This vegan avocado pasta is fresh, easy to make and bursting with flavor. The creamy avocado sauce is entirely dairy-free, and the recipe comes together in under 15 minutes. Easy to make gluten-free.
Today's post features two of my favourite things: pasta and avocado! They're even more delicious put together in a dish that's pretty much weeknight dinner/quick lunch goals.

Give this avocado pasta a go if you're looking for a new pasta sauce to try out. I can almost guarantee that you will end up going back for seconds (and making it again the next day)!
Vegetarian Avocado Recipes
I don't even know where to begin. The last time I made this, it disappeared within five minutes. Okay, even less than five minutes.
That sounds pretty dramatic, but shows just how yummy this dish is. Creamy, ripe avocados form a delicious base, and then you only need a handful of simple ingredients.
It's as simple as blending the sauce, then adding it to pasta of your choice. 15 minutes, and you'll have dinner on the table! I also love making this for a flavorful lunch in the middle of a busy day.
Vegan Avocado Caesar Salad
Pasta of your choice. I love using fettuccine or spaghetti, but any type of pasta will work. Use gluten-free pasta to easily make this dish gluten-free.
Ripe avocados. As with any avocado recipe, ripeness is key for the best flavour and texture. This will depend on the season and the supermarket, but if your avocados are too hard, I would recommend leaving them to ripen on the counter for a couple of days.
Fresh cilantro. You can also use other fresh herbs of your choice, such as dill or parsley. This is essential for adding that wonderful undertone of freshness to the sauce!
Vegan Avocado Dressing
Vegan cream cheese. Use any brand of your choice. But as I mentioned, this really adds to the flavor and also helps create a creamier texture. I like this brand!
It's super easy! You want to start by cooking the pasta you're using until al dente. Drain when done, but don't rinse.
Make the sauce by adding the avocado, cilantro, shallots, garlic, maple syrup, vegan cream cheese, salt, cumin and lemon juice to a blender or food processor. Blend until very smooth.
Vegan Potato Bean Burritos
In a bowl or pan, add the sauce to the pasta and mix together well. Serve the avocado pasta immediately, or leave to chill in the fridge for around 20 minutes to serve cold.
As avocados tend to oxidise pretty quickly, this dish is best eaten straight away. However, you can keep it in the fridge in an airtight container for up to a day.

You can add vegetables of your choice to make a pasta salad. For instance, tomatoes, cucumbers, and leafy greens work really well. You can also add beans/tofu for extra texture and some plant based protein.

Creamy Vegan Avocado Dressing (no Oil!)
Whether scooped right out of the skin with a sprinkle of salt & pepper, or simply diced or sliced and tossed in with other foods such as salads, soups or nourish bowls.
They are extremely versatile and can be served in many ways. And today we’ll be serving them stuffed, and as you can imagine they taste amazing with a variety of fillings!

First off (as shown above), we’ll start with a mixed medley of diced fruits and vegetables. I diced up cucumber, bell pepper, red onion, and jalapeno, and combined them with hummus to bind. It’s a cool and refreshing combination with a slight spicy kick. You can also add in a minced garlic or use flavored hummus for variation. To make raw, use this Raw Spouted Hummus!

Secondly, I just updated this Greek Quinoa Salad and had some leftover. I thought it would be a perfect stuffing for avocados and have it pictured here as well (see below).

Healthy Avocado Potato Salad
Stuffed avocados anyone? Both festive and fun, they make for a great snack, side or light meal. Enjoy the various ways to stuff your avocados!
Prepare the ingredients. Once you’ve sliced the avocados and removed the seeds, squeeze or rub a little lemon juice on the flesh to keep the browning at bay.

Place the cucumber, bell pepper, jalapeno, onion, and optional garlic and diced tomatoes in a small/medium mixing bowl, add just enough of the hummus or vegan mayo to bind.These baked avocados were literally the biggest hit on Instagram when I posted them last week. I didn’t even think about it, but the fact that you could actually eat avocados warm, apparently surprised many of you. I first realized that you could actually bake avocados when I saw this post by Ella Woodward in the Telegraph. I have to admit that I was a bit sceptic at first, because I had only ever eaten avocados raw, but after I tried it for the first time, I was instantly in love. A whole new world opened up to me, and I think I never want to eat another appetizer ever again. Speaking of appetizers, I realized that I didn’t really post that many appetizers yet, so I am going to try to change this in the future. I doubt, however, that I will ever find something more delicious than these little baked avocados.
Avocado Quesadilla (easy, Vegan)
So besides from the mind blowing fact that you could actually bake avocados, this recipe also has another amazing ingredient that I discovered recently: za’atar. Za’atar is a middle eastern spice blend that is most commonly mixed with olive oil and spread on flat bread. It’s also often used in dips or to marinate vegetables or meat. In this recipe it is a wonderful addition to the black rice and chickpea filling and gives this appetizer the final, and most delicious oriental touch. You can buy za’atar in any middle eastern market, but many supermarkets with a well sorted spice isle will also carry it. However, I prefer to make my own, as it is much cheaper and absolutely fun to make it yourself. The secret ingredient in za’atar is sumac. In case you haven’t heard of sumac yet, you need to listen carefully now. Sumac is a ground deep red berry that grows on the sumac bush in the Middle Eastern regions. It has a nice tangy flavor, similar to lemons, although it is much less tart than lemon flavor. You can sprinkle it on literally anything that needs a balanced tangy touch. I think it goes really well with hummus or even tabbouleh.
Combined with the chickpeas, the delicious black rice, sweet cherry tomatoes, fresh lemon juice and fresh parsley, it creates the most wonderful kind of salad, that I almost always end up eating out of the bowl before I have a chance to scoop it into the avocados. I strongly encourage you not to follow my example, because combined with the warm avocados, it tastes even better.Stuffed avocados are a favorite summer lunch around here! One of my favorite easy summer salads is to make a quick avocado salad with chopped tomatoes and cucumbers. I often add chickpeas to the salad to make it more filling, and dress it either with oil + lemon juice, homemade Italian dressing, or a creamy dressing with a vegan mayo base.
Avocado Chickpea Salad
When I am feeling fancy, I serve the salad in avocado boats, meaning I put the salad into halved avocados to make stuffed avocados. It makes for a fancy-looking presentation and doesn't take any more effort on my part! Perfect for a nice summer lunch or to serve to guests when we have people over.
The dressing for these stuffed avocados is made by combining a vegan mayo with garlic powder, salt, pepper, and a little fresh squeezed lemon juice (lime juice works too!). It's super simple to stir together and is always so tasty.
