Confession: I have an addiction to my coffee shop’s drive-through. It’s convenient, quick, and a java and pastry are the ultimate pick-me-up when my energy is crashing right around 3 p.m.

But that habit is starting to do a number on my budget, so I decided to recreate some of my favorite bakery case goodies at home. (And I may or may not have a fancy espresso machine hanging out in my online shopping cart. Decisions, decisions!)
Easy Gluten Free Blueberry Muffins
I already shared my secrets for bakery-style Lemon Poppy Seed Muffins, Coffee Cake Muffins, and just-like-Starbucks Lemon Yogurt Cake. Now, I’ve taken to the test kitchen to perfect a classic Blueberry Muffin recipe.
They can be fresh from the oven just 45 minutes from now, so I have even fewer reasons to swing by the coffee shop.
With all the money I’ll be saving, I think that espresso machine is sounding like a pretty reasonable and worthy investment, don’t you think?
Vegan Blueberry Muffins
Definitely. Cherries, raspberries, chopped peaches, chopped nectarines, or chopped apples would all taste incredible incorporated into this muffin batter. Let your creativity take the lead, just stick with 2 cups of your favorite fresh or frozen fruit and cut it to about the same size of blueberries.
You’ll notice that I call for melted butter for the muffin batter and cold butter for the streusel. This isn’t just to keep you guessing, I promise! The melted butter mixes seamlessly into the batter, while the cold butter is essential to create that craveable crumbly texture for the muffin topping. Try not to over work (and overheat) the streusel so it stays coarsely-textured.
You sure can. Mini muffin tin, jumbo muffin tin; do you! You’ll want to adjust the cooking time to avoid over- or undercooking.

Nothing shocking on the ingredient list, I’m sure, but let’s go over a few of the key ingredients and why I use them (and why I call for them in my blueberry muffin recipe).
Easy Blueberry Muffins Recipe
There are several reasons why muffins turn out dry . Most commonly this is caused by the batter either being over-mixed or over-baked in the oven. Make sure your oven is not running hotter than it leads on, or it will dry out the blueberry muffins in a hurry.. If the flour is accidentally over-measured, this could also do it. Make sure you are following my guidelines on how to measure flour properly.
After my chocolate chip muffins. Over the years, I decided the blueberries deserved a more distinct muffin base and so it has been changed. If you are looking for the original recipe, it’s not lost! Simply head over to my basic muffin recipe and add 1 ½ cups blueberries. It’s the same thing, and still a delicious recipe, though I prefer the new one here.

Double Blueberry Muffins Recipe
Storing Store blueberry muffins in an airtight container at room temperature for up to 2 days. Muffins may also be frozen for several months. Refrigerating will dry out the muffins and I do not recommend it.
Making as jumbo muffins: Divide batter evenly into a 6-count jumbo muffin tin. Bake on 425F (220C) for 8 minutes then reduce the oven temperature to 350F (175C) (do not open oven door) and bake another 13-15 minutes or until tops are beginning to turn golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.

Making as mini muffins: Divide into mini muffin tin. Bake on 375F (190C) (you will not change the temperature) until light golden brown on top and a toothpick inserted in the center comes out clean or with a few moist crumbs, approximately 11-13 minutes. You will get at least 24 muffins.

Today, we’re focusing on a basic, reliable blueberry muffin recipe. It takes about 10 minutes to prepare and 20 minutes to bake. That’s right. We’re talking about oven-fresh blueberry muffins in a half hour.
The trick to making these muffins tender is mixing the dry ingredients and wet ingredients separately. When you combine the two mixtures, use a gentle touch and mix only until the dry ingredients are moistened. Over-mixing will make the muffins slightly tough. (Although in truth, you can beat the bejesus out the batter and still get decent muffins.)

The same gentle technique goes for folding in the blueberries. Take your time and mix just until the berries are evenly distributed in the batter.
For dolloping batter in muffin cups, I swear by my trusty ice cream scoop. It fills the muffin cups almost exactly 3/4 full, which is ideal for this recipe.

Always test for doneness. After 20 minutes, insert a toothpick in the center of a muffin. If it comes out clean (no batter), the muffins are done. If they need a few more minutes, consider covering the tops of the muffins with foil so they don’t get overly browned.
Blueberry Cream Cheese Muffins
Use vanilla. I add vanilla to almost every baked good I make. Even if you don’t notice it directly, it adds a nuance that just makes everything a step better. One teaspoon of vanilla works great for this recipe. Just mix it in with the wet ingredients.
Try cake flour. Mixing a little cake flour in with all-purpose flour gives muffins a somewhat softer texture. I find that muffins with cake flour are even better the day after they’re made. The muffins condense more and feel more indulgent. For this recipe, try replacing 1/2 cup of the all-purpose flour with cake flour.
Sift. Whether you use straight-up all-purpose flour or the combo suggested above, sifting (or aerating) the flour can make a big difference. The bit of air that gets mixed into the flour helps the muffins rise to form a beautiful dome. I’ve kitchen tested this several times and muffins made with sifted flour always have a better shape. That said, these muffins could turn out flat as pancakes and they’d still be delicious.
Blueberry Muffins Recipe
Try yogurt. Before you measure out your cup of milk, consider trying this… empty out one of those single serve yogurt cups into your measuring cup. Top it off with milk until it reaches the 1 cup mark. Using a little yogurt as part of the milk component ensures that your muffins will be extremely moist. A ratio of 1/2 milk to 1/2 yogurt is an equation for success. I’ll often use vanilla-flavored yogurt (with additional vanilla extract). Plain yogurt works fine, but do yourself a favor and have fun with it. For extreme blueberry muffins, use blueberry-flavored yogurt.
Try sour cream. Treat sour cream the same way that you’d use yogurt above. It adds a richness to the muffins (due to its fat content) and a slight tanginess that many people enjoy.
