Chicken breast combined with shrimp in the most delicious Cajun cream. The creamy tomato and wine-infused sauce adds so much flavor to the chicken and shrimp.

This creamy tomato wine sauce is my favorite part of this scampi recipe. The tomatoes are cooked in the butter, onions and wine. Then, the cream, broth, seasonings and fresh basil to seal the deal on the sauce. This is the perfect wine sauce recipe. You’ll be using for many other recipes.

This chicken and shrimp combination is perfect and so quick to make. Though it’s not fully baked like our chicken fajitas are, it is fully cooked on the stove-top which makes this one-pan dish so easy and quick to make.

Though this recipe isn’t quite a shrimp scampi recipe as it has the added heavy whipping cream, something about it still makes it feel like copycat recipes. The added cayenne pepper adds a Cajun taste to it and it’s is so good!

You want to use a dry white wine (meaning unsweet). Sauvignon Blanc, Pinot Grigio, Pinot Blanc or Chardonnay are all great choices (I used an inexpensive Chardonnay in this recipe with great results).

Shrimp are highly perishable, so it’s important to know how to pick out the freshest shrimp available, not just for taste and texture but also for safety. Many timesyou’re better off just buying frozen shrimp.

Rinse the shrimpunder cold waterto remove ice crystals. Place the frozen shrimp in a colander and rinse under cool running water for about 1 minute to remove any ice crystals and separate any shrimp that are frozen together. Shake the colander to remove as much excess water as possible. Place in fridge to finish thawing, up to 12 hours.

If you prefer to make garlic butter shrimp without wine, you can swap for chicken stock instead. I’ve also heard you can make garlic butter shrimp with Sprite or lemon-lime soda but this sounds very sweet/odd to me, so I’ve never tried it myself.
The same dry white wine you use to cook garlic butter shrimp makes for an easy pairing. Pinot grigio, sauvignon blanc, or unoaked chardonnay are some of my favorite wine pairings for shrimp.
Note that shrimp tend to dry out easily when reheated, so warm them slowly and gently and keep a close eye on them for best results.
