Gluten Free Recipe Using Almond Meal

This moist and decadent cake is made using almond meal instead of flour and is one of my most popular cake recipes.

Serve it cool for an afternoon tea treat, or warm it up for a simple dessert and add a dollop of cream, custard or ice-cream.

Almond Flour Chocolate Cookies (gluten Free)

There's so much to love about this gluten free almond cake (true fact... every single time I've baked this cake, I've been asked for the recipe - it's honestly that good!):

It's incredibly simple to make this gluten-free almond and coconut cake - have it in the oven in less than 10 minutes....

Almond Flour Cookies (keto, Gluten Free)

Almond meal is the key to making delicious gluten-free cakes. It gives a beautiful nutty texture, while also keeping the cakes incredibly moist.

If you've got lots of whole almonds sitting at home (especially if you have a Thermomix), then this could be the perfect option for you! Make your own almond meal by 'blitzing' whole almonds in a clean and completely dry blender or Thermomix until they resemble a fine but grainy powder.

A gluten-free dietexcludes any foods that contain gluten, which is a protein found in wheat and several other grains. It means eating only whole foods that don't contain gluten, such as fruits, vegetables, meat and eggs, as well as processed gluten-free foods like gluten-free bread or pasta, and using gluten-free baking and cooking products.

Paleo Almond Flour Cookie Dough Bars (edible, Vegan, Dairy Free)

So here is another classic Italian recipe for an almond cake (with no chocolate, or butter) that I'm sure you will want to try too.

For this recipe, I just use almond flourand no regular flour. You can also substitute for hazelnut flour if you prefer. Just as good!

Cooking

Any finely ground almond flour works, or almond meal. I buy mine at trader's Joe or Whole Foods, but you can find it in most grocery stores. If you can't find almond flour, you can make it yourself: buy whole, blenched almonds and blend/blitz until you get fine, powdery flour. Do not over-blend or you will end up with almond butter instead.

Almond Flour Peanut Butter Cookies

This delicious almond cake is flavored with orange zest and juice, but you're welcome to substitute it with lemon or limoncello like in my torta caprese.

You can flavor the cake batter with almond extract or orange extract. Or if you rather keep it simple, you don't need to add either.

You can use extra virgin olive oil (this is the one I LOVE), or if it's too flavorful for your taste, you can use vegetable oil. Or melted butter if you prefer, in the same amount.

Italian Almond Cookies (gluten Free Biscuits, Ricciarelli)

You will need to divide the egg yolks and the whites. Use the yolks right away and mix well with the sugar. I use a hand mixer for this step, but you can whisk by hand or use a stand mixer too.

Theegg whites are beatenuntil firm and folded into the cake batter at the end. Add a small portion of the egg whites to start, maybe a fourth or so. Using a spoon or spatula, move around theedgesof the bowl, under the batter, and fold it to the middle of the bowl.Continuerotating the bowl.

Almond

Add more of the egg whites andcontinuefolding until incorporated in the batter. This motion will make sure the egg white will not deflate and the batter is airy and soft.

Low Carb Almond Flour Bread (gluten Free, Dairy Free)

Pour into an 8 or 9-inch springform pan, top with almond slices, and bake until golden on top and set in the middle.

Gluten Free Almond Flour Chocolate Chip Cookies Recipe

Question: Why do we boil the oranges? By boiling the oranges, it removes the bitterness of the white pith just under the skin while leaving you with a deliciously intense orange-flavoured puree.

Bring to the boil and then reduce to a low simmer for 2 hours or until the oranges are very soft and can be easily pricked through the skin with a fork.

TIP: You will need to keep an eye on the oranges to top the water up a few times while they're cooking.

Gluten Free Flourless Orange Almond Cake

If possible, choose navel oranges which are seedless, juicy and bright in colour. If you can't find seedless oranges, remove the seeds once the oranges have been boiled and chopped up.

You can buy packets of prepared almond meal from the nuts section of any supermarket, or health food shop. Almond meal can be made from either whole raw or blanched almonds that are ground finely, and the consistency is more like a cornmeal than a wheat flour. You can always make your own almond meal by grounding whole almonds if you prefer.

Almond meal and ground almonds contain the skin and have a coarse grind, whereas almond flour is made from blanched almonds with the skins removed and has a much finer texture.

Almond Flour Sugar Cookies (vegan, Gluten Free + Oil Free)

If you notice that your cake is browning too much, simply place a sheet of foil loosely over the top and continue to cook.
