Raw Chocolate Recipes With Coconut Oil

Raw Chocolate Recipes With Coconut Oil

I never thought the day would come when I could say I make my own homemade chocolate, how couldthat even be possible?

I was so impressed by the idea of making homemade chocolate using only 3 ingredients without the need for any fancy equipments ortechniques. The basic recipe calls for:

Homemade

So many times and have experimented with so many different variations. That’s the beauty of making your own chocolate, you can use exactly what YOU like – caramel, peppermint, coffee, vanilla, nuts, raisins… the possibilities are endless!

I’m a self proclaimed chocolate addict, it’s one of my weaknesses (admittedly I have many of those!) and I probably have it every single day, especially now that we’re told it’s actually good for us and our cardiovascular health. Although, when they say ‘chocolate’, they’re actually referring to the properties found in the cocoa bean itself, not a cadbury bar! I know that dark chocolate is not everyone’s cup of tea, but I’m lucky in that I love dark chocolate. Give me a 90% bar and I’m a happy girl! However, there is something so comforting aboutmakinghomemade chocolate, especially whenIsee the expression of amazement on people’s faces when I serve it to them – ‘did you really make this?’.

You can make your homemade coconut oil chocolate extra special by adding lots of yummy toppings. What’s even better than chocolate is chocolate with lots of crunchy and chewy toppings. Quinoa pops and pistachios are probably two of my favourite things to add to homemade chocolate. I like the crunch that the pops give, and adding pistachios can makeany recipe sophisticated and luxurious, and

I’m also adding some dried cranberries for a bit of chewiness, some coconut flakes and some cranberry powder for a lovely vibrant colour.

Even though coconut oil is high in saturated fats, it’s not the same as the saturated fats found in animal products and it’s actually being hailed as a super food as more and more research is showing the potential health benefits of this humble fruit. From aiding weight loss, to lowering cholesterol and booting brain function. As I always say, if you’re going to havea treat, why not haveone that’s good for you at the same time, right?

I like to think of myself as a recipe creating tornado and I frequently drive Eric nuts because he is so much more organized than I am. When you are with someone for almost 15 years you learn every one of their little (and big) quirks. Day by day….by day.

The guy has a thing for dishwasher organization. It’s his pride and joy. And it’s actually impressive, the dedication that he puts into carefully loading and stacking the dishwasher every day. He has refined his technique over the years too, always improving. Impressive. At first glance, you might think that he’s just a normal guy unloading or loading the dishwasher, but you’d be wrong, very wrong. He is not normal. Eric has been trying to enlighten me with his genius dishwasher short-cuts ever since we got together. I stubbornly refused for years until I recently discovered how amusing it is to see him so proud when I use his “tricks”. He beams with pride.

My sister was over yesterday and after dinner we got talking about how her husband/my brother-in-law insists that the dishwasher is loaded in a certain way. Hmm sounds familiar. So began a hilarious conversation with us and the guys talking about how a dishwasher

Well, that rings a bell. I hear Eric tinkering away with unloading and reloading my dishes every night. He also has a system of loading my measuring spoons (because I typically use about 20+ on any given day of recipe testing). We have a dishwasher with a narrow top tray for cutlery and he has created this whole system of how to load the measuring spoons and other utensils so that they don’t collect/pool any water…right down to which direction they face for optimum drying. Like I said, not normal…but impressive.

I should also mention that we had a 10+ year ongoing debate about whether ketchup should be refrigerated or not. I said that, yes, ketchup should be refrigerated and he always said it shouldn’t (just a personal preference on his part). One day I pointed out the label which reads “Keep refrigerated” and it’s been in the fridge ever since! Case closed. Mystery solved. He finally gave in (even if it’s perfectly fine at room temperature).

This homemade chocolate is made with just a few essential ingredients - virgin coconut oil, cocoa or cacao powder, and pure maple syrup. (Feel free to use whichever liquid sweetener you prefer). The virgin coconut oil replaces the cocoa butter found in traditional chocolate so while it needs to be kept in the freezer, it’s a great way to sneak some coconut oil into your day. You can also use any toppings you'd like - dried fruit, nuts, + seeds all work lovely. It melts much faster than regular chocolate, so be sure to keep it chilled until ready to enjoy. I prefer it straight from the freezer.

Tip: To make this nut-free, simply omit the almond butter, hazelnuts, and almonds. It will still turn out just fine! You can try adding toasted sunflower seeds on top for a little crunch. This easy coconut oil chocolate recipe has just 4 ingredients. Kids will love this easy method of making chocolate from scratch - it's like magic!

Coconut Oil Chocolate Recipes

I've been making this easy homemade chocolate for years. It's great for my husband who has to avoid dairy products as it's made from just coconut oil, cocoa powder and honey, with a little vanilla for extra flavour, so no milk in sight.

This chocolate is super quick to make and sets really quickly in the fridge or freezer. It's beautifully versatile too, you can add any toppings or fillings and once you've made the basic chocolate mixture, you can turn it into cubes or fun shapes with a mould, giant chocolate buttons or slabs of chocolate bark - just pick and follow one of the different methods detailed in the recipe and notes below.

Raw Vegan Brownies (healthy No Bake Recipe, Gf)

This type of chocolate is most similar to dark chocolate, so be warned, it will taste less sweet than milk chocolate if that's what your kids are used to.

Note: Once set, this type of chocolate should be stored in an airtight box the fridge until ready to eat, as it will melt and get very soft in a warm room.

The honey in this recipe can be swapped for another similar sweetener such as maple syrup or golden syrup. If using honey, please don't give this chocolate to a child under the age of 12 months, instead, use an alternative sweetener instead. The amount of honey can be reduced by 1 Tbsp if preferred, for a less sweet chocolate.

Vanilla extract is not essential to this recipe, however it does add to the flavour and sweetness so I highly recommend using it if you have some available.

Optional extras you can add to this recipe include nuts, seeds, mini cookies or broken cookie pieces, sprinkles, dried fruit or fresh berries - check out the raspberry chocolates I made a few years ago using a similar recipe.

You can use any type of silicone mould to make chocolate cubes/shapes. If you want to try different shapes, we love these fun ice cube trays from IKEA, or there are lots of fun shaped moulds available on Amazon. For jumbo chocolate buttons, use silicone muffin cups or a silicone muffin tin. Alternatively, follow the chocolate bark instructions above to make a slab of chocolate on a baking tray or large plate.
