It's my personal opinion that Valentine's Day is the best holiday for dessert. Pink and red are two of the loveliest color combinations. Add those colors to a dessert, and things are looking good. Makethat dessert a Valentine's Day mini berry trifle, and you've reached dessert perfection.

My boys loved helping assemble the mini berry trifle. They cut out heart shapes, and layered in the ingredients. I think it's important tomake opportunities available for little ones to get involved in the kitchen. Especially during holidays. Those are some of my most cherished memories of childhood.

You know what's another great cake to use in trifle? Leftover cake tops! If you make your own homemade cakes, you know that after leveling everything off, a large portion of the cake goes towaste. I like to wrap mine up in plastic wrap and freeze them, then use them for trifle. We've mademultiple servings of this mini berry trifle with the leftover cake tops from my chocolate covered strawberry birthday cake. Waste not, want not.

I just made this while the kidlets were at school and then I covered it completely in plastic wrap and aluminum foil and hid it in the back of the fridge so they won’t notice it . . . This easy Valentine dessert is one of our favorite recipes.

Here’s what I used . . . for the complete tutorial visit my Fresh Berry Trifle recipe. It’s got all the info. This time I could not find fresh berries at my nearby market. So I went with frozen berries this time. I let them thaw and then used them like normal. They were a little squishy, but still really good. I also used the most white-looking pudding I could find (in this case cheesecake flavor of Jell-O brand), so that I could use food coloring and turn it pink.

Trifle is a fun dessert because everything gets layered together and it mixes the flavors all throughout the dessert. So light and refreshing!
