The classic muffin batter uses butter, milk, and eggs for a tender crumb. Dry ingredients in one bowl, wet in another, combine, add the apple, and you're done—no mixer needed. It's a fun recipe for kids to help make and comes together fast. The hardest part is waiting for the muffins to cool before you eat them.

You don't have to peel the apple for this muffin, but we generally do. It's a matter of personal taste and depends on what type of apple you’re using, as some have thicker skins than others. Here's our streamlined technique for cutting the apple into small dice.

If you want to take your apple-oatmeal muffins up a notch, use our crumb topping to finish them. We love them as is, but sometimes the buttery-sugary topping is just what we need. Try a batch with half plain and half with the streusel topping and see which you prefer.

The muffins will last about four days stored in an airtight container. We find they never last that long because they make a great after-school snack or mid-afternoon pick-me-up, as well as a great light breakfast.

The muffins can be frozen once cooled to room temperature. Place them in a freezer-safe bag before freezing for up to three months.

Our apple oatmeal muffins was developed to use quick-cook oats which soak up moisture in the batter more quickly than regular rolled oats. Do not substitute regular old-fashioned oats when making our recipe. (Other oatmeal muffins may call for old-fashioned rolled oats, not quick cooking.)

Some types of apples are better for baking than others. We use McIntosh apples for these muffins, but other varieties to consider are Golden Delicious, Granny Smith, Honeycrisp, and Pink Lady.

Most muffins should be stored at room temperature, not in the refrigerator. This means that, yes, they can be left on the counter, but we recommend you store them inside an airtight container. If left out on a plate or just on the counter, they will dry out more quickly.

How to make mini muffins: Pour batter into a mini muffin pan instead of a 12-cup muffin pan to make bite-size spiced apple muffins that are toddler-friendly, easy to pack in lunchboxes, and great to dole out in between meals when kids (or adults!) are feeling peckish. If you reduce muffin size, you’ll also have to reduce baking time, so make sure to account for that when baking. Around 7-10 minutes should do it in most cases, but every oven is different! Make sure to check the center of the muffins for doneness with a toothpick and add a few minutes as needed until completely cooked through.

Good! Plus, they are freezer-friendly, so there's no rush to finish them all in a few days -- although it's quite possible. Apple Cinnamon Oat Muffins (gluten Free, Dairy Free Option)

The summer I turned ten years old, my family moved across town to an older yet larger home. Although situated in the city suburbs and nowhere near rural farmland, there was still a small pasture that bordered one side of our yard, and the man who owned it and lived on the pasture’s other side let a few cows roam around the field.

We quickly learned how to attract the cows over to our yard, and after checking with our grandfather who grew up on a dairy farm, we usually brought out celery and carrots to feed them. Their long tongues often brushed our fingers as they reached through the chain link fence, and it always made us giggle!

Towards the end of high school, the elderly gentleman decided to move his cows to a larger pasture in another town, and
