So, you want to know how to make this easy salted caramel cheesecake? It’s brilliantly simple, and I’m going to show you how.

To make sure that your cheesecake sets properly, it’s best to leave it in the fridge overnight. You should leave it in the fridge for at least 6 hours, otherwise you risk it ending up too sloppy and separating from the biscuit base.

It’s also really important to whisk the filling properly. If you don’t whisk it enough, the filling won’t be thick and creamy enough. That’s why it’s always a good idea to use a stand mixer when whisking your cheesecake filling.

Lastly, always use full fat cream cheese when making no bake cheesecakes. Reduced fat types just don’t produce the same results. Not only will you end up with a sloppy mixture, but it will also be grainy.

Removing the cheesecake from the tin can get a little messy if not done right. The last thing you want is to fall at the final hurdle, so it’s important to take your time with this stage of the recipe and make sure that your salted caramel cheesecake is intact when removed.

For me, the easiest way to remove the cheesecake is to use a blowtorch. This might sound extreme, but honestly it’s the best way! These little gizmos are great for getting out of sticking situations and, once you’ve seen how effective it is, you’ll use this method every time.

You can also use a non-stick palette knife. Just dip it in boiling water, and run it around the edge of the tin. Another way is to run a cloth soaked in hot water around the edge of the tin.

Base: Put the biscuits and melted butter in a food processor and whizz to form crumbs the texture of coarse wet sand. Tip the crumbs into the base of the prepared tin, press in firmly, and take the base halfway up the sides of the tin. Finish off by using the back of a tablespoon or the base of a glass to smooth the base and sides. Place in the fridge.

Filling: Wipe out the food processor and chop the cream cheese roughly. Whizz the cream cheese with the caramel condensed milk, sour cream, brown sugar and golden syrup until well incorporated.

Mix the custard powder with 1 tablespoon water to a smooth paste and add to the food processor with the eggs and yolks. Pulse to combine without overbeating. Pour the filling into the chilled base and bake for 70 minutes or until there is still a slight wobble in the centre of the cheesecake.

Open the oven door halfway and leave to cool in the oven for 15 minutes. Once the cheesecake is cold, carefully remove it from the tin and transfer to a serving plate. The cheesecake can be refrigerated, once cold, for up to 6 hours before serving.

Chocolate sauce: Heat the cream in a microwave-proof jug or small pot until just simmering. Remove from the heat, add chopped chocolate and leave to sit for one minute. Whisk until smooth.

Butterscotch sauce: Cut the butter into chunks. Put all ingredients in a saucepan, put on a medium heat and bring to boil while whisking. Gently simmer a few minutes until a pouring consistency. Remove from heat and leave aside to cool.

Cheesecake base: line the bottom and sides of a 20cm springform tin with baking paper. Crush the biscuits until fine in a processor and add the melted butter and pulse until mixed. Tip into the springform tin and press down with the back of a spoon until smooth. Bake for 10 mins.

Cheesecake filling: In a processor put cream cheese, sugar and eggs and blend till smooth. Add remaining ingredients and pulse gently until combined, don’t over process. Pour onto the biscuit base and bake 45 -55 mins until set in the middle. Cool to room temperature and refrigerate until ready to serve. Ideally
