Easy Granola Bar Recipe With Maple Syrup

I bought a 50-pound bag of oats over a year ago, and let’s just say, I have been dreaming up all kinds of oat recipes ever since.

It’s a great staple to have, and store for long-term food security. Personally, I just love the texture of old-fashioned oats in baked goods, oatmeal and so many types of bars and treats.

If you haven’t made your own granola bars before, you might be surprised how easy they are to make. No more cardboard store-bought granola bars for us! These fruit and nut bars are easy to make, and also easy to double the recipe for take-and-go snacks to have all week.

The Master Homemade Granola Bar Recipe

About a year ago or more, I noticed the price of oats had gone up drastically. No more buying a few pounds here and there – it was time to buy in bulk. Hence, the 50-pound bag of oats.

Oats can go stale if not stored properly. I first stored my bulk oats loose in 5-gallon buckets with gamma seal lids. But, I found they were tasting a little stale after a few months.

So now I vacuum-sealed them in individual vacuum sealer bags , them placed them back in the buckets. This way, I can open just a few pounds at a time.

We also buy bulk dried fruits and nuts when they go on sale and store in half-gallon or gallon mason jars . This way, it’s usually cheaper and more practical to make our own snacks from scratch.

If my fruit trees were producing yet, I’d probably be dehydrating whatever fruit I had on-hand and using those in my granola bars, as well. (Here’s hoping my fruit trees survived the harsh winter we’ve had.)

Knowing what is in your family’s snack foods is an added bonus to any homemade food, and an important one to me. I love being able to get creative with the add-ins for my granola bars, and it’s something the kids can help make as well.

Chocolate Peanut Butter Granola Bars

Honestly, I use pure maple syrup whenever possible because it’s less messy. That may be a silly determining factor, but it’s true!

But after making these a few different ways, I found that maple syrup works just as well as honey. So, use what you have on-hand.

First: don’t skip toasting the oats and almonds. It only takes a few minutes, but it gives them a firmer texture and prevents them from becoming soggy when you add the wet ingredients.

Spicy Nut & Seed Bars (healthy & Easy)

The type of fruit and nuts is easy to exchange. I’m using dried cherries and almonds in this recipe, but dried and chopped figs, dried blueberries, walnuts, pecans, and unsweetened coconut flakes are also great substitutes.

If you want your homemade granola bars to be a little less sweet, you can use chopped dark chocolate pieces (or dark chocolate chips) in place of semi-sweet mini chips. Or, leave it out completely.

I often buy bulk nuts, oats, unsweetened coconut, and pure vanilla extract from Azure Standard Co op. This way I always have ingredients on-hand to make a variety of homemade snacks.

A few weeks ago, I started craving the granola bars I ate as a kid. They had a chewy texture, a sweet, oat-y flavor, and pockets of mini chocolate chips. These days, I don’t keep packaged snacks around the house, but I always have old fashioned oats, nuts, and seeds in my pantry. I might not have had the exact granola bars I was craving on hand, but I could make homemade granola bars that’d be even better!

Fast forward to now, and I’ve made this granola bar recipe more times than I can count. It’s a breeze to make, and the bars are fantastic. They’re chewy, sweet, nutty, and studded with just the right amount of chocolate chips. Filled with wholesome ingredients like oats, pepitas, and nut butter, they’re healthy enough to pass for breakfast, but they’re also a perfect afternoon snack.

No Bake Granola Bars (gluten Free, Vegan)

Second, fold in the dry ingredients – the oats, chocolate chips, and pepitas. The mixture might seem dry at first, but keep stirring! Everything will be fully incorporated in no time.

Next, press the bars into a parchment-lined baking pan. Scoop the mixture onto the bottom of the pan, and cover it with another sheet of parchment paper. Firmly press the mixture to the sides of the pan with your hands. Then, use the back of a measuring cup to smooth and flatten the tops of the bars.

Finally, chill! Transfer the pan to the fridge, and allow the mixture to chill for one hour before you slice and eat the bars. That’s it!

These homemade granola bars are a quick and delicious, and naturally gluten-free! If you want to change the mix-ins, see the post above for my tips on how to do it. These are on the sweet side, if you're looking for a less-sweet treat, try these Energy Balls.

*Note: regular sized chocolate chips make these bars less cohesive - if you can't find mini chocolate chips, chop chocolate so that it's mini-sized.

Maple

To make these vegan, use brown rice syrup instead of honey. Maple syrup is not sticky enough to make these bars cohesive, but it will work if you roll the mixture into energy balls instead of making bars. To make these gluten free, just make sure your oats are certified gluten free.

It started when we discovered the glory that is Trader Joe’s Apple (Pie) Bars. Then, we got into more basic versions with rolled oats. But somewhere along the line we got suspicious of the ingredients – namely high fructose corn devil – and strayed away from them altogether.

However, sometimes you really just need a snack that has some serious staying power. And being that this is Minimalist Baker, you know I wanted something simple. Enter: The 5-Ingredient (No-Bake) Granola Bar. Things are getting seriously minimalist right now.

The base for these bars is dates – the natural sweetener supah powah. Then we add almonds, oats, peanut butter, and maple syrup (or honey or agave) and mix it all together!

That’s it. Just 5 ingredients, no baking involved (unless you want to toast the oats and almonds) and they’ll keep in the freezer for-ever (that is, if you can resist them for that long).

If you can’t jive with peanut butter simply swap in almond, sunflower or another nut/seed butter. To keep these vegan, stick with maple syrup or agave instead of honey. And to keep them gluten-free, use GF oats. Simple, customizable, delicious!

Easy Peanut Butter Granola Bars

Simple flavors, wholesome ingredients, salty-sweet and lots of crunch. I made a batch last week and am already down to one-quarter of ONE bar. How I exercised the self control to save one quarter of a bar is beyond me. But by tomorrow it likely won’t be there, if I know myself at all.

These really are the perfect bar for a hearty snack because they keep you full for hours and don’t provide a sugar overload. Plus, they pack in plenty of healthy fats from the almonds and peanut butter, and lots of fiber from the oats. Afternoon and mid-morning snack, solved.
