Recipe Chicken Parmesan Soup
This easy Chicken Parm Soup is basically deconstructed chicken parmesan in a bowl. Big chunks of chicken in a rich tomato soup with the pasta of your choice and p-l-e-n-t-y of gooey mozzarella and Parmesan.
Chicken Parmesan Soup is a perfect soup for chilly winter weeknights. It’s warming and delicious and could not be easier to make.

I wrote this recipe to use leftover cooked chicken, so you can use leftover chicken you have on hand or grab a rotisserie chicken at the store and use the white meat from that (save the thighs and drumsticks for lunches and the carcass to make soup!).

2. Add garlic and red pepper flakes and cook until the garlic is lightly browned before adding the tomato paste and cooking for 1 to 2 minutes.
A classic green salad is always a good option with chicken parm. See also, roasted broccoli, roasted zucchini, or roasted green beans. Add some toasty garlic bread, and you’re set.
I don’t recommend freezing soup with pasta and cheese because the pasta bloats in the freezer and cheese can become grainy. But if you leave out the pasta and parmesan, this soup freezes extremely well.
Parmesan Chicken Noodle Soup Recipe

*You can use canned diced tomatoes if you don't mind a chunkier soup. To use canned whole tomatoes, lightly puree them with an immersion blender or chop them by hand before using.
*If you don't have cooked chicken: chop 2 medium raw chicken breasts, about 1 pound. Sprinkle with salt and pepper and lightly brown them in the olive oil before adding the onions and continuing with the rest of the recipe. No need to completely cook the chicken all the way through as it will finish cooking with the rest of the ingredients.

My toddler never touched our Christmas tree. And to be honest I never understood when people would talk about their Christmas tree being ruined by a baby because my baby never got within two feet of it.
Flash forward to my second little boy and on the first day it was decorated, I fully commiserated with those whose babies destroyed their trees. The entire bottom two feet of the tree is bare, three new ornaments were shattered, at least six ornaments have been pulled apart, the cute fabric “Santa ornaments” now have stains from being kissed with a not-quite-clean mouth, and the berry sprigs do not look anything like sprigs anymore. I couldn’t keep him away from it!

There is always so much to do around the holidays (including redecorating the tree multiple times) which makes for busy and fun-filled days–and great memories to share years from now. These are also the days when I don’t have all that much time to cook… which is where this easy twenty-minute soup comes in. And I’m not even kidding — 20 minutes is all it takes to make this delicious Chicken Parmesan Soup!
If you aren’t a huge fan of canned tomato chunks, try crushed tomatoes instead of diced. (Or use 1 can diced and 1 can crushed tomatoes.)

Slow Cooker Chicken Parmesan Soup
Note 1: I get Italian-style tomatoes which have seasonings added in. If you aren't a huge fan of chunks of tomatoes use crushed instead of diced tomatoes.
Note 2: Use part of a leftover rotisserie chicken or buy pre-shredded rotisserie chicken (This is what I do for this soup which makes it even quicker.)
Note 3: I like to keep the pasta separate as opposed to mixing it all in the soup in case I have leftovers (the pasta bloats and becomes soft/soggy when stored). If you plan on eating all the soup in one day, mix all the pasta in when you add in the chicken.

What I love so much about this soup is that it can happen fairly quickly on a weeknight. Quick and easy everyday meals are my favorite, but I never want to sacrifice flavor, or texture, if I’m being honest. You know this! While I mention in the recipe how to make the chicken that goes into your soup, ideally this recipe is perfect for midweek because you can use leftover shredded (even grilled!) chicken or grab a rotisserie chicken from the grocery store in a pinch. Isn’t that just the best?

The brothy base is made with Swanson Chicken Broth, fire roasted tomatoes, parmesan and basil. Lots of flavor right there. The chicken and pasta lend the dish satiety and even more flavor. Then comes the fun part – a bubbly mozzarella blanketed crouton for topping.
