Protein Cookies Recipe Chocolate Chip
These soft and chewy chocolate chunk protein cookies are packed with good for you ingredients but taste decadent! Plant based vanilla protein, nut butter, pure maple syrup and almond flour make these paleo and vegan cookies just as healthy as they are delicious.
Perhaps that’s a slight exaggeration! Usually after 3 batches of cookies I need a day to recover. Luckily, these chocolate chunk protein cookies were delicious after the first batch.

I was happy to bake a second to confirm that the recipe was on point – and also learn that they freeze really well too!
Protein Cookies With Greek Yogurt
I based this recipe on my chewy paleo + vegan chocolate chip cookies. Instead of tapioca flour, I used Ancient Nutrition Plant Based Protein+ which gave the cookies extra vanilla flavor and of course a boost of protein! Here’s what you’ll need to prepare the cookies:
Prepare the flax egg first – mix 1 tablespoon of flaxseed meal with 3 tablespoons of water and allow it to sit for at least 10 minutes to thicken.
In a separate large bowl, whisk together the coconut oil, nut butter and maple syrup until smooth. Whisk in the flax egg to fully combine, then stir the dry mixture into the wet. Stir in the chopped chocolate or chocolate chips.
Peanut Butter Protein Chocolate Chip Cookies.
Use a medium cookie scoop to scoop the dough onto the baking sheet 1-2” apart. The cookies will not spread much. Push down in the middle with a few extra chocolate chunks. Bake 10-11 minutes or until beginning to turn golden on the edges.
Allow to cool for 5-10 minutes on the baking sheet, then transfer to wire racks to cool completely. The cookies will become chewier and less soft and crumbly as they cool, they are at their best once fully cooled!
Store in a sealed container in the refrigerator for up to one week or freeze them to keep longer. They’re delicious right out of the refrigerator!

Easy Peanut Butter Protein Cookies
The best protein cookies are easy to make (in my opinion), so we're not using any mixers or fancy ingredients. These cooking are filling, too. Truly the best protein chocolate chip cookie recipe!

No need for a hand mixer or food processor here! But I do recommend using an oven thermometer and a kitchen scale for best results. You'll also need:
Almond flour keeps these protein powder cookies chewy, and I wouldn’t substitute other flours like oat flour or coconut flour. But I have substituted half the amount of almond protein , and this works for a lower fat option (use 15g almond protein in place of 30g almond flour).
Chocolate Protein Cookies Recipe
If you’re using unflavored whey protein or you just want to boost the vanilla flavor, add ½ teaspoon baking vanilla when you are mixing the wet ingredients.

Peanut butter protein cookies - use natural peanut butter in place of the cashew or almond butter. I recommend creamy peanut butter if you’ll be using chocolate chips, and crunchy peanut butter if not.
Healthy Oatmeal Chocolate Chip Protein Cookies
Chocolate protein cookies - replace the vanilla whey with chocolate whey , use only 3 tablespoons almond flour and add 1 tablespoon unsweetened cocoa powder . Or check out these cake-like chocolate whey protein cookies.
If you don't have vanilla protein powder, try using other flavors that pair well with nut butter. Chocolate protein powder will of course work!

These cookies can stay at room temperature for the day, but I'd store extra cookies in an airtight container in the refrigerator for longer storage.
Chocolate Protein Cookies (with Powdered Bone Broth)
For best results, don’t overwork the cookie dough. Because we’re using nut butter, the more you handle the dough, the more heat you transfer to the dough, which will cause the oil to release from the nut butter. And we don’t want oily cookies.
Many store-bought protein cookies have more added sugar than protein. Each of these homemade protein cookies has 7 g protein (these are smaller cookies) with no added sugar.
High protein cookies with healthy ingredients and no added sugar can be a great healthy snack. Unfortunately, many store-bought protein cookies are full of added sugar (like Lenny & Larry's). This recipe for chocolate chip protein cookies has no added sugar and the cookies taste delicious!
Chocolate Chip Protein Cookies (gluten Free, Dairy Free)
Protein cookies are not the best post-workout choice because of the fat content. Typically it is best to have protein and carbs after a workout.

In a large mixing bowl, add all the ingredients and mix well, until a thick dough remains. Next, form 12 balls of dough and place them on a lined baking sheet and bake for 10-12 minutes, or until the edges are just done. Remove the cookies from the oven and let them cool completely.
