Crockpot ground beef casserole is an easy weeknight dinner made with ground beef, corn, pasta, onions, and peppers that are all seasoned well and topped with melty cheese.

If you’re looking for an easy dump-and-go meal to use up some ground beef, this crockpot ground beef casserole is the perfect solution. Ground beef casserole quickly became one of my most popular recipes on the blog, so making a slow cooker-friendly option was a must. It has all the same tasty components except it’s made in the crockpot instead of a baking dish.

Crock Pot Beef And Noodles

Using simple ingredients that provide flavorful results, this cheesy pasta and ground beef casserole is definitely one you’ll want to keep in the dinner rotation!

MEAT – You can useground beef, ground turkey, or even ground chicken depending on your flavor preferences. Other ground meats can be substituted as well such as venison or bison, making this a very versatile recipe. Ground Italian sausage mixed with ground beef or turkey would be a great flavor combination too!

ADDITIONS – While I have listed Red Golddiced tomatoes in the ingredients list, you don’t have to use that brand. The key was that they have green chiles already added. If you can’t find them, you can use a regular can of tomatoes and add a 4-ounce can of green chiles. Instead of orange bell pepper, you can use red – or omit it altogether if you must. You can also use drained canned corn in place of frozen corn.

CHEESE – The cream cheese adds lots of creaminess to this dish, I wouldn’t recommend skipping it. You can find aMexican cheese blendalready shredded at the grocery store. However, if you have a preference for cheese feel free to use whatever you like. I do recommend that you have a cheddar cheese and a jack cheese in the mix.

Store leftover ground beef casserole in an air-tight container (or portioned into multiple containers for separate meals) in the refrigerator for 4-5 days.

Easy Slow Cooker Beef Stroganoff

I always recommend browning the ground beef in a skillet before adding it to a crockpot so your dish isn’t swimming with fat. Even if you use leaner ground beef or a lean meat of choice, it’s always preferred to brown it before adding it to a slow cooker. You do not have to fully cook the ground beef before adding it to the crockpot, just enough to give it an edge. I promise the texture of the beef is much better when done this way!

No, you do not cook the pasta beforehand. Simply add it to the crockpot during step 6, after the other ingredients have cooked for 6 hours. Once added, you will allow it to cook for 20 minutes in the crockpot.

Crockpot ground beef casserole is filling on its own thanks to the pasta and ground beef, but crunchy bread on the side never hurt! A crisp dinner salad is always a welcome addition as well. Top with a dollop of sour cream and sliced green onion for garnish.

We love crockpot recipes! I whipped up what I call crockpot hamburger casserole that was cheesy like cheeseburger macaroni and it was a hit!! With diced potatoes and onions it was a hearty meal that was almost better the next day! (originally published 9/19, affiliate links present)

If you’re looking for a pot full of pure comfort food, you’ve come to the right spot! My kids go crazy over this cheeseburger macaroni style dish every time I make it. I love the fact that it is a feel good meal that is pretty darn cheap to make and feeds a crowd.

Pair it with a side salad for a bit of freshness on the side and dinner is served. You could even use leftover taco meat inside if you had some in the fridge, or spicy ground sausage is wonderful too for the protein. I’ve used small shells instead of macaroni noodles just for fun too. There are tons of tweaks you can make.

Crockpot

Let me give you a peek of my pretty thang I bought recently. It goes with my kitchen so I can just leave it out on the countertop all the time. 😉

Crock Pot Homestyle Ground Beef Casserole

This came about like a lot of others on The Typical Mom really. I had a pound of ground beef and a few potatoes that needed to be used so I went on a pantry hunt!

You could leave out the potatoes but diced they bulked up the dish and gave it a bit of texture since I left the skins on.

Ok so let me tell you what we put into our version. Like I said, you could incorporate any sort of ground meat you preferred. With all the different variations we’ve made I would say half a roll of spicy sausage + 1/2 pound of hamburger is probably the best. Gives it a bit of heat but not too much.

Crock Pot Beef And Broccoli

A mixture like Mexican blend is great too if you can find that variety at your local grocery store. I have even made this with a dairy free cheese so my husband could enjoy it and the kids didn’t even know the difference. 😉

A mixture of cheddar and pepper jack is pretty darn good too, I usually just use what I have on hand at the time. Do you see my trend? Using what you have at home, I hate wasting food and casseroles are great ways of using up all the things right? 😉

Easy

We have! Try our Crockpot ground beef instructions if you’d like. I will also throw raw chicken or stew meat in there. With our 5 ingredient crockpot chili I usually make air fryer ground beef real quick and then throw that in.

What To Cook With Ground Beef

It isn’t a must but I usually do to give it more flavor and so it turns out more tender too. I like it nice and coated so all the flavors can seep into the proteins so my answer is, ideally yes you should.

Biggest tip to remember when making this slow cooker beef casserole: The noodles DO need to be submerged into the liquid. If not they won’t become tender like you want them to be in a casserole.

Creamy ingredients like cheese, milk (in other recipes) and sour cream should be added at the end too to maintain it’s flavor.

Hamburger Soup In The Slow Cooker

First I suggest spraying non stick spray inside your pot. Some opt to use crockpot liners, but personally the thought of cooking inside plastic is a no go for me. Totally up to you.

The last step is to add your cheese and sour cream, stir, and cook for 20 more minutes so everything melts together. Then serve!!

Ground

Keep in mind there are 3 cook times. The initial time, 30 minutes for the noodles, and an additional 20 to melt the cheese and everything together.
