This is the easiest rice pudding, which will forever feel like home to me. This creamy rice pudding recipe, or as we call it “mliako s oriz, ” is a staple in Bulgaria, which brings the fondest memories. I vividly remember being served rice pudding as a post-nap snack in kindergarten. The teachers would rotate between rice pudding and semolina pudding, which was always the best treat. Isn’t it funny how we can remember something so vividly from such a young age? The smallest gestures often make for the fondest memories, and it’s a feeling that I will forever hold close to my heart.

Rice Pudding Recipe (with Cooked Rice)
This recipe is my dad’s version and he taught me how to make the creamiest and easiest 4-ingredient rice pudding ever! The fillings are all optional and you can add anything you like, such as cinnamon, lemon zest, or raisins.
You can use any short grain rice, Italian-style rice, or arborio rice for this recipe. I like anything short grain but most varieties work.
The rice should be 90% cooked before you add it into the milk. It should be al-dente and have a little bite to it.
Healthy Rice Pudding (vegan)
You can store the pudding in the fridge for up to 3 days. Reheat until piping hot on the stove or in the microwave.
You can also freeze rice pudding by adding the pudding into freeze-safe bags, leaving about an inch of space at the top to allow for expansion. Freeze flat for up to three months. Thaw in the refrigerator overnight or in the microwave using the defrost setting.

Rice pudding is how God intended us to eat rice, my father announced when I mentioned I was thinking about making some. Well that settled it, rice pudding it would be.

Then there is my father's way, which is take some cold white rice, add some cream, sugar, and cinnamon. Mix and eat. Dad has been making rice pudding this way my whole life, but dad's method has never appealed to me that much, so boiling or baking it would have to be.
Milky Bar Baked Rice Pudding Recipe
The first recipe I tried called for 3/4 cup of heavy cream for a recipe that only served 2 people. Yikes! Too rich, couldn't eat it. (Ever notice that recipes 20 years and older can be a bit heavy on the cream and butter?) A couple of adjustments later, I settled on this recipe, using the boiling method. It is especially tasty with raisins.
This recipe calls for short-grain white rice, but let's say you don't have that on hand. In general, the shorter the grain, the higher the starch content...and it's starch that helps thicken this pudding and make it so creamy. You can use brown rice, but the pudding won't be as creamy, it will take longer to cook, and you will likely need to add more liquid.
Longer grain rice holds its shape better than shorter grain rice, which isn’t what you want for a rice pudding. You want a starchy rice. Any rice that would work well for risotto would work well for rice pudding. For the same reason you wouldn’t normally make risotto with basmati or jasmine or brown rice, you wouldn’t normally make rice pudding with it. Calrose, a short/medium grain rice, works well with this recipe because it gets soft and sticky when cooked.

Classic Rice Pudding
There is something so nostalgic about rice pudding. Something truly magical in it’s creamy simplicity that really is heartwarming as well as tummy warming. It’s simple enough to be pulled together at the last second and is a comforting dessert after any meal. I call it dessert, my boys call leftovers breakfast so, really, it’s your call.
I’ve seen a lot of recipes for rice pudding that call for eggs which, of course, means you have to temper them. Not a fan. I’ve tried several methods and the one I’m sharing with you today is my hands down favorite for several reasons.

Cooked with cinnamon. I like to add a cinnamon stick right at the beginning and as the rice cooks, it absorbs some of that delicious cinnamon flavor. It’s incredible! So much better than just stirring in cinnamon at the end.

Vanilla options. In this recipe, I really like to use vanilla bean paste because it’s so beautiful and fragrant and the flavor has a lovely intensity. You can absolutely use vanilla extract instead.

For maximum vanilla flavor, split half of a vanilla bean and scrape out the seeds. Add it to the mixture when you add the cinnamon stick. Make sure to throw in the pod as well!
There are two camps when it comes to rice pudding: raisins or no raisins. I’m a raisins girl through and through but I’ve got two in my household that can’t handle them. What to do? Simple enough. When the pudding is done, scoop out half for those that like their pudding without raisins and then stir raisins into the remaining rice pudding. I like golden raisins for this recipe.
I like to put my pudding into little ramekins or small containers for serving. That way if I need to, I can refrigerate and serve chilled, or serve warm. We definitely prefer it warm though! More Easy Desserts To Try
