One Pot Healthy Mexican Beef Mince

However, if you have evermade a Chinese stir fry – or in fact, any Chinese recipe – you will likely instantly recognise all the ingredients in the sauce. No Western ingredients. This is made with 100% authentic Asian ingredients. And when you take the first bite, it will be so familiar to you.

Serve this over rice or, for a healthy low carb option, Cauliflower Rice (77% fewer calories and 87% less carbs than rice).

I love this recipe because it’s made with beef mince (ground beef) i.e. no meat slicing. Asian recipes made with beef mince aren’t that common, but there are a handful of terrific ones and they are worth knowing for the convenience of being able to make a quick meal when you’ve got a packet of mince on hand. Here’s a handful of my favourites:

Korean Ground Beef Recipe

Unlike most stir fries, this one doesn’t come with a ton of sauce. But it’sjuicy and the beef has a ton of flavour in it so when it’s all mixed up with the rice, you certainly won’t feel like you’re missing sauce. Promise!

Quick And Easy Turkey Stir Fry 15 Minute Recipe

1. Chinese cooking wine(read more here)- sub with Mirin, dry sherry or cooking sake. If you can't consume alcohol, add 1/4 cup of chicken stock/broth - the sauce willtake around3 minutes to evaporate, but the end resultwill be similar!

2. Soy Sauce - This recipe calls for DARK soy sauce, has more flavour than light and all purpose soy sauce, and makes the food a deeper brown colour. Can sub with all purpose soy or sauce, but beef colour won't be as dark brown.

How To Cook Minced Beef

I believe you can make great food with everyday ingredients even if you’re short on time and cost conscious. You just need to cook clever and get creative!This versatile and simple savoury mince recipe is ready in 35 minutes and is a great batch cook recipe that freezes well. Rich with tomatoes and vegetables, it’s a delicious family friendly recipe for beef mince that you can serve with toast, potatoes, pasta or rice; or make into lasagne, pies or empañadas.

Mix 1 teaspoon of cornflour with 1 tablespoon of cold water to form a thin, runny paste then stir this in to the mince and simmer gently until thickened. Don’t add too much cornflour, otherwise it can turn the sauce gloopy.

This versatile and simple savoury mince recipe is ready in 35 minutes and is a family friendly dinner that can be batch cooked and frozen for those busy nights when you don't feel like cooking.

Minced Beef – lean minced beef, the best you can buy. You can use lamb mince instead. Brown the beef mince before adding the tomatoes – this adds flavour to your mince.

Spiced Beef Mince With Jacket Potatoes And Yogurt

Tomatoes – tinned/canned diced tomatoes. You can use tinned plum tomatoes and break them up with a spoon once they’re in the pan. 

Vegetables – In addition to carrots and celery you can also add peas, capsicum/red pepper, zucchini/courgette, corn, mushrooms to the mince. Making for fussy eaters – grated the carrot and vegetables, or place in a food processor and chop until fine. Add to the recipe as normal.

Worcestershire sauce – I use this savoury English sauce in so many dishes. If you are unable to get Worcestershire sauce, use a splash of soy sauce or leave out altogether.

I am on a constant mission to come up with new and inventive recipes with beef mince. I know so many of us buy it every week in some form and for good reason – it’s versatile, easy to cook with, relatively cheap, freezes well and it’s DELICIOUS.

We can cook so many different cuisine styles according to what we fancy, from Italian to Indian, Chinese to Mexican, but for this beef recipe it’s all about speed as well as flavour. In just 15 minutes flat you’ve got yourselves a new family favourite.

In the fridge You can keep this recipe in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.

In the freezer This recipe freezes well. Just wait until it’s totally cold and then put into a freezer proof container and freeze for up to 3 months. Defrost thoroughly before reheating.

First you add cornflour to a small bowl, mug or jug, then use a little liquid from a dish (a spoonful or two) to mix the cornflour into a paste consistency. Add that back into the dish’s sauce.

If you just sprinkle cornflour straight into the dish, it will form lumps that are almost impossible to get rid of. I promise this step is worth the extra dirty bowl!

I have used green beans in this recipe but you can add another veggie of your choice. Green vegetables go really well with beef mince, so something like peas or broccoli would be great.
