Easy Chicken Satay Recipe

Marinated Thai chicken satay skewers - tender and juicy, with a lightly charred finish - served with a spicy peanut sauce. Even with a bit of marinating time it's super quick and easy! The satay peanut sauce has a few special additions for a spicy creamy finish you'll love!

I know, it's not like the marmite camp, where I've probably got half you on my side here.  I think most people actually like peanut butter on toast.

Now my real question is, how many of that 20% of peanut butter haters like it mixed with other stuff, like peanut chicken or Thai chicken salad? In other words, how many people are like me?

Easy Satay Sauce Recipe

For the satay sauce, we mix together peanut butter, soy sauce, chilli flakes, fish sauce, coconut milk, light brown sugar, ground coriander and lime juice.

Once the satay ingredients have been mixed together, heat over a medium heat until thickened. Then turn off the heat. You can serve it warm or cold. If serving it warm, just reheat before serving.

Serve the chicken skewers with that lovely spicy peanut sauce. I also like to sprinkle on a few toppings (as always!) of some chilli flakes and fresh coriander/cilantro). You can also sprinkle on some sesame seeds, sliced red onion and a few roughly chopped peanuts if you're as mad about toppings as I am!

So tell me, are you a peanut butter hater who has a delicious peanut butter recipe? I'd love to know about it!

By some for using peanut butter at all in satay sauce, but I can't really tell the difference between using that or using peanuts I've whizzed up at home.  It does make the whole thing a lot simpler (and means I don't have to drag out the food processor).

A traditional Indonesian Satay (where satay originates) would use roasted peanuts that have been ground by hand. I might try that one day, for authenticity's sake. I'll let you know if I do.

Thai Satay Chicken

I sometimes use chicken thighs (more tender meat), but chicken breast works really well when marinated in this way.  Tenderising it with the coconut milk means the chicken breast takes that burst of high-cooking-heat much better than if they weren't marinated.

Note 1: The sauce can be served cool or warm, or you can reheat if you wish (the oil will separate a little from the peanut butter and coconut milk as it cools, but a good mix with a wooden spoon will bring it back together again).

Can I make Chicken Satay ahead? Yes, you can marinate the chicken and place on skewers, then refrigerate for up to a day. The sauce can be made ahead, cooled, covered and refrigerated for up to 2-3 days. Place in a pan and reheat whilst stirring if you want to serve it warm. I wouldn't recommend cooking the chicken skewers ahead of time, as the chicken will dry out.

Can I make extra sauce? This recipe comes with a good amount of sauce, but yes, you can double or treble the recipe if you like.

Can I make it gluten free? Replace the soy sauce with tamari and check your fish sauce and peanut butter are gluten free (they usually are) and it should be fine for gluten free.

Other cooking methods (oven, bbq, grill) You can place these kebabs on a barbecue or under the grill. You can even cook them in the oven (watch out, the kebab sticks will be HOT!) for approx 15 minutes at 200C/400F. Check they're fully cooked by ensuring they're no longer pink in the middle.

Although there are many varieties of satay, all of them begin with tasty meat that’s marinaded in a variety of herbs and aromatics (chicken, pork, and beef can all be used for satay), then grilled over an open flame for a lightly crisp exterior, smoky taste, and juicy interior.

Chicken Satay With Spicy Peanut Sauce Recipe

In Indonesian chicken satay recipes and Thai chicken skewers, the sauce is typically made with peanut butter, sugar (I use honey), and spices.

It ends with a rich and tangy-sweet peanut dipping sauce that you’ll want to start enjoying on EVERYTHING (we love it with Air Fryer Tofu too!).

Chicken can be marinaded up to 1 day in advance. I don’t recommend marinating the chicken for longer than 24 hours, as the meat will begin to break down.

Easy Homemade Chicken Satay With Peanut Sauce

Personally, I prefer the char the grill (or a grill pan on the stovetop) adds, but if you don’t have access, the oven will still produce good results.

If you have leftovers of these chicken skewers (which I doubt you will, but hey) they’re delicious over a bed of your favorite greens, with Homemade Fried Rice, or this Asian Noodle Salad.

Have different degrees of spiciness. If you or your family are sensitive to spicy foods, you can leave out or reduce the sriracha to suit your tastes.

Easy Thai Chicken Satay With Peanut Sauce (low Carb, Sugar Free)

I have not tried making this recipe with another protein, but I think beef or pork would both be tasty. If you decide to give it a go, I’d love to hear how it goes. I suggest using flank steak cut across the grain into 1/2-inch strips and diced pork tenderloin.

If you don’t own a grill, don’t despair. I’ve included directions for baking chicken satay above. You can also enjoy this chicken satay recipe by using an indoor grill plate on your stovetop or even a panini press. Just note that the cook times may need to be adjusted slightly so keep an eye on the chicken as it cooks.

You guys seriously CANNOT pass this recipe up.  Juicy, tender chicken marinated in the most flavorful peanut ginger sauce and served over brown rice or salad all drizzled with my creamy peanut sauce!  So dang good and super easy to make too.  Chicken satay is a favorite in our family and this recipe is made healthier without using any refined sugars. Feel free to add some veggies onto the skewers for added nutrition and a more filling meal!

Easy Chicken Satay

If using wooden skewers for the chicken, it is important to soak them in warm water for 30 minutes to an hour or so to prevent them from sticking to the grill and keep them from getting too burnt during grilling.  You could also use metal skewers which are great because you can wash and re-use them, but they will get extremely hot so make sure to use tongs or have gloves on when handling them on the grill.
