One Pot Quinoa and Black Beans has been a favorite easy and healthy weeknight recipe for me for years. It’s packed with nutrient-dense ingredients and tons of flavor from sweet corn, bell peppers, onions, and spices. It’s a perfect weeknight vegan/vegetarian, gluten-free, plant-based recipe that’s hearty, filling, and the whole family will love it!
This is “one of those recipes.” I’ve been making it for years- for myself, for friends, for potlucks, for meal prep… I come back to this recipe again and again because it’s a) easy; b) delicious, and c) so nutritious and healthy!

Dish.And it’s a really easy, one-pot meal! It’s vegan but will appeal to meat-eaters in its heartiness, and it’s packed with nutrient-rich quinoa, vegetables, beans, and tons of flavor.
Turkey Black Bean Quinoa Bake Recipe
This recipe is great on its own, but it’s also delicious rolled into a burrito or topped with fixings such as avocado and sour cream.
This recipe stays great as leftovers in the fridge for 3-5 days in an airtight container! This makes it great for meal prep. You can also double the recipe and eat it for dinner, then save leftovers to wrap in burritos or take for lunches later in the week

I use my Calphalon 5-qt. Sauté Pan with a lid for this recipe and other recipes that require a deep skillet. The tall edges make it easy to fit a lot of food and help prevent a mess if I stir too aggressively.

Be sure to rinse the quinoa if it doesn’t come pre-washed to avoid undesirable flavour and texture. I like to buy a pre-washed variety to save time.
Choose your bean. I love black beans in this salad, but navy beans and pinto beans are also great options. If you don’t have any beans on hand you can leave them out altogether, but I prefer to include them for the extra protein and fibre.

Buy extra lime. I always buy an extra lime in case two limes are not enough to yield a quarter cup. It’s so disappointing when limes aren’t as juicy as expected, and you don’t want to skimp on the lime flavour in this recipe! If you want a stronger lime flavour, increase the amount of freshly squeezed lime juice to 1/3 cup.

Adjust the spice. You can use more cayenne pepper in the dressing, depending on how spicy you like it. I find 1/8 teaspoon gives a hint of spice and tends to be a more kid-friendly flavour profile.

The best aspect of this Quinoa Black Bean Avocado Salad recipe is our shortcut approach. This recipe is based on the use of leftover quinoa – an easy ingredient to have at the ready in your fridge.
Don’t skimp on the olive oil! Heart-healthy fat like olive oil creates a luscious, super-addicting salad and helps your body absorb all the nutrients and phytochemicals from the quinoa and vegetables. I like to drizzle on an extra tablespoon or two at the very end for good measure.
As I mentioned earlier, this salad recipe is a great way to use cooked quinoa, especially if you are like me; always cook some quinoa as a part of your meal prep, use some right away and freeze the rest for later.
