Keto Chocolate Drizzle Recipe

Really, I don't want to know... But, this is literally the best keto chocolate sauce I have ever had (or ANY chocolate sauce, for that matter). Period. And it's actually good for you (think loads of antioxidants)! It's also low-FODMAP, Paleo and dairy-free! Made with creamy coconut milk. Oooo-la-la!

So one evening, we were sitting down with a lovely dessert of berries, topped with Low-Carb Whipped Cream and lemon flake salt. Total decadence, right? Not that that dessert needed anything else, but I was in the mood for something chocolate. So I figured that making a chocolate sauce would be a pretty quick thing to whip up!

Okay, so I did manage to just poke down the juicy berries with sweet, salted whipped cream (don't feel too sorry for me), but I still needed to follow up with that chocolate inspiration.

I had everything I needed, so I grabbed a small pot and went to it. I guessed at the measurements and tweaked them just tad. Within 10 minutes, the result was a creamy, silky, slightly salty, coconutty (is that a word?) pot of sheer chocolate pleasure. I could just sip it from a cup. I really ended up just standing over the stove dunking the spoon in - over... and over... and over... When you make this, you may end up doing the very same thing (it's okay!).

So I'm a big, big fan of raw cacao. In recipes that call for powdered unsweetened chocolate, I always use cacao in its place. It's one of nature's superfoods. It's full of antioxidants, flavonoids, iron, trace minerals and is a natural mood elevator. It boosts serotonin, tryptophan, tyrosine and phenylethylamine - all neurotransmitters that make us feel all warm and fuzzy. Whip up a batch, grab some berries and bliss out with the best keto chocolate sauce ever (okay - my opinion!).

This is literally the best chocolate sauce I have ever had.  It's actually good for you!  It's keto, low-FODMAP, Paleo and dairy-free!

Sugar Free Chocolate Syrup

Sweetener blend I like to use a 50/50 blend of stevia and monk fruit because the erythritol in monk fruit sweeteners can cause some digestive upset and it works great with stevia.  If you do okay with erythritol or another sweetener, have at it!

Or just go nuts and add a tablespoon of peanut butter.  It will be thick, though, so if you want it to stay 'saucey', you need to add a little bit more coconut milk.  Or don't, and have yourself the best keto chocolate pudding ever!!!  Seriously, try this.  It's insane.

For the sweetener, I recommend using allulose or an allulose monk fruit blend . Xylitol will probably work too, but I haven't tested it.

Keep in mind that allulose is only 70% as sweet as other sweeteners. So if you use xylitol or an allulose blend you may need to reduce the sweetener by a few tablespoons.

Step #2: Bring to a boil. Then, lower the heat to a light simmer and simmer, untouched, for 4 to 5 minutes.

For Paleo: Reduce the water to ½ cup and replace the sweetener with 6 Tbsp. coconut palm sugar and 6 Tbsp. honey. Taste and add more sweetener as needed.

Typically, one cup of cow's milk contains 12 net carbs - which is way too many to be keto-friendly! Because of this, I recommend unsweetened almond, coconut, or cashew milk. All of these non-dairy milks have around 2 net carbs or less per cup.

Homemade chocolate sauce is traditionally made with water, sugar, corn syrup, cocoa powder, and chocolate. Basically sugar, sugar, and more sugar! Definitely not keto-friendly.

Sugar Free Chocolate Syrup Recipe

Of course my recipe for easy sugar free chocolate sauce is completely keto-friendly. We’re using: heavy cream, water, allulose, brown Swerve sweetener, unsweetened cocoa powder, salt, butter, vanilla extract, and low carb chocolate chips (like Lily’s or Lakanto). This keto chocolate sauce recipe is low carb but tastes sooooo indulgent!

You DON’T need flour or cornstarch to make thick and rich chocolate sauce. Besides the fact that neither are keto-friendly, the idea of thickening chocolate sauce with flour makes my pastry chef heart die a little inside. Just don’t do it.

There are likely two reasons why your chocolate sauce is too thin. The first could be that you need to reduce the liquid further. My recipe starts with smaller amount of liquid, so you will only need to cook the liquid at a gentle boil for 5 minutes. Other recipe developers might instruct you to boil their chocolate sauce for 20 minutes. Every recipe will have different ingredients and instructions, so following the directions and cooking down the sauce for long enough will be key to making thick chocolate sauce.

The second reason your chocolate sauce may be too thin is that it doesn’t contain any real dark chocolate. Some recipes only call for cocoa powder, and you might find the end result of those sauces too thin (those that are thicker usually rely on corn syrup for texture). In my recipe you’ll melt some keto friendly dark chocolate into the sauce at the end. The cocoa butter (which isn’t present in cocoa powder) adds an extra dimension to the flavor and the chocolate thickens the sauce.

It solidifies in the refrigerator and is usually heated before serving to make it liquidy enough for drizzling. Chocolate sauce is usually made with at least some real chocolate, although it’s often made with both real chocolate and cocoa powder.
