When it comes to easy desserts, brownies are kind of the best. I love how quickly they come together, and they are usually what I make when I need a great dessert, but don’t have a lot of time or attention to focus on making that dessert. Every time I share these brownies with someone, they want the recipe.

These easy brownies made with cocoa powder have a perfect brownie texture, at least in my book. You get that awesome, chewy, sink your teeth into them experience with these, as well as that great shiny, ever so slightly crusty top.
Peanut Butter Brownies Recipe
While many homemade brownie recipes require you to melt chocolate, these do not. Don’t get me wrong, there are some phenomenal recipes out that begin with chopping up chocolate, I just never find myself making them. And when you taste these brownies made with cocoa powder, you’ll probably understand why I don’t feel the need to get out that bar of baking chocolate.
While I’m a big fan of dark cocoa powder, in this recipe I stick with regular cocoa powder. Like all brownies, these are sweet – but not overly sweet. They actually taste like dark chocolate in my opinion, so using dark cocoa powder might push them a bit too far to the bittersweet side.
Now if you love a super dark chocolate and want a bittersweet brownie, by all means, grab that dark cocoa powder and take these brownies made with cocoa powder to the deep, dark chocolate side.
Easy Chocolate Walnut Brownies With Cocoa Powder
Speaking of cocoa powder, I prefer to go with a natural cocoa powder on these, not Dutch process. Most grocery story cocoa powders such as Hershey’s, Ghirardelli, and Scharffen Berger are natural cocoa powders. Because it’s not an overly sweet brownie recipe, I like to add mini semi-sweet chocolate chips for those sweeter pops of chocolate in each bite.
Mix it up, add some mix ins! While I didn’t add them due to allergies in my family, these would be amazing with walnuts mixed in. Pecans or even almonds would also be a great addition. Chocolate chips, white chocolate chips, peanut butter chips – any kind of chips will be a great addition. You can even go the fruit route and add some dried blueberries or raspberries.
Travel: These brownies have a nice substance to them, and I find that they travel well – so if you need a dessert to take to gathering or get together, these brownies made with cocoa powder are a great choice.
Cocoa Brownies With Browned Butter And Walnuts Recipe
Storage: Wrap them tightly, and these will store for up to five days at room temperature. That said, they are always the best, when they are the freshest.
Freezing: While we never have “leftover” brownies in this house, these brownies to do freeze well. I recommend cutting them, and wrapping individual brownies in to layers of plastic wrap. Then place them in a Ziploc style bag. To thaw, remove from freezer and let come to room temperature.

Bakery Style Brownies With No Cocoa Powder+video+tips
Recently a reader (Hi, Linda!) emailed me with a request. She asked if I’d consider creating a new brownie recipe that used ALL cocoa powder as its base. The reason for this request, she explained, is that her husband – who’s a doctor and is working overtime right now – LOVES homemade brownies! She went on to share she typically bakes him between 3 and 6 batches of brownies a week. Always making plenty for him to work to share with co-workers and patients. How sweet is that!?
The issue? Most of the brownie recipes she was encountering call for a large quantity of high-quality chocolate. Which is very expensive and can be hard to find. Especially right now… given everything going on in the world!
I couldn’t have been happier to read this email and I basically ran into my kitchen to accommodate her request! And I didn’t stop until I had created the best brownies ever!

I also made a mental note: create more budget friendly recipes that’ll help keep us all happy and baking through these trying times! So from here on out, I’ll be sharing a few basic baking recipes a week, in addition to the regularly programed content!
I suggest you place the brownies on a wire rack and cool completely in the pan before slicing. They usually come to room temperature within a few hours. If you want a warm brownie, you can heat it up for a few seconds in the oven or microwave.

This recipe yields about 9 large brownies! But I’ve successfully doubled the recipe by simply multiplying the ingredients by two and baking them in a 9×13-inch baking pan. If you do decide to double the recipe, you’ll want to increase the baking time by about 5 minutes, maybe a little more.

Today’s recipe uses the same ingredients as the homemade brownie mix, only it is written for when you want those brownies now and don’t want to make up a batch of mix ahead of time.

Thick Cocoa Brownies
One quick note on the cocoa powder. I like to use dutch process because I think it has a richer, less sharp flavor that is more similar to what you get in a box mix. It’s also darker in color.
The picture below shows the color of the brownies if you use regular cocoa powder. Please note that this recipe calls for unsweetened cocoa powder for baking, not “powdered hot chocolate cocoa mix.”
Start by melting your butter in a large microwave-safe bowl. You can also use oil or substitute half of the butter for oil. I like the flavor that butter gives, but oil makes them a tad moister.

Next, whisk in the sugar, and make sure the mixture is cooled almost to room temperature. (You don’t want to scramble your eggs)
