Homemade Chicken Korma made from tender chicken thighs, a yoghurt marinade and a lightly-spiced, ground almond gravy. Serve with fluffy white rice and toasted naan bread.
There's no denying the brilliance of an authentic Indian curry. However, if you're wanting to make your own, affordable Chicken Korma that's still big on flavour - you've come to the right place. I've made this for so many friends and family over the years and I'm yet to meet someone who doesn't mop up every last bit with their naan bread.

Easy Chicken Korma Curry & Garlic Rice Recipe
Add the spices and fry off for a few minutes. Add the marinated chicken to the pan. Cook for 5 minutes. Pour in the cream, chicken stock, sugar and ground almonds then stir to combine. Bring the pan to a simmer for 10-15 minutes until the chicken is cooked through.
It sure would! Simply double the ingredients. When the curry is cooked, place half of it into a freezer safe container immediately (if you wait until after dinner, people will for sure go back and eat this extra meal. Don't let that happen!). Once the curry has cooled to room temperature, place the lid on and freeze for up to three months.
YES! Not everyone knows this but rice freezes really well. So to get super duper organised, double the curry AND the rice, then freeze a complete meal! Rice freezes well in snap lock bags. Get the rice as flat as possible in the bag - this ensures it will defrost evenly and quickly. Or, freeze the rice and curry together.
Minute Chicken Korma
Store any leftover chicken korma in an airtight container in the fridge for up to three days. Reheat on the stovetop or in the microwave until piping hot.
As mentioned above, this meal is perfect for freezing. Store in an airtight container or freezer bag in the freezer for up three months. Defrost completely before reheating.
To get ahead, you can marinade the chicken the morning of, or the night before cooking - up to 24 hours earlier.

It took a little bit of experimentation to get this korma to taste exactly the way I wanted to it. Creamy, but not cloying, mild but not flavourless. I really wanted it to stand out as a curry the adults would love, as well as the kids, but also for it to be quick and simple.

This certainly won't disappoint. No marinating needed, no removing bits from the pan and adding them back later - just adding ingredients in to build up the flavours, then letting it simmer for a few minutes before serving.
π©π³PRO TIP You can replace the double (heavy) cream with single (half-fat) cream if you prefer, just be sure to turn off the heat before stirring it in.

Easy Chicken Korma. Only A Little Heat, But So Big On Flavour!
A rich and creamy chicken korma with lots of flavour. All cooked in one pan with no marinading required, it's ready in less than 30 minutes!

Coconut cream is thicker than coconut milk, with a higher fat content. You can use the little tins of coconut cream or use creamed coconut blocks mixed with a little hot water to make coconut cream. I use the coconut blocks for this recipe. If you only have coconut milk, you can chill the tin overnight, then open the tin and use the solid portion at the top of the tin, leaving the liquid behind.
Reheat in a pan over a medium heat, stirring often, until the chicken is piping hot throughout. You may need to add in a little water or cream to loosen when reheating, as the sauce will thicken.
Zafrani Chicken Korma Recipe
Yogurt can sometimes be difficult to work with when freezing as it can sometimes split or go a little grainy on defrosting. However I've frozen and reheated this curry and it was fine.
The key here is to ensure you're using full fat cream and full fat yogurt. Lower fat dairy products are much more likely to split/curdle.
You can double or half this recipe, sticking to the same ingredient ratios.It will take slightly longer for the chicken to cook if you're doubling up.

World Cuisine: The Recipe For Authentic Chicken Korma
When I first made this recipe, I did some research into the key ingredients in a chicken korma, as I wanted to make my recipe as authentic as possible (whilst still being quick and easy!), and discovered there really is no such thing as an authentic chicken korma. There are so many different variations!
However, what they all seemed to have in common was light, aromatic spicing and a creamy nutty sauce. So that is what I have aimed to achieve with my easy peasy take on chicken korma.
One of the things I was particularly conscious of is when creating my Easy Chicken Korma was that not everyone has a cupboard full of different spices like I have!

A lot if the chicken korma recipes I read when developing my own involved half a dozen spices or more and that for me just isn’t what Easy Peasy Foodie is all about.
I know a long list of ingredients you don’t have can be a big turn off with curry recipes. However, I discovered that most of the spices commonly found in chicken korma can be found in Tesco Garam Masala, so I used that, and the only other spice I added was turmeric, which for me is essential in a korma.
The other thing I was conscious of was that chicken korma can be very rich and unhealthy – some of the recipes I looked at had coconut milk, full-fat yogurt AND cream in them, which I really feel is over the top!

Mild Chicken Korma Recipe
For me just using coconut milk in this curry works fine – enough nutty creaminess, without a total calorie overload. Plus I like using coconut milk as it is rich in vitamins and minerals.
The result is a light, fragrant curry, which is creamy but not overly rich and best of all is quick and easy to make and tastes delicious. My kids really liked this chicken korma, and they are not always big fans of curry – they often find it too spicy.
This is definitely a good “beginner” curry. In fact, I have not used chilli at all in this recipe, so it is a very mild curry, but feel free to add in some fresh or dried chillies if you like a bit of heat.

If you want to be a bit more adventurous, this would go brilliantly with my Easy Peasy Pilau Rice and a simple Indian style salad.
My favourite wine match for this curry is a French or Chilean Viognier…though my husband would always say a beer goes best with curry π
