I’d shuffle down the block in my heels, my hot coffee sloshing onto the pavement, and my mouth full of a grab-and-go breakfast (like these Strawberry Oatmeal Bars), silently praying that the bus was behind schedule.

What did I do instead? I stored my heels in a box underneath my desk and made sure I also always had a stash of no-bake trail mix granola bars (or sometimes Healthy Granola Bars) at the ready.

Because they’re a no bake recipe, they take only a few minutes to make, are made from simple ingredients (like this Crock Pot Granola), and can last for weeks, so you’ll always have them at the ready. Plus, they are super yummy, filling, and healthy too!

Peanut Butter Granola Bars Recipe

Once you have the base of the peanut butter granola bars mixed together, it’s a chose your own adventure of flavors. Choose from any of these mix-in ideas below or feel free to get creative with your own combinations.

I tested a few different versions of these trail mix peanut butter granola bars, each with varying amounts of peanut butter, honey, and coconut oil.

All were duly devoured, but today’s recipe is my favorite. It has just the right amount of sweetness, and the coconut oil helps the bars hold their shape.

Peanut Butter Granola Bars

Several factors can cause these granola bars to not hold their shape. First, make sure you are chilling them thoroughly before slicing. Second, these are best stored chilled in the fridge. If left at room temperature (or in a hot car) they will soften considerably. Last, no-stir peanut butter works best in this recipe since natural peanut butter tends to have more liquid and add extra moisture. If you prefer to use natural peanut butter, try increasing the amount of oats, a few tablespoons at a time, until the desired consistency is reached.

I have never added protein powder to these trail mix granola bars before, however, it should work just fine. If the mixture appears too dry and crumbly once you’ve stirred in the protein powder, add a few extra tablespoons of peanut butter or honey to introduce a little extra moisture, if needed.

You may swap the peanut butter for any nut butter of your choice, such as almond butter or cashew butter. If you have a nut allergy, try swapping for peanut-free Wow Butter.

Add peanut butter and maple syrup to a mixing bowl. Then, whisk the two ingredients together until thickened. This is your sweetened peanut butter mixture!

No Bake Peanut Butter M&m Granola Bars

Look for just a small amount of tiny bubbles to cook the syrup and peanut butter together—not to worry, this isn’t a super finicky thing. You just want to warm the two ingredients cohesively together because it will be the glue for your granola bars. Mine took 4 rounds of 30 seconds each.

Add oats to the warm, sweetened peanut butter mixture. Use a rubber spatula to fold it all together to create the dough for your peanut butter granola bars.

Transfer this granola bar mixture into the lined pan you set aside earlier. Using a rubber spatula, press down and smooth into an even layer.

So we spent the whole week flitting between parks, going on the biggest, scariest rides we could find and consuming large amounts of frozen lemonade (it was close to 100F every day).

Now we're back home, tired, skint and trying our best to get back into work mode. Must not use up our overdraft and book another holiday....

Ingredient Healthy Peanut Butter Granola Bars (5 Min Prep)

Now these granola bars were something I really wish I'd made to take with us. It's nearly impossible to find places for Breakfast in Disney (well breakfast that doesn't cost $30 a head whilst Pluto and Mickey bound around the tables).

We start by mixing together rolled oats, mixed chopped nuts, chocolate chops, dried cranberries, peanut butter (plenty of peanut butter - one of the few times I really love peanut butter) and honey.

Top it with baking parchment and then place another same-size tin on top. Then use every muscle you have to press that top tin down, compacting the mixture as much as possible.

Vanilla Graham No Bake Granola Bars

I won't lie, I place the tin on the floor and stand on top of it. Nothing like a slightly overweight lady to squash that mixture flat.

Then peel off the top layer of baking parchment and sprinkle on extra chocolate chips and cranberries - pushing them in a little as you go.

Place the tin in the freezer for an hour to firm up, then remove the tin and liner and cut into slices.

You may find some of the edges are still a little bit crumbly, but they should hold together well, so long as you've used the correct amounts of peanut butter and honey, and you've compacted the mixture enough. Those few crumbly bits are the cook's treat (of course).

Yes, simply replace the oat with gluten free oats (oats are in theory gluten free, but they're often packed in environments where wheat, barley and rye is present. So you need to get certified gluten free oats).
