Pellet Grill Ribs Recipe

This is my tried and true method for the best pellet grill ribs! If you’re new to smoking meats or cooking on a Traeger (or any pellet grill), you’ve come to the right place! We will walk you through the 3-2-1 method for making some of the best-smoked ribs you’ve ever had!

Simply put, the3-2-1 methodis a “best odds” process for making delicious BBQ ribs that remain moist and tender after a long cooking time. It breaks down like this:

1 hour unwrapped, place back onto the grill and add sauce. This portion of the cooking time is completely subjective. If your ribs are at the right temp and feel after 20-30 minutes, remove them.

*Barbecue has few rules and these times are averages, not an exact measurements. Keep a close eye on the ribs as they cook and adjust the time and temperature as needed.

Heat your pellet grill to 225 degrees F., and keep the lid closed until it comes to temperature. I recommend using cherry, apple, maple, or mesquite pellets for this recipe. You can also use hickory or pecan wood pellets as well.

Place spare ribs on a large cutting board and remove membranes from the bone side of the spare ribs. Use a butter knife to separate it off the edge, get a good grip, and carefully pull it away. Use a paper towel if it becomes too slippery. Trim off any large knobs of fat or loose meat hanging off of the ribs.

Flip the ribs over so that the flesh side is exposed. Combine your dry rub ingredients and set aside. You’ll need 1/3 of a cup of my Pitmaster rib rub per rack of ribs.

You have a few options here. You can brush 2 tablespoons of oil, margarine, or mustard on each rack of spare ribs before applying the rub, or you can skip this step entirely and apply the rub directly onto the meat. I like to use mustard because it adds a nice layer of flavor to these pellet grill spare ribs. Don’t worry; it won’t make the ribs taste like mustard once they cook!

Place the ribs bone side down onto the grill grates, close the lid, and let them cook for 3 hours at 225 degrees F.

Ribs Recipe (simple & Smoked)

Combine apple juice with apple cider vinegar and pour into a clean, food-safe spray bottle—Spritz ribs after 2 hours of cooking time. Do not spritz ribs before then. We want a nice bark to form, and spritzing too early can prevent this from happening.

After the 2 hours are up, unwrap your pellet grill spare ribs, and place them back onto the grill as pictured above. Finish cooking for another 60 minutes. If you plan on saucing the ribs (purely optional), this is the time to do it. Apply a thin layer of sauce to the ribs every 15 minutes until the ribs are done. The sauce will be good and caramelized.

Place the smoked ribs onto a clean cutting board, tent with foil, and let them rest for 20 minutes. Slice into individual ribs with a sharp knife. Keep in mind that these pellet grill pork ribs will be quite tender, so cutting them might take a little patience, but it’s well worth it! Tender and infused with smoke flavor, these ribs are simply amazing!

How To Make Delicious Smoked Ribs

What About Baby Back Ribs? Baby Back Ribs are smaller and cook faster. The general rule for these ribs is to go with a 2-2-1 method where the initial cooking and wrapping times are reduced by one hour. Read our pellet grill baby rib recipe guide for more information.

American As Apple Pie Ribs Recipe

) In this recipe we are not utilizing the 3-2-1 method, and instead using the pellet grill’s ability to start with a low smoke setting and then finish at a higher heat. No wrapping involved. Here is how we approach smoking ribs on a pellet grill, using our American made MAK Two Star-General.

Having a high quality grill with a consistent temperature range is important. On our MAK, we use their remote probe that can be moved to sit right next to the ribs so the temperature is as accurate and consistent throughout the cook.

Smoked Baby Back Ribs On A Pellet Grill

All ribs will have two sides to them: the bone side with little to no meat, and the meaty side. There are a several style of ribs that can be purchased. What we recommend for this recipe is the St. Louis Cut, which are pre-trimmed spare ribs that remove cartilage. We recommend this cut because there is generally more meat on the bone vs Baby Backs (which will cook faster using this method).

No matter which cut you choose for pellet grill ribs, try to buy ribs that have good marbling and no large fat pockets. You can compare packaging to see that some ribs may have large pockets of thick fat on the meaty side. Those you will have to trim off, so try to buy ribs that have little of that excess fat and, instead, more of the even marbling throughout the cut.

Best

The bone side of the ribs will have a thin paper-like membrane that should be removed. If you do not remove it, and smoke it for hours, the papery membrane will thicken and create an unpleasant texture when biting into the ribs.

How To Cook Baby Back Ribs On A Pellet Grill — Rum And Cook

Chef’s Tip: Use a sharp knife to start a small cut along one corner of the rib bone and membrane. Then use a paper towel to grab the slippery membrane. Pull that corner gently and remove the membrane. The towel helps avoids losing grip on the slippery membrane.

After combining the ingredients in a bowl, we coat the ribs with yellow mustard (this acts as a binder that will help the rub stick). You can use Dijon, or even olive oil. Either liquid works, but we like the look and minor flavor the mustard adds. Then they are ready to smoke.

You can season the ribs right before putting them on the smoker, or season them the night before for a little more flavor.
