This quick & easy recipe for Crock-Pot Sweet Acorn Squash is the perfect side dish to go with dinner! With only 3 ingredients it couldn’t be easier to make!

Acorn squash is a fall and winter favorite because it is in season and tastes great. I like to keep it simple with this recipe which is just acorn squash, and a little bit of butter and brown sugar. My family eats it as a side dish with just about any meal and I have even been known to eat an entire acorn squash half for lunch.

The flesh of the acorn squash comes out nice and tender in the slow cooker and the little bit of butter and brown sugar brings out the natural flavors in this beautiful vegetable.

Another bonus is that this recipe is healthy too! With acorn squashes packing in a ton of fiber and a healthy dose of vitamins C, A, B-6, niacin, folate, and thiamine! And at just 4 Weight Watchers SmartPoints per serving it is diet friendly too!

My husband likes to add a little bit of salt before eating as this gives a nice balance of sweet and salty while my kids prefer a sprinkle of cinnamon on theirs. And yes, my kids LOVE acorn squash!
