Recipe Chocolate Coconut Pie
A light and creamy pudding pie that comes together in 15 minutes. Made with coconut and chocolate puddings, and lots of toasted coconut and fluffy whipped cream!
It is the simple things in life. Like, my cat snuggled up next to me curled in a ball, with her paws covering her eyes. Sometimes she also snores a little. Pretty pink bundles of flowers blossoming on some kind of tree that I can’t name in my front yard. The wind-chimes jingling because rain clouds are moving in. Passing off a big spoonful of peanut butter for breakfast.

And, you know, shopping for shoes online in my pajamas without having to leave my house. Ordering the complete series of Boy Meets World for an astonishingly low price with an Amazon gift card I got for my birthday. I guess those are not-so-great examples of the simple things in life. Hmph.
Chocolate Coconut Pie (easy!)
Simple is more accurate. Either way, simple in the truest sense of the word. But no less amazing and delicious. Seriously, unless you have a strange hatred for pudding, did you ever meet a pudding pie you didn’t like?
After making a No Bake Twix Pie, I started down the road of a Mounds Pie. I redirected for some reason and ended up not bothering with the candy bars themselves, but included the flavors – chocolate and coconut. I’d spent the summer meaning to make a coconut cream pie, and a chocolate cream pie, separately, but never got to them. Here, I knocked them both out in one swoop. I think it worked out even better this way. Chocolate and coconut together are a powerful, if underrated, pair.
This Chocolate Coconut Cream Pie came together in about 15 minutes total, and was one of the dreamiest pies I’ve ever had. Each creamy and luscious pudding layer is also a little mousse-like because I added a generous helping of whipped topping to make it lighter and fluffier. There’s a boatload of shredded coconut in this pie too. It’s so simple – both in idea and execution – but there’s just nothing like an old-fashioned pudding pie to satisfy your sweet-tooth.This delicious Chocolate Coconut Cream Pie combines the classic coconut flavors we all know and love with an indulgent dark chocolate drizzle. It's like an Almond Joy in pie form!
The Best Ever Chocolate Coconut Cream Pie Recipe W/ Dairy Free Variation
Aaaand my coconut obsession continues! I've actually always been obsessed with coconut, but between my recent Coconut Lime Shrimp and Coconut Granita recipes, I think it's starting to show. 😉 Today, I am sharing this amazing Chocolate Coconut Cream Pie. This is so simple to make, and it's a cold and creamy pie which means it's totally perfect for summer. I couldn't resist adding a drizzle of dark chocolate over the top, and the result is this pie that tastes just like an almond joy. Yum!
As I was planning this coconut cream pie, I had to give some thought to the whipped cream garnish on top. AKA, the best part of any pie ever. I love whipped cream with every fiber of my being, but there is nothing sadder than deflated, liquified whipped cream on a dessert. So depressing. I went to Pinterest with my question, and found the easiest, most foolproof trick to make your whipped cream not melt... milk powder! Just add a tablespoon of milk powder to your heavy cream as you're whipping it, easy as that. The taste and consistency don't change, but the whipped cream stays solid and pretty for DAYS. This pie took about 3 days to get totally devoured in my household, and the whipped cream stayed in perfect peaks the entire time. Magic!
My obsession with almond joys is seriously not as well documented as it should be. I have these almond joy granola bars, and this almond joy sheet cake, and these adorable almond joy cups. And now I have this pseudo-almond joy chocolate coconut cream pie! But really, the combination of coconut and chocolate is one of my all-time favorites. I mean chocolate with anything is pretty fabulous. From peanut butter to banana to berries, they're all fantastic. But coconut might be the best combination of all! Impossibly Easy Chocolate Coconut Pie Recipe

Chocolate and coconut were made for each other. The rich flavor of the chocolate and nutty flavor of coconut makes this pie a delicious and dangerous combination. Dangerous, because it is hard to not keep going back for more!
I mean I love the flaky crust and the thick layer of coconut whipped cream but it is all about the chocolate and coconut. And one of the key reasons this pie is so good, is the toasted coconut on top.

Chocolate And Coconut Cream Pie Recipe
To start you’ll want to make the chocolate coconut cream pie crust. I prefer homemade, but if you want to use store-bought, go for it (no judgements here)! You’ll need to blind bake the crust for this particular pie. Here are a few tips for blind-baking success:
5.) Use parchment paper to line the dough, and DEFINITELY use some sort of weights (actual pie weights, dry rice or dry beans).
6.) Go low & slow. Bake the pie crust at 375 degrees for 20-25 minutes, then remove the parchment and weights and continue baking for another 10 minutes until the bottom is set.
Chocolate Coconut Pecan Pie
Steep the coconut in the cream mixture, temper the egg/cornstarch mixture, cook until it reaches 165 degrees, then pour over a mesh sieve into a big bowl of chopped semisweet or bittersweet chocolate (along with some butter and vanilla too).
Let it chill in the refrigerator for 1 hour before transferring it to the cooled crust. This will prevent it from making the crust soggy. Let the pie chill for at least 3 hours before serving.

When you’re ready to serve it, whip up the topping. I wanted the topping to taste like coconut, but have the texture of whipped cream, so I used chilled full-fat coconut milk and heavy cream. It whipped up beautifully and tasted amazing! Top it off with some toasted coconut, and maybe some chocolate shavings, and it’s good to go!
Kitchen Simmer: Easy Chocolate Coconut Cream Pie No Bake Version
If I am going extra flair then I might add some toasted slivered almonds and drizzle some homemade chocolate sauce on top!
Make sure your chocolate coconut cream pie cools for at least an hour before putting it in the refrigerator. However, I don’t recommend you leave it out of the refrigerator for more than 2 hours. Cover it loosely with aluminum foil or plastic wrap and your pie will keep for 3-4 days.
Cream pies do not usually do well in the freezer so I don’t recommend freezing this pie. However, you can make it ahead of time and store it in the fridge for 2-3 days before serving.
Dairy Free Chocolate Coconut Cream Pie
We absolutely LOVED this chocolate coconut cream pie! While it was a little time consuming, it was definitely worth it. If you love chocolate and coconut, this pie is for YOU. 🙂

You can cut in the butter with a pastry blender by hand and then slowly add the water. You'll knead the dough a bit to form a ball. -This pie becomes very hard the longer you chill it. If you plan on making it ahead, let it come to room temperature for 1 hour before adding the whipped topping.
