Strawberry Jam Recipe Less Sugar

Low sugar homemade strawberry jam perfectly captures delicious summer strawberries in easy-to-make, fruit-forward jam. This strawberry jam recipe made with Ball low sugar pectin is great for canning so that that you can enjoy it all year long! (gluten-free)

I've been making homemade jam since I was in college, stirring away, canning, and making a big mess in a tiny little rent house that didn't even have a dishwasher - it was quite the project! I got into it because my dear aunt used to make and gift her homemade raspberry jam, and once she passed away, I knew I wanted to carry on the tradition. It's now second nature to me, and it's so rewarding making your own jam that is healthier, tastes delicious, and allows you to preserve fruit for months to enjoy throughout the year! Strawberry jam was the first flavor I ever made, and I still enjoy it to this day.

This homemade strawberry jam is so simple and delicious. It tastes like real strawberries, nothing like the syrupy sweet (and fructose-filled) versions that line grocery stores. It's turns ordinary English muffins or toasted sourdough bread into a delightful breakfast treat. Not only is it better tasting, this jam is also better for you, made with very little sugar compared to most recipes, letting the natural flavor of strawberries shine through!

The strawberry jam will last 1-2 weeks in the refrigerator without canning. You can also store cooled jam in the freezer for up to 1 year.

Yes! Using the low sugar pectin allows you to adjust the sugar to taste, so you can use none at all, or up to one cup.

Yes! I usually make up to 8 jars (double the batch) with success. Any more than that and you risk it not setting up right.

Strawberry Less Sugar Jam

Browning or a dull color is caused by oxygen in the jar. Make sure you don't leave too much headspace, and that you try to get any air bubbles out of the jars prior to processing. You can run a clean skewer, butter knife, or chopstick around the edges of the jar to remove air bubbles. Some recipes will have you add a teaspoon of butter to prevent foaming (foaming = more air bubbles). You could also add citric acid to prevent browning.

You can make jam without pectin, but that's not this recipe. You'll need a specific method and recipe for no pectin jam.

Easy Strawberry Jam Recipe Without Pectin And Low Sugar

There were TWO things in our fridge at all times when I was growing up that were meant for breakfast. Strawberry jam and Marmite spread (New Zealand Marmite, not the UK kind!). These were always on the breakfast table for anyone who wanted toast. I was a Marmite girl, still am. But if my mother ever made homemade strawberry jam, then all else was irrelevant. I wanted that delicious, classic homemade strawberry jam slathered on top of EVERYTHING!

WOULD YOU like to make classic strawberry jam with only half the sugar, and all of the fruity, berry flavor? Then look no more, this homemade strawberry jam is honestly the best! One taste of this apple and ripe strawberry jam, and you’ll never want to buy from the store again!

Old fashioned strawberry jam isn’t usually made with a lot of ripe strawberries. The reason for that is that ripe strawberries have less pectin and therefore the jam doesn’t set enough without lots of pectin and a ton of sugar. Plus store-bought jam contains all kinds of preservatives and dyes too. I was always told to add at least the same amount of sugar (by weight) as fruit in my homemade jam.

Strawberry Fruit Spread No Added Sugar

Yes! It’s a crucial ingredient. Instead of store-bought pectin, I made this reduced sugar strawberry jam with apple (I do the same with this plum jam recipe as well). That is because apples naturally contain pectin perfect for homemade jams. Some recipes like to add lemon juice as a source of pectin instead, but when I tried it I found that the flavor of lemon tended to overpower that of strawberries (making the jam somewhat sour). So I went with apples, and the result is delicious!

Plus, since I use overripe strawberries, this homemade strawberry jam is PERFECT to use up those strawberries that have become too ripe and are prone to be thrown away. Instead, you can make this apple strawberry jam and enjoy a warm piece of toast for breakfast, while preserving those gorgeous fruits for so much longer! 🙂

You can add the apples in this recipe in two different ways, depending on how you prefer the texture of your homemade jam to be.

This reduced sugar homemade strawberry jam is perfect for PB&J sandwiches, or just on warm toast (made with homemade bread!) with butter (or better yet, on buttery brioche bread or strawberry jam tartlets), or my absolute favorite – warm, flaky cream scones (or buttermilk biscuits) with this homemade strawberry jam and cream. Yum!

Homemade Strawberry Jam with reduced sugar and NO store-bought pectin! Made with overripe strawberries, apples and sugar, this strawberry jam is the perfect breakfast spread.

Do not throw away the strawberry tops. The sliced strawberry tops can be used to make strawberry flavored vodka or rum! Simply place the strawberry tops (about 1 cup) in a large jar (at least 2 cups). Add vodka or white rum to completely cover the strawberries. Infuse for 3 - 4 days. Strain and use for cocktails.

Did you know that traditional jam recipes use sugar and fruit on a 1:1 basis? I have always wondered why this is necessary. Ripe fruit contain so much natural sweetness in form of fructose!

Low Sugar Strawberry Jam (without Pectin)

The sugar is supposed to help with the gelling of the fruit, making the jam nice and thick. It also acts as a preservative. Oh, and it's a really cheap ingredient, adding to the profit of jam companies.

I've been making sugar free jam ever since I started eating low carb. Guys, it's so simple. All you need is quality fruit, which you simmer gently until enough liquid has evaporated.

Then you add a bit of extra sweetness such as erythritol, stevia or Swerve (if necessary) and a little bit of thickener such as chia seeds, gelatin or xanthan gum (if necessary). That's it!

Low Sugar Strawberry Freezer Jam Recipe

Chop your strawberries and place them in a saucepan. Add 2 tablespoon of water (3 if your saucepan is large). This is so the strawberries don't burn whilst you soften them.

Bring to the boil, lid on, then turn the heat to medium and let it bubble away for around 15 minutes. Now your strawberries look like in the image above. They are soft and have begun to release their own liquid. Mash with a potato masher.

Continue simmering the strawberry puree over a low heat for another 30 minutes until the mixture is reduced by half. As the liquid
