it crispier. Cooking it covered speeds up the process and steams it a little more.

Sauteed

Trying to speed this recipe up? Add a little water to the pan, not much, ~ ½ cup. Then add the oil after the water evaporates. The water will speed up the cooking process and get it steaming faster.

Slice the cabbage thin or thick. It doesn't matter. Thinner slices may be able to fit into a large pan easier if the head of cabbage is really big.

Purple Rice (red Cabbage Rice)

Add any spices that you like to this cooked purple cabbage recipe. I wrote this recipe with just olive oil, salt, and pepper as the ingredients, but if you watch the instructional video, you will see that I added some of my favorite spices: cumin, thyme, and oregano.

I also toss in a little balsamic vinegar sometimes at the end of cooking the red cabbage for an additional boost of sweetness. Careful though - a little balsamic vinegar goes a long way if you go that route.

This cabbage has been cooking (covered) for about 30 minutes. If you like crispier cabbage then it's ready to eat. Cook it for the full 50 minutes if you want softer and more caramelized cabbage.

Braised German Red Cabbage (rotkohl)

Like green cabbage better than red / purple cabbage? Cool - use that instead. The color of cabbage is interchangeable in this simple recipe. Having said that, the purple / red cabbage really pops if you're looking for a vibrant side dish.

The red cabbage can be sliced thin as I've done in this video or chunked into larger pieces. Slice or chunk the cabbage to whichever texture you prefer. Thicker slices will need a larger pan.

Remember that the beautiful colors of red / purple cabbage can bleed into other ingredients or a main dish so serve this on the side if food compartmentalization is important in your household.

Yup! Knock it out. Just remember that red / purple cabbage bleeds so anything you cook it with will not retain it's original color. For example, if you cook it with carrots, the carrots will also turn red / purple.

Meats like beef, chicken, or sausage or make it vegetarian with a potato salad , cucumber salad, and a hearty butternut squash soup.

This grocery store standby may be officially named red cabbage, but I won’t correct you if you call it purple cabbage. The color is beautiful and bright. When you roast it, it does darken, but it still has that signature violet hue.

You are probably wondering if you can use green cabbage (a.k.a. regular white cabbage) instead, and the answer is yes. They are very similar in taste and texture.

Also, if you are trying to eat on a budget, cabbage is a great choice. The density of the leaves packs in a lot for the money for healthy recipes. Cabbage has vitamin A, vitamin C, vitamin K, Vitamin B6 and lots of antioxidants.It’s low carb and low in calories if that’s on your mind, and you’re looking for a healthy side dish.

Instant Pot Braised Red Cabbage Recipe

1. Prep the cabbage.Remove any wilted outer leaves. Trim the bottom off the whole cabbage with a sharp knife. After that, cut it in half lengthwise. Then cut it into 1/2-inch-thick slices.

2. Make the marinade.Whisk together the olive oil, balsamic vinegar, honey, mustard, garlic powder, onion powder, red pepper flakes, salt and pepper. I like doing this in a wide bowl with a flat bottom. While not required for the recipe, it does help get the slices in the marinade.

3. Dip the cabbage slices on each flat side into the marinade.I find this is much easier than using a pastry brush, and you can really coat the raw cabbage.
