Banana Cake Recipe With Oil Nz

Every now and then I need to cater for large groups and when this is the case I love making cakes, the bigger the better! But the flavour has to be good and of course it has to use easy ingredients otherwise it will not get made in our house. So this recipe perfectly marries all of those things together!

I have other Banana cake recipes on this blog but today wanted one that was super simple to share with you and this one hits the spot!

Really Easy Air Fryer Banana Bread (mini Loaf!)

I made todays cake in a large roasting dish – approx. 25cm by 30cm so you can do this or make two small cakes, or even use it for a muffin base! When baking a large cake you can risk having the cake a little drier than you might like at the edges, so be sure to check early and often to ensure you bake it only until a skewer or knife comes out clean and remove from the oven.

Then comes the icing, I asked on my Facebook page what icing I should chose for this cake and overwhelmingly the answer was CHOCOLATE!! By a country mile this was the most popular choice, but lemon, cream cheese icing, vanilla & even golden syrup icing were suggested so any of those would be lovely on here. See below for links to my various icing ideas as you can never have too many icing recipes at your fingertips! I have a basic chocolate icing, but today I made a more luxurious icing and it certainly worked well with this cake.

As with most recipes needing bananas the riper the better! So the perfect banana is the one left in your bowl too long and has gone soft on the inside and brown on the outside. Often I chuck these in the freezer until the next time I need them. This recipe calls for 4 large over-ripe bananas so plan ahead – or like me make it on a week the kids decide they don’t want bananas for afternoon tea!

There’s so much to love about this easy banana cake recipe. It only requires one bowl. You don’t need to soften butter (the recipe calls for oil, giving the cake a soft and delicate texture.) And it’s finished with a lovely cream cheese frosting. If you’ve got overripe bananas on the counter and want something “a little different” than banana bread, try this cake.

Good question! While the flavors are similar, there are differences between banana bread and banana cake. Banana cake is similar to yellow cake or chocolate cake. It’s light, sweet, and great for birthdays. Banana bread has a denser crumb and is less sweet than banana cake.

Quick & Easy Banana Muffins

(If you’re like me an love all things banana, put my brown sugar banana bread recipe and small batch banana muffins on your “to bake” list.)

Really Ripe Bananas. The backbone of this recipe is overripe bananas. Let your bananas get nice and brown with black spots. The darker the bananas, the more pronounced the banana flavor in the cake. You’ll need two to three overripe bananas (about one cup of mashed bananas).

All-purpose flour. Regular all-purpose flour works great in this cake. There’s no need to use cake flour. (If that’s all you have in the kitchen, go ahead and use it!)

Canola Oil. Using oil in this recipe is not only easy, but it also makes for a moist and tender cake. Melted and cooled butter can be substituted for the oil. However, you’ll get a better result using oil.

Baking Powder and Baking Soda. The combination of baking powder and baking soda gives the cake lift and helps it to brown. 

Cream Cheese Frosting. To finish the cake, make a simple cream cheese frosting. All you need are cream cheese, butter, powdered sugar, salt, and vanilla. If you don’t like cream cheese frosting, top the cake with vanilla or chocolate butter. Or skip the frosting altogether!

Before you begin measuring ingredients and mixing the batter, preheat the oven. Baking a cake in a preheated oven ensures the best rise. 

Use either an 8×8-inch square or a 9×9-inch square pan for this recipe. Grease it generously with nonstick cooking spray or grease the pan with shortening and dust with flour.

Spread the batter evenly into the prepared pan. Bake until a cake tester inserted into the center of the cake comes out clean, this takes about 25 minutes. The top of the cake will look very brown. This is normal.

Let the cake cool in the pan. This takes about an hour or so. Once it’s cool, make the cream cheese frosting and spread it onto the cake. That’s it!

Keep this cake covered on the counter for up to four days. Or freeze the cooled and frosted cake for up to two months.

Gluten Free Banana Cake Recipe

Delicious recipe - made it with flour mix of brown rice flour (with 1tspn baking powder), wholemeal SR and white SR, and half the amount of sugar. I’m so glad that I didn’t use the full amount of sugar as it would have been way too sweet - as it was, it’s the best banana cake my husband has tasted, he said, and could even have had less sugar.

Mine needed an extra 8 mins in the oven, but it was delicious. I just used extra virgin olive oil but you couldn’t taste it in the cake

Omg what fantastic cake and so easy. I put half olive oil and half coconut oil and it is so moist and tasty. This will be a staple.

Love this cake I make it as a banana bread and add melted butter when u have no oil and also add a paleo mix of seeds nuts and coconut

I love this recipe, I replace flour with almond meal and oil with coconut oil, this makes a super moist cake. Over ripe bananas always mean cake in our house.

This is such a favourite in the office, I have to make 2 cakes when i take them in as the one cake only lasts 10mins max before it is gone. I have also added figs to a cake which was really good, and something that makes it look a little pretty, adding sliced bananas to the top before you place in the oven to bake - been told it adds an extra dimension!

To make this gluten free, we love using Bob’s gluten free 1 to 1 baking flour. There is no need to change qualities, you can use the same cup measures as the self-raising flour stated above. You can find this from all good health food stores and selected specialty stores. Happy baking! dh team

Hi Sue, all of our recipes are tested in a fan-forced oven, no need to adjust the cooking time. If you wish to add walnuts, you could use ½ cup of chopped walnuts or you can add more if you prefer. Happy baking!

Hi Trace, You could use wholemeal flour, however we have not tested the recipe like this and unsure how it would work out, but do let us know.

A Healthy And Sugar Free Banana Cake

One tip: If you find the mixture is too dry, you may need to add a little more extra olive or vanilla. Happy baking!

I have made this cake four or five times and each time it loved by everyone who takes a bite. So easy and quiet to make and a crowd pleaser.
