Chestnuts Mushrooms Recipe
In my opinion, there’s no better way to cook chestnut mushrooms than with tons of hot foamy butter, a bit of fresh garlic, chopped parsley and a squeeze of lemon.
If you’ve never cooked them before, don’t worry because they’re really easy to cook. Below you’ll find all my tips for getting the best flavour out of these incredible mushrooms.

*Update* – Chestnut mushrooms can be confused with two different types of mushrooms. To clarify, this is a recipe using the Agaricus bisporus mushroom a.k.a the farmed brown button mushroom whereas Pholiota adiposa is a wild mushroom that’s much different in taste and texture. The good news is that this same recipe can still be applied to Pholiota adiposa. The only difference is that the bottom part of their long stems will need to be removed as they can be a bit tough.
Chestnut Mushrooms With Roasted Chestnuts
Technically, they’re all the same variety of mushrooms but with different names. The only real difference is with Portobello mushrooms which are left to grow a little bigger.
In my experience, chestnut mushrooms are a little denser and better flavoured than cremini mushrooms. Although, If I couldn’t find the chestnut variety, I wouldn’t lose sleep over it as they’re both delicious.
I prefer to use a little dry brush to brush off any dirt and if they’re really dirty I’ll use a wet paper towel to clean them without soaking them in water.

To buy a brush just for mushroom cleaning but it does make things a little easier. Just be sure that if you do buy a brush get one with soft bristles and not hard bristles which may damage the mushrooms.
The trick is to *almost* brown the butter before you add the mushrooms, that way you know the butter is hot and ready to go.
If you’re interested in keeping this vegan there are some pretty decent vegan kinds of butter on the market these days that will be the next best thing. Although I don’t recommend browning the vegan butter as it’s not the same.

The key ingredient is not the fresh mushrooms or the roasted chestnuts but dried porcini mushrooms. Typically, we rehydrate dried mushrooms for cooking.
But grinding up the porcini mushrooms into a powder allows them to become the thickener for the sauce. Avoiding the gumminess, a gluten-free starch or flour would give if you make the recipe ahead of time. Plus, they provide additional flavor without the wait time of rehydrating.

You can pulse the dried porcinis in a spice grinder, small food processor, or use a mortar and pestle. The key is to get a light powder. Set aside.

Next, melt your ghee or coconut oil in a large skillet with high sides over medium heat. Saute the shallots until they soften and then add the garlic for a quick 30 to 60 second saute. Keep an eye on things. Don't let the onions or the garlic burn.
Add the chestnut mushrooms cut into quarters. Saute for 10 minutes. We want them to release their excess water but whittle down to nothing. Add your thyme and dried porcini powder. Stir to coat each mushroom with the porcini powder. This will help with even thickening later.
Add the Madiera wine (or stock plus sugar and vinegar) and cook until reduced by two-thirds. Add the chestnuts and the almond milk to the pan. Cook until the chestnuts are warmed through and the sauce is thick and creamy.

Season to taste with salt and pepper. Just a note, we don't add salt to the dish until the end because the amount can vary if using stock vs wine. Also, mushrooms are finicky about salt. They absorb and it can result in over salting the dish. When using wine I typically use ⅓- ½ teaspoon of salt and ⅛ teaspoon of black pepper.
Transfer to a serving dish. For an easy weeknight dinner, we serve this over brown rice and with a side of our brussel sprout salad.
If making this recipe in advanced you will stop after reducing the wine. It will keep in the refridgerator for 2-3 days.

Mushrooms (obviously!). I've specified both chestnut mushrooms, because they really keep their texture when cooked, and don't tend to shrink to nothing like other mushrooms, and also button mushrooms as it it lovely to bite into a whole baby mushroom here and there.
Shallots I use the small, round shallots, which I leave in halves or quarters, so they add texture as well as flavour to the dish. If you can only get hold of the bigger 'banana' shallots then use 2 rather than the 4-5 specified, and slice them into thick rounds instead. And if you're using an onion, just one small one will do and slice thickly.

Red wine Never cook with a wine you wouldn’t drink! A medium-bodied red will go well with these flavours – not too heavy but reasonably acidic. something like a Cabernet Sauvignon would be excellent.
