Gooey Chocolate Brownies Recipe
This recipe was first published March 31st, 2018. It has been updated with a slightly tweaked recipe (buttercream removed) and new photos and information.
I used to add a hazelnut buttercream to the top of these for extra decadence. While I removed it when I updated this recipe (since it adds quite a bit more sweetness and richness), feel free to add it using the hazelnut buttercream recipe from this cake.
I buy my hazelnuts already toasted but if you can’t get those, you can do it yourself at home. Don’t skip it as it makes such a flavour difference making them more mellow and sweet.
Vegan Hazelnut Brownies (easy, Moist, Fudgy)
My favourite base brownie recipe is so, so much better than box mix brownies and can be adjusted with so many different add-ins.
Many recipes call for you to use milk instead of water. Mine doesn’t require either — I find that the combination of butter, two sugars, and dark chocolate (in addition to the other ingredients) gives me dense and moist hazelnut brownies every time.
It’s all about the flour ratio. Fudgy brownies contain less flour and more butter and chocolate. Cakey brownies use more flour. I only use 95 grams (¾ cup) of flour in my brownies with hazelnuts, so they come out perfectly fudgy.
Chocolate Espresso And Hazelnut Brownie Recipe
Adding nuts adds a pop of texture and crunch to chocolate brownies, and I also love the added earthy taste. You can also add a splash of espresso which actually intensifies the chocolate flavour! Finally, I use real chocolate mixed into the batter which adds more chocolate flavour than using cocoa powder alone.
You should store them in an airtight container. They’ll keep for 4-5 days at room temperature, and if you store them in the fridge, they’ll last for about a week. You can enjoy them at room temperature, cold, or even heated up. I pop mine in the microwave for about 20-30 seconds, and they’re perfect!

This recipe is fairly straightforward to follow but I know I’ve made some silly mistakes on easy recipes before so here are some tips and tricks to make sure yours are picture perfect!
1. Do follow the recipe as described! It’s very tempting to cut corners on recipes (I do it all the time!) but often people make the most mistakes on the easiest recipes!

2. This recipe results in a perfectly fudgey brownie but if you prefer lighter, cakier brownies then add 1/2 tsp baking powder.
3. Don’t skip the salt. I know it seems odd adding salt to desserts but when all the elements are sweet, you need a pinch of salt for balance.
4. Don’t be intimidated by the meringue element of this recipe. It make seem odd to whip an airy meringue when we’re aiming for fudgey brownies but this method provides a lot of value. Firstly, aquafaba is a mild binder so it replaces some of the properties of adding eggs to this kind of recipe. Secondly, dissolving the sugar into the meringue results in a shiny top of the brownies which you can see in the photos. It also adds a small amount of air into the batter so it’s not too fudgey.

5. Use a good quality chocolate. Like most chocolate recipes, these will only taste as good as the quality of chocolate you use. Feel free to even use a hazelnut-flavoured chocolate to add an extra layer of nuttiness.
6. Don’t worry about the brownies sinking in the middle. This is completely normal and, in my opinion, actually desirable. I love a corner piece with a crispy edge and a softer middle! If you want slightly gooey brownies then bake these brownies for only 30-35 minutes.

*I use the dry-roasted, unsalted hazelnuts from Trader Joe's. If you buy raw hazelnuts, you can roast them at 325°F for about 15 minutes.
Choc Hazelnut Brownies With Chocolate Drizzle
Add in the eggs one at a time and whisk each one until fully incorporated and the batter starts to get lighter in color. Then add in the vanilla and mix until smooth.
Cut a parchment paper sling slightly smaller than the width of the cake pan and make sure it fits flatly in the bottom. Then lightly spray the bottom and sides of the pan with a vegetable oil based spray (I love Bakers Joy or Everbake). Place you parchment paper sling in the bottom of the pan and smooth it out so that it sticks to the pan spray (you can use metal binder clips to secure it to the pan). After baking you’ll be able to just slide the brownies right out of the pan!
I love all of myUSA Pancake pans because they are extremely sturdy and truly nonstick. However, I still like to prepare my pans to ensure the hazelnut brownies come out easily.

Nutella® Hazelnut Brownies
Remove from the oven and let fully cool in the pan. Then use the edges of the parchment paper to slide the brownies out of the pan.
Use room temperature ingredients! Always make sure ingredients like butter, eggs, milk, etc. are at room temperature before baking (unless the recipe indicates otherwise)! This ensures they'll incorporate into the batter more easily and leads to overall better texture. Remove all ingredients from the fridge 30 minutes to an hour before baking for best results.
Measure your flour correctly! It's most accurate to use a kitchen scale, but if you're measuring by volume you want to spoon and level! Fluff up the flour a bit with a spoon, and then spoon flour into the measuring cup. Once it's overflowing, use the back of a knife to level it off. Don't ever pack flour into the measuring cup or you'll end up with way too much! Improperly measured flour can lead to dry, dense baked goods.
Raw Chocolate Hazelnut Fudge Brownies (vegan Gf)
Use an oven thermometer! Just because your oven says it's 350, doesn't mean it is! If you oven hasn't been calibrated recently, it can be as much as 30 degrees off, which will negatively affect all baked goods from cakes to macarons! An oven thermometer is the easiest/cheapest way to ensure your oven is always at the proper temperature.
Use a metal baking pan! Not all materials are created equal when it comes to baking. Metal cake pans conduct heat much better than other materials like glass or ceramic, so your baked goods will cook faster and more evenly!
It's better to undercook the brownies slightly, than overcook them! Brownies will dry out quick, so it's best to err on the side
