Jackfruit Tamale Recipes

These red chile jackfruit tamales are made with spicy guajillo chile seasoned jackfruit and masa, stuffed inside corn husks, and steamed to perfection. What makes these so good is that the masa is spiced with guajillo chiles, coconut oil, and cumin. They are so delicious and 100% vegan and gluten-free.

These are the first tamales I ever learned how to make. Back when I didn't know how to make tamales, my dad invited me to the family restaurant to learn. Over the years we had helped on several occasions with the spreading of the masa on the husk and the folding, but I had never done the whole process from start to finish. Tamales rojos are very typical of northern Mexico, they are usually filled with pork and are very small in size, but with a pretty equal ratio of masa to filling.

The thing about learning how to cook in a restaurant is that you learn how to make huge quantities of food. That day we must've made more than 200 tamales! Believe me, it was a few years before I decided to make tamales again all by myself. When I became vegan, I was very sad at the thought of not having good tamales again, and frankly the thought of tamales filled with veggies didn't appeal to me at the moment.

However, after some experimentation with jackfruit, I decided to veganize this recipe from the family restaurant. The result was shockingly similar to the original ones. So much so, that my omnivore husband was tricked into thinking that the tamales weren't vegan!!

If you would like to make these with fresh masa, replace the masa harina with 2 lbs. of fresh masa and use only 3/4 cup of vegetable stock. To substitute the coconut oil, you can use 8 oz. of vegetable oil or vegetable shortening. For tamales without fat, use 8 oz of cooked, unsweetened pumpkin.

To remove the briny taste from the canned jackfruit you can simmer it in water, 1/2 onion, and  1 bay leaf for 10 min. Drain it, and squeeze out all the liquid. Now you can continue with the rest of the recipe.

Jackfruit tamales may not sound easy to make, but if you grab a few friends the process will move along much quicker!

How To Make Vegan Tamales

In a food processor, pulse the jackfruit a few times to shred it. If you have a smaller food processor you may need to do this step in 2-3 batches.

To Bake: Baking the jackfruit in the oven is the easiest of the two methods. In a large bowl, toss the shredded jackfruit with seasonings to coat.

Then, spread it out on a baking sheet along with the chopped onion and bell pepper. Bake at 400ºF for 15-25 minutes.

To cook the jackfruit on the stovetop: Sauté the onion and bell pepper in a large pan until softened. Turn off the heat and mix in the jackfruit and seasonings. Allow everything to sit for about 5 minutes.  This will help it absorb all the flavors. Then cook the jackfruit filling over medium-low heat to remove some moisture.

Before you start assembling the tamales, make sure everything is in close reach –soaked corn husks, prepared corn masa, seasoned jackfruit filling, salsa (or any other add-ins if using), and corn husk strips for tying.  

Add a scoop of jackfruit filling down the middle of the masa.  At this point, you can add salsa or any other filling to the inside of the tamales.

Set the Instant Pot to high pressure for 15 minutes. Once the tamales are finished cooking they can be left for natural pressure release or you may quick-release the pressure after 10 minutes.

Add the jackfruit tamales to the steamer basket and cover with the lid. Simmer for 30-40 minutes, or until the masa is no longer wetand sticky and the tamales are fully cooked.

Firstly, know that there are two different types of canned jackfruit: young jackfruit and old jackfruit. Young jackfruit is the kind that you want to buy for savory dishes, since it has little to no inherent flavor of its own. Once shredded, young jackfruit will taste like whatever spices or sauces you throw it in to. Old jackfruit, on the other hand, is sweet!

After that, pull the chunks apart like a savage beast; it shreds very easily and with minimal effort, and it has a similar texture and appearance to shredded pork or chicken, which adds greatly to the texture in this vegan tamales recipe.
