If you prefer, you could also reheat them in the oven. Preheat your oven to 350°F and place the sweet potatoes on a baking sheet. Bake for about 10-20 minutes, or until heated through.

Yes! If you want to make a big batch of these ahead of time, you can bake the sweet potatoes and freeze them. Then when you’re ready to eat one, simply remove it from the freezer and reheat it in the microwave or oven.

I do not recommend freezing the sweet potatoes with the eggs. Although you can freeze scrambled eggs, they tend to get watery when thawed. So it’s best just to make the eggs fresh when you’re ready to eat. Or freeze the eggs in a separate container.

This hash is really easy to make for a busy weekend or you can meal prep it for the week. It's savory, spiced to perfection and full of nutritious ingredients. This hash can be served vegetarian, vegan or with eggs and bacon, the options are endless. You can use any potato of choice, but I prefer the sweet potatoes with this breakfast seasoning blend.

Stuffed Breakfast Sweet Potatoes: 5 Recipes!

Step one. I typically eat the skin of a sweet potato, but you can peel it first if you'd prefer. Evenly dice up all of your sweet potato. In a large skillet, heat up oil on high heat. Once it's hot, add chopped sweet potatoes and seasoning. Put heat down to medium and cover the skillet.

Step two. Sweet potatoes will need to be stirred a few times but need to cook for about 10 -12 minutes or until they are soft enough to pierce with a fork. Next, chop bell pepper, onion and garlic into bite sized even pieces. Discard the seeds and white flesh of bell pepper. Chop spinach. Add the bell pepper, onion, garlic to the softened sweet potatoes. Cover again for 3 minutes.

Step three. Next, clear four spots in the skillet for the eggs. Add a very small amount of olive oil to each spot cleared for the eggs. About 1/2 tsp or less of oil will work. Carefully place one egg into each clearly spot.

Step four. Cover the above and cook for about 10 minutes. Check on the eggs, you can cover and cook longer if you like your eggs more well done. You can place eggs and hash on each plate or, eat it right out of the skillet with your honey 😉

Have you ever stuffed a sweet potato before? That might be a silly question for some, but I know some people haven’t tried it because I get messages all the time on Instagram when I do it! If you are one of those people, I am here to change your mind with this sweet potato breakfast.

Whenever I need a quick meal, my go-to is usually always stuffing some random things in a sweet potato. It makes a quick (especially if you have some sweet potatoes already prepped) and easy meal and, for me, everything tastes good with sweet potato.

So I figured why not take this idea and do it for breakfast! And I’m giving you a few different options to keep it interesting.

Whichever way you make them, they make a great option for a healthy and satisfying breakfast. They are a good balance of protein, carbs, and healthy fats and are great for on-the-go or post-workout fuel. You can totally customize them to meet your needs and preferences too.
