This baked steel cut oatmeal recipe is perfect for a make ahead delicious breakfast. It’s loaded with apples and cozy spices for a vegan and gluten-free baked oatmeal that is big on taste and low on the glycemic index.
Whole grains + fresh fruit, plant based protein and healthy fats is a great way to start the day. This is one of my favorite recipes for a healthy make ahead breakfast because it’s easy, delicious, and everyone loves it.

The chewy texture is my favorite thing about steel cut oats, but I don’t have time on busy mornings to make them. Delicious baked steel cut oats makes this an easy breakfast any day. It feels like cheating the system, but I’m totally down for the easy way out, that’s just as healthy.

Baked Apple Cinnamon Steel Cut Oat Cups
Preheat the oven to 375. You can use a 9″ square baking pan or a 9″ round pie plate to bake this recipe.
Mix together unsweetened almond milk, tahini, maple syrup and vanilla and then pour that onto the dry ingredients. Give it a stir.
I like the texture of shredded apples in this recipe. You could also do small diced apples. Either way, there is no need to peel the apples first. Apple peels contain fiber and phytonutrients.
Baked Apple & Peanut Butter Steel Cut Oats
Sprinkle the shredded apples on top of the oat mixture and mix well. A fork is a good choice to evenly distribute the apples throughout.
Let it sit for a minimum of 10 minutes. This will give the flax and chia a chance to absorb some of the liquid. You can stop here, cover tightly and refrigerate overnight, or proceed.
Bake in a preheated 375 degree oven until golden brown and the oatmeal is set. If the mixture has been sitting overnight, it may be done cooking after 45 minutes, otherwise it will likely take 55 minutes.
Berry Baked Steel Cut Oatmeal (vegan)
Yes, but they need a bit more liquid and will take longer to cook. Steel cut oats are the least processed oats and have a higher fiber content.
Steel cut oats are good source of soluble fiber and have prebiotic properties that are anti-inflammatory. ADequate daily fiber intakes helps keep your body healthy and functioning at its best.
Steel cut oats are low on the glycemic index because the soluble fiber is absorbed and digested slowly. Plus the healthy fats and protein from tahini and sliced almonds in this recipe further slow the digestive process, keeping blood sugar levels stable.

Non-dairy milk: I used almond milk. You can use any milk that agrees with your dietary preferences. Oat milk, soy milk or other nut milk varieties will all work well in this recipe. Opt for whole milk or the full fat version of your choice.
Baked Apple Cinnamon Steel Cut Oats
Types of Oats: This recipe was formulated for steel-cut oats. The texture of the steel cut oats is one of the best things about this recipe. Quick oats, instant oats, oat groats, Irish oats or rolled oats won't produce the same result. Baking Time: If you've let the steel cut oatmeal sit overnight, 45 minutes should be enough for them to set. If you're baking just 10 minutes after letting the mixture sit, the baked oatmeal may take 55 minutes.
To make Individual Servings: Evenly divide mixed dry Ingredients between 6 ramekins. Pour wet ingredients onto those, evenly distributed. Then top each with some shredded apples and mix well. Let sit for at least 10 minutes, or overnight. Sprinkle the sliced almonds on top, then bake In preheated 375 oven for 35 minutes.

' out. Only today, we're talking steel cut oats! I had a huge can of steel cut oats from awhile back that desperately needed some attention and to be used up. I was already planning on doing a spiced apple oatmeal bake but thought it would be fun to experiment with steel cut oats instead and wowza am I glad I did.
Easy Steel Cut Oats
This healthy apple baked oatmeal is packed with warming spices making it perfect for the fall season! It's made with feel-good ingredients making it naturally gluten free, egg free, dairy free and vegan friendly, too. The texture of steel cut oats is much more thicker and chewier and is really complimentary to the crunchy walnuts and soft caramelized apples. Plus, a generous drizzle of maple cashew cream... mhmmmm.
Baking steel cut oats is very similar to baking rolled oats. The only difference is that they take a bit longer to cook. So if you'd like, you can use rolled oats, about 1 ½ cups (150-160 grams) and bake for about 40 minutes.
What makes this baked oatmeal a bit different is that the apples and nuts are first quickly cooked on the stovetop with a touch of maple syrup and coconut oil. This helps soften and caramelize the apples-- I promise it takes less than 5 minutes and it's totally worth it! If you are in a rush, you can just dump chopped apples with the rest of the ingredients, though.
Steel Cut Oats Cookies
Next, add the flax egg, almond butter, maple syrup, apple sauce, non dairy milk and vanilla extract to a 8x8 inch baking dish and stir with a whisk until combined. Then add in the steel cut oats, baking powder, apple pie spice, salt, cooked apples and nuts and stir it through. Bake at 375 F for 45-50 minutes and breakfast is served!
The apples, nuts and some of the oats float to the top creating this really satisfying caramelized crisp surface, which pairs incredibly with a generous drizzle of maple cashew cream or yogurt.
Nothing beats baked oatmeal fresh out of the oven... but they totally can be meal prepped and made ahead of time for quick breakfasts throughout the week! Simply just store in an air tight container in the fridge once it fully cools for up to 4 days. If freezing, I do recommend portioning it out first so it's easy to take out and thaw.
