Oh my word, I love, love, love this salad! It is so good! This salad was inspired by My Gourmet Connection’s Spicy Pork and Napa Cabbage Salad. Mom and I turned this recipe up-side-down to make it Vegan and Whole Food Plant Based. Soooo delish!!!

Roasted Red Cabbage Steaks Recipe
We did numerous kitchen tests on this one because my family was completely divided on the timing of when to serving it. If you serve the salad right away, it is very light and refreshing. If you allow it to sit, then the flavors continue to develop, and it becomes bolder and tangier.
Mom and I scarfed it down like we had not eaten in a month, it was so good. We barely left Dad anything to taste test. LOL

Braised Napa Cabbage (wong Bok) With Dried Scallops
Napa cabbage is one of those foods that tastes best shredded. We shredded ours by hand with a sharp knife making very thin strips. Trust me on this one, you want to shred it, it just tastes better and allows the sauce to coat it nicely! 😀
Oh my goodness, I loved this salad! Monkey enjoyed eating it right away as it is very refreshing and delicious. I enjoyed it that way too, but I really loved it when it sat for about 5 to 10 minutes to allow the flavors to marry. I loved the warm glazed chickpeas on the cool refreshing salad, amazing textures and flavors!

*Refreshing versus Bold: Our family was completely divided over this salad. Some preferred it served immediately after making, as the flavors continue to develop over time. If served immediately, it has a light and refreshing taste. If you allow it to sit, the flavors continue to develop and become more bold and tangy.
*Vegetable Stock: We use Pacific Organic Low Sodium Vegetable Stock. We love this brand because it is Whole Food Plant Based compliant, as it does not contain MSG, has no oil, and does not contain any highly-processed ingredients.
Red Cabbage Recipes
*Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos.
*Miso: We used Miso Master Organic Mellow White Premium Lite Miso, Certified Gluten Free. Miso really lends itself to balancing flavors when you don’t use oil. You can also use chickpea miso for a soy free version.
*Chili Garlic Sauce: We used Huy Fong Foods Chili Garlic Sauce. This brand does have a small amount of sugar. However, this brand is generally accepted by the WFPB community.

It might seem odd to share a cabbage stir-fry side dish in the midst of December holiday season. I was debating whether I should write another holiday dessert recipe or go a completely different route. Believe it or not, Nate and I had been nibbling on sweets since September this year because of my content production schedule so by the month of December we are quite okay with skipping sweets and craving cleaner food with less sugar.

I’m not a fan using pre-shredded vegetables. They are convenient but tend to have drier texture and the flavor is more bland. If you can, I highly recommend using a mandolin slicer (not a cheese grater) to shred the cabbage by yourself. You’ll find that the vegetables are so much more delicious and flavorful than the pre-made version.

It takes 15 minutes to make and uses 8 cups of one of the best year-round seasonal veggies: Napa cabbage!
This Napa Cabbage recipe is a great one to try if Napa cabbage is a new veggie for you. The cooking technique is so easy and the flavors (ginger and garlic) are easy to incorporate into a variety of meals. Try it alongside sesame noodles or peanut noodles. Or you can serve it with Ginger Lime Black Cod or Maple Tahini Glazed Salmon.

) is a common type of Chinese cabbage originating in China. It was first cultivated in the 15th century in the Yangtze river basin in China and later spread to Japan and Korea. By the 19th century, it was brought to other parts of the world including America.
It is pale lime green in color with wide flat white ribs running the length of its densely packed but delicate leaves.
Heads of napa cabbage vary by size from about 2 1/2 pounds to up to 6 pounds each. It can be found in the produce section of large supermarkets, health food stores and farmers’ markets. It is sometimes called simply “Chinese Cabbage.” Store it in plastic to prevent it from wilting. Remove any outer leaves that show signs of insect damage.

Napa Cabbage Salad With Corn
Tip: To easily remove the skin of the ginger, scrape it with the edge of a soup spoon. It peels right off without sacrificing any of the ginger root.
I usually recommend using certified Organic canola oil or avocado oil for high heat cooking. But you are welcome to use your preferred neutral cooking oil.
A little goes a long way in this recipe because the Napa really cooks down a lot. One-quarter of a teaspoon of table salt is plenty. You can use kosher salt instead, but make sure you read here why you may need to double the amount.
Chinese Napa Cabbage Salad Recipe
To deglaze the skillet and to steam (and wilt) the cabbage, you will need a small amount of dry sherry. If you do not have sherry or prefer to omit the alcohol, you can substitute 3 tablespoons vegetable broth plus 1 teaspoon rice vinegar.
