Easy Buffalo Chicken Wings

If you have never tried baking your chicken wings you might be a little skeptical about the oven’s ability to get your wings to the right level of crispy. I hear you. I was a little skeptical myself before I gave it a try a few years ago.

Now, I can confidently say that if you have not tried baking your wings in the oven, you are missing out on some of the most delicious crispy wings. Trust me, the oven does a great jobe of getting just the right amount of crisp on chicken wings.  Plus, you can enjoy them without deep frying which makes them a much healthier option.

These wings are delicious and also Paleo friendly, Whole30 compliant (just use compliant ingredients!), naturally gluten free, and keto friendly. Keep reading to learn more about how to make the best buffalo chicken wings!

Buffalo Chicken Wings (air Fryer) Recipe

Chicken Wings: This recipe uses “party” wings which are also sometimes referred to as “split” chicken wings. The wing is separated into two parts. These kinds of wings are what most people think of when they hear buffalo wings.

Avocado, Coconut Oil, or Ghee: All you need is one tablespoon of cooking fat and either of these will work. Just be sure to avoid olive oil. It has a lower smoke point and is not the best choice for this recipe.

Spices: This recipe keeps it simple and uses only salt, garlic powder, and onion powder. Spices you probably already have on hand.

Baking Powder: I’ve made these wings both with and without baking powder and both versions turn out great. But, if you want a little extra crispiness, I recommend adding a little baking powder does the trick!

Step Two: Pat the chicken wings dry with paper towels and then add them to a large mixing bowl. Add the avocado oil, baking powder, onion powder, garlic powder, and salt to the wings and toss until well coated.

Step Three: Place the seasoned chicken wings on a baking sheet in a single layer but not touching. Bake the wings for 40-45 minutes until golden brown and the skin is crispy, flipping halfway through.

Step Five: Once the wings are done cooking, transfer them to a large mixing bowl and pour the warm buffalo sauce over the wing. Toss until well coated.

Step Six: Transfer the wings to a serving platter, garnish with thinly sliced green onion and serve with ranch, celery, and carrots.

Have an air fryer and want to use that to make your wings instead? The good news is that you can absolutely make these buffalo chicken wings in the air fryer! We were recently gifted this air fryer and it has become one of my favorite ways to make wings. They get nice and crispy in around twenty minutes.

To make these wings in the air fryer, just toss them in the oil and seasonings until well coated. Then transfer the wings to the air fryer and cook at 400 degrees for 20 minutes.

Baked

You can give the wings a shake or flip them halfway through to ensure that they cook evenly. After the wings are finished cooking, toss them in the warm buffalo sauce and enjoy!

I have found that the absolute worst way to reheat wings is in the microwave. They just do not have the same crispy-ness that you will get from an oven, air fryer, or toaster oven.

You can’t see how crispy the skin is when I’ve smothered them in that glorious Buffalo Sauce so here’s a photo of them plain, straight out of the oven. And if you have 90 seconds, watch the recipe video below the recipe so you can

The recipe is ridiculously simple, and it’s agenius discoveryby the amazing folk over at Cook’s Illustrated who used science to figure out how to maketruly crispy wings in the oven.

Air Fryer Buffalo Wings (gluten Free)

1. baking powder (secret ingredient!) – tossing the wings inbaking powderwhich draws moisture to the surface of the skin and helps make it crispy. Rest assured you can’t taste the baking powder at all; and

2. bake on low then high – usually, the fat under the skin is part of the reason why baked wings don’t get really crispy. In this recipe, we start at a low temp first which melts the fat under the skin, then we crank up the oven which makes the skin super crispy!

I know some people aren’t a fan of blue cheese dip – but I’m all in!! In fact, I love blue cheese dip so much, I like to keep mine a bit lumpy so I get little pops of blue cheese. But usually, restaurants serve it completely smooth. Go with what rocks your boat!

Baked Hot Wings

I don’t know who discovered it, but they deserve a Nobel Prize.I remember the first time I tried it, I squinted at the celery sticks and thought, “who would bother with them?”. But they work! It’s like the perfect way to reboot your taste buds in between each wing!!

You’ll make a total mess of yourself eating them. It’s just not possible to eat wings elegantly. You’ll get Buffalo Sauce smeared all around your mouth. You’re doing well if your shirt stays clean.

But that’s all part of the Buffalo Wings experience, right?? The dramatic clatter as you toss the naked bones into a bowl. Smack you lips. Suck each finger clean.

Baked Buffalo Wings

Recipe video above. This recipe uses a genius technique discovered by Cook's Illustrated to make chicken wings in the oven that come out so crispy that it's hard to believe they aren't deep fried. Tossed in a classic Buffalo sauce and served with a side of blue cheese dip and celery sticks and you have one of the most genius food combinations this world has ever seen!

1. Wings– While this recipe can be used for whole chicken wings, I prefer to use wingettes and drumettes for ease of coating in baking power to ensure they are crispy all over, plus easier to eat. Buy them pre-cut or see here for how to cut your own (you will need 2.15kg / 4.3 lb of whole wings to make 2kg/4lb of wingettes and drumettes, after taking into account the wing tips which are discarded).

2. Baking powder – Use aluminium free baking powder, if you can find it, the flavour is neutral. If you can’t find it, it’s totally fine – just be sure to toss the wings very well to coat evenly, you do not want thick patches of the baking powder anywhere.
