Easy and comforting Chicken Curry that doesn't demand too much of your time! It's not complicated at all but will still remind you of your favourite Punjabi dhaba! This is the perfect homestyle chicken curry for all you beginners!

Craving a good chicken curry? But too lazy to get into the long-drawn process of making it? Here's my quick fix chicken curry! It's an easy, everyday comforting home style chicken curry that tastes phenomenal despite all the shortcuts I’ve used.

This curry is weeknight dinner goals for sure because it doesn't take too long to make. It's super basic and simpler than Dhaba Style Chicken Curry because we are using store bought meat masala today. There aren't many technical points that you have to pay attention to either! And though I’ve done some quick fixes in this recipe, I’ve not compromised on the flavours at all!

North Indian Chicken Curry

I've used curry cuts of chicken. You can do this at home if you're familiar with how it's done, or you could even use store bought curry cut. I've used small to medium sized pieces with the bone in, so that the chicken pieces don't dry out when cooked.

This is a super basic yoghurt-based marinade. The yoghurt acts as a meat tenderizer. And the turmeric and salt are for colour and seasoning. This three-ingredient marinade works really well for a simple chicken curry. The chicken doesn't need to marinate for long, around 15-20 minutes will do. I suggest that you do this step first, so that the chicken can marinate while you get everything else together.

I’m not going to ask you to chop anything (except a little coriander in the end). All you have to do is peel and dump the ingredients into a mixie. Let it do all the work!

Special Chicken Fry

This is a rough and coarse paste that goes in right at the beginning. Grind it separately and keep aside. This forms the base for our delicious chicken curry, and we want to turn this into a caramelised golden brown colour when cooked

Whether it's Chicken Biryani or Curry, Indian food is never complete without whole spices added to the mix. My mum has a spice box filled with all sorts of fragrant spices which are used in different combinations depending on the dish. In this homemade chicken curry, we used bay leaves, cumin seeds, cloves and cardamom. This dish doesn't have many components, and it's these spices that bring the dish to life with their aroma.

Don't stress, this is not at all a technical recipe. But here are a few things you need to look out for!

A good chicken curry recipe usually involves either: making a curry paste from scratch, OR a long ingredients list like this amazing Tikka Masala . So, we came up with a recipe/solution to give you that Curry hit you’ve been craving forin an easier way.

Dhaba Style Chicken Curry

This may NOT be an authentic Indian curry, BUT it does give you a satisfying hit of flavor and spices, AND it may just tick all of your curry craving boxes:

FIRST, you’re going to toss the chicken pieces in a couple of spices. We may be making life easier, but you STILL WANT a great curry and it all starts here!

Once the chicken is fried, add in the spices and/orcurry powder to release epic flavors before adding anything else. This step is essential for a great curry sauce. Plus, you get the bonus of browned bits frying onto the bottom of your pan. Browned bits = flavor!

Chicken Varuval (no Prefrying Of Chicken Required)

LASTLY, add in your tomato puree (I always use Passata) and coconut milk or cream. Taste test and adjust seasonings to suit your palate if you need too!THAT’S IT!

Heaven! With all of the fresh aromatics, spices and optional brown sugar, curryhas a unique rich and earthy flavor. Adjust the level of heat by adding more or less chili or curry powder.

You may find that you don’t need to thicken the curry sauce in this recipe as the combination of coconut milk/cream with tomato puree thickens it for you. For a thicker curry, however, you can either add in a couple tablespoons of tomato paste, OR a cornstarch slurry. Dissolvetwo teaspoons of cornstarch into one tablespoon of cold water. Stir the slurry into the sauce and let it simmer until the sauce thickens. It won’t take very long at all.

There’s nothing groundbreaking about how this chicken curry is made. The one key step is tofry off the curry powder.This brightens up the flavour of the spices + creates more golden bits on the base of the pan, and both of these things

This recipe is all about the curry sauce, so it’s really versatile in terms of what you can put in it, as well as extra add ins. Here are some options:

2. Curry powder - any brand is fine, I use Clives and Keens. Use Mild for not spicy, Hot for spicy! Note: different brands have different saltiness, so taste sauce at end to see if it needs more salt.

3. Coconut milk -Full fat has better coconut flavour and is creamier. Light is ok but add 2 tsp cornflour mixed with splash of water (to thicken sauce slightly).

Easy Chicken Curry {quick & Healthy}

I forgot to share this when I published Gozleme! (Turkish stuffed flatbreads) I took them down to Jeff, a local who lives down at the dog park and he gave them a big thumbs up.

This is the one for you. It uses a regular mild curry powder, but we also use a few additional spices and aromatics as well as creamy coconut milk for a totally moreish curry that the adults and kids will love.
