I made these Buffet Pancake Dippers for the wedding party the morning of the wedding. They were a huge hit. That morning was so crazy it was nice to have something they could grab and go. I’m making them again for an Easter Breakfast Brunch. ALSO GREAT FOR NATIONAL PANCAKE DAY!

Bacon

I lightened it up a bit by using the “Heart Smart” Bisquick, lite syrup and center cutbacon. Did you know you can have 3 slices of center cut baconfor only 70 calories? You can also choose to make some without the bacon. ServePassion Orange Guava juice also known as POG on the Islands with your pancake dippers.

Maple Glazed Bacon With Fluffy Pancakes

These Bacon Pancakes are super easy to make! I poured the batter in a squeeze bottle. TIP: Make sure the hole at the tip is large enough for the batter to easily go through. Squeeze some of the batter onto a hot griddle in the shape of the bacon, place a piece of bacon in the center and add more batter on top in a zig-zag pattern.

Make a batch, cool completely, place in a freezer safe zip top bag. Next time you need something on the go…pop a couple in the toaster! Off you go with a yummy on the go breakfast.

Easy To Make Bacon Pancake Dippers

If you need to feed a crowd for a big family breakfast, holiday brunch, a breakfast party, or even if you just want to make a fun treat for yourself, these Bacon Pancake Dippers are perfect! Whip up a small batch or a huge batch and watch people come bacon for seconds. We love that the bacon-stuffed pancake sticks can be eaten by hand and dipped into pure maple syrup.

Here’s what you’ll need to make Bacon Pancake Dippers (the exact measurements and full recipe instructions are below in the easy-to-print recipe card):

Bacon And Egg Pancakes

Pancake mix – we like Bisquick, but use any pancake mix you like. Be sure to check the box to see what ingredients you need to make the pancakes. You will want to make enough batter for 16 pancakes since there are usually 16 slices of bacon in one pound.

Bacon – you’ll need one pound or 16 slices of bacon. Cook the bacon however you like before you make the pancake sticks.

Cook the bacon using your preferred method until the bacon is crisp. Set aside to cool. Prepare the pancake mix according to the package instructions.

Bacon Pancake Dippers Recipe

Heat a griddle over medium heat. Ladle the pancake mix onto the griddle in the same width and length as one slice of bacon. Immediately lay one slice of bacon onto the pancake, then drizzle 1-2 teaspoons of additional pancake batter over the bacon, but do not entirely cover the strip of bacon.

Cook the pancake until golden brown on one side, then flip and continue to cook until the pancake is fully set. Remove from the griddle then repeat this process with the remaining pancake batter and bacon.

Keep the leftover bacon pancakes in an airtight food storage container. Refrigerate for up to three days. Individual portions can be reheated in the microwave.

When creating this recipe, I tested several approaches to outlining and covering a strip of bacon with pancake batter. My biggest concern was that the batter could possibly soften the bacon, which means we’d lose our crispiness factor. Not an option!

So the real trick to ensuring your bacon remains crunchy and your pancakes cook all the way through is to spoon the pancake batter around and then directly on top of the bacon.

Allow each pancake dipper to cook until bubbles form only around the edges, then flip it once and let it continue cooking until it is puffed and no longer doughy.

Pancakes With Bacon And Salted Honey Butter

If you’re feeding a crowd of tiny taste-testers, feel free to do half-size portions by either slicing the bacon prior to cooking it or just breaking each slice of bacon in half before surrounding it with batter.

The great news is that Bacon Pancake Dippers freeze like a breeze. So whip up a big batch then let any leftovers cool completely before wrapping them securely in plastic wrap, sealing them in a plastic bag and popping them in the freezer. When the morning breakfast rush hits, pop one or a dozen into the microwave for 30 seconds or until it’s warmed through, then let the dipping begin!
