Light Chocolate Cheesecake Recipes

As promised when I shared my Easy Chocolate Brownies recipe last week, I’m back with another classic recipe… Easy No-Bake Chocolate Cheesecake. It’s got a crunchy digestive biscuit base topped with smooth, creamy and indulgent chocolate. Even better, it’s easy to make too.

Whilst it’s no bake, you still need to leave plenty of time to make it so it has time to set properly in the fridge. If you need to speed that process up a bit then you could pop it into the freezer instead.

I’ve realised that there are two distinct opinions for how crushed the biscuits should be for the base. Some people prefer them to be quite finely crushed so you get a really firm base once the crumbs are mixed with melted butter. And others like me prefer them to be a little more chunky so that the base is a little more crumbly and has more of a crunch.

If you prefer finely crushed biscuits then I’d recommend using a blender or food processor. I blitzed mine for this cheesecake in my Kitchen Aid using the pulse function to ensure that they weren’t too finely ground. You would get a similar result using a spice grinder,  although as they are small in size you’ll probably need to blitz the biscuits in batches.

If you prefer your biscuits a little less finely ground (like me) or don’t have a blender then you can also use a pestle and mortar, or pop your biscuits into a bag and bash them with a rolling pin.

Vegan Chocolate Cheesecake Recipe (light Version)

And this no-bake chocolate cheesecake is one of my all-time favourite cheesecake flavours. It's rich enough to satisfy the biggest of chocoholics, but creamy enough to make even the biggest dessert critics fall head over heels.

Forget about turning the oven on. Forget about hoping your baked cheesecake doesn't sink or crack. Forget about waiting for the cheesecake to cook and cool.

The hardest part is waiting for the cheesecake to set! The wait is just sooo cruel when you know what's waiting for you.

Chocolate Raspberry Cheesecake

Add the melted butter and mix through until well coated. If your mixture is too dry, add a little extra melted butter (it's important that the cookie crumbs are well coated to allow the crust to set firm).

Melt the chocolate and then set aside to cool to room temperature. I find it easiest to melt chocolate in the microwave, however, you can also use a double boiler on the stove-top or your Thermomix instead.

Sprinkle the gelatine powder over ¼ cup boiling water. Use a fork to quickly whisk the powder until completely dissolved. Set aside to cool to room temperature.

Malted Easter Egg Chocolate Cheesecake

No-bake cheesecakes do take a bit of planning ahead! It's important to chill the cheesecake for a minimum of 4 hours (overnight is best if you can control yourself for that long!)

It's best to use a springform pan when making cheesecakes as the removable sides make it easy to transfer the cheesecake from the pan to a serving plate.

Grease the pan well and line the base and sides with baking paper to avoid the filling from sticking to the edges.

No Bake Chocolate Cheesecake

Place the Oreo crust into the fridge or freezer while you prepare the filling. This ensures that the base sets firm and no crumbs mix into the filling.

It's important to allow enough time for your cheesecake to set before consuming. A minimum of 4 hours is required but overnight is best whenever possible.

Silky

Remove the cheesecake from the fridge, decorate with grated chocolate and serve. Because this cheesecake contains gelatine, it will be fine out of the fridge for a couple of hours without losing it's shape or texture (great for parties!)

Easy Peasy Chocolate Cheesecake

Alternatively, you canfreeze the cheesecake as a whole or in individual portions. Wrap in a layer ofplastic wrap and then a layer of foilandfreeze for up to 1 month.

So I haven’t strayed too far from my goal to eat a little healthier this month, and I’ve been on the hunt for some lighter recipes that sacrifice no flavor.

You should know, though, that I’m not a salad person. I will probably never post a salad recipe, because I would never taste test it for you. I also rarely even have lettuce in my house.

Light Chocolate Cheesecake Recipe

I’m not saying that being anti-salad is a good thing — I’m just setting things straight so you understand where this thing is going.

I want healthier, lower calorie options of the foods I want to eat to begin with. And since I’m the kind of person who has to hide vegetables in her own meals, I’m probably not going to give you a plate full for dinner (though I have plenty of delicious comfort food meals Under 500 calories).

I changed a few things: I left out the crust (because who really cares about the crust?), I left out the espresso (but you could easily add it back in), and I changed the cooking method and temperature a bit. We were totally blown away by the results.

Easy No Bake Chocolate Cheesecake

I had made a cheesecake from cottage cheese a few times before, but it’s been so long I have no idea which recipes I had tried or how it was done. But it was something I knew I wanted to try this month, so that I could have something totally decadent that was still pretty healthy.

Now, you should know that I don’t like cottage cheese. Like, at all. Unless it’s pureed. I use pureed cottage cheese in cheesecakes or other desserts and pastas — I find it’s mostly a texture thing. If you find you’re not sure about this recipe because of the cottage cheese, I promise you would never know the difference.

The cheesecakes are the perfect size for a sweet treat after dinner. You can top them any way you like — the light whipped topping is included in the nutritional information but the rest is up to you. To keep them on the lighter side, fresh fruit is always a great option and pairs so well with chocolate. You can go a little more extravagant and top with caramel or chocolate sauce, crushed candies or cookies or sprinkles or chocolate shavings. The options are really endless!
