Growing up in a Jamaican household has its perks. Every Saturday morning there was Beres Hammond or Bob Marley playing in the house as we cleaned and if we children were good, mom made us these delicious fritters.

Then add your vanilla extract, cinnamon, nutmeg, brown sugar, and salt to bananas. Next, add your all purpose flour. I use a sifter to add my flour. If you don’t have one, no worries, you can still make the recipe. I just find the sifter allows my flour mixture to incorporate into my mashed bananas easier.
Stir with a spoon until your mixture is fully combined. Your batter should not be too thick or thin but should flow easily off a spoon.

Pour about ¼ cup oil in a 10 inch skillet and heat it over medium-high heat. Once your oil is hot, pour the fritters in pan by the spoonful.
Once bubbles appear in the top of the fritter and the bottom is golden brown, flip the fritters and cook until the other side is brown as well. Mine take about 2 minutes per side to brown.

Ma's Secret Jamaican Banana Fritters Recipe
Hi Pat, I haven't made these in the air fryer. However, I'm sure it can be done but it won't be exactly the same. If I were to make these in the air fryer, I'dd a little more flour to make them thicker, then air fryer them on 360 for about 10-12 minutes.
Thanks, I'm glad your 6-year-old loved them. It shouldn't turn out like a pancake, as there aren't any rising ingredients in the batter.Airy and perfectly sweet, these simple-to-make Banana Fritters have a surprising pop of banana in every bite! Ripe banana pieces coated in a sweetened flour batter, fried and glazed, make a delicious and unforgettable treat for the whole family.
I always have bananas on my countertop. Seriously. We’re pretty good about eating them all but you know how it is, sometimes those bananas just get away from you. When it happened recently I just wasn’t in the mood for banana bread. I know, crazy. I just wanted something a little different and I knew I hit the jackpot when I made this Banana Fritter recipe. My favorite part of these fritters is that the bananas aren’t blended in. Instead, there are chunks of banana that you bite into and it’s so delicious! Also, the glaze didn’t make the fritter too sweet or take over the flavor of the fritter so altogether, it was a perfect bite and a huge success in my house.

Pantry items: You will need flour, baking powder, brown sugar, salt, and cinnamon. Vegetable oil is also needed for frying the fritters.
STEP ONE: In a medium mixing bowl, whisk together the milk, eggs, melted butter, and vanilla extract. In a large mixing bowl, mix the flour, baking powder, brown sugar, cinnamon, and salt. Add the wet ingredients to the bowl of dry ingredients and stir until just mixed. Then fold in the chopped bananas with a rubber spatula.

STEP TWO: Heat the vegetable oil on medium-high heat in a large cast-iron skillet or a Dutch oven. Using a small cookie scoop or tablespoon, add a few spoonfuls of the batter to the oil and cook for 2 minutes on each side. When they are golden brown remove the fritters and place them on paper towels to cool.

Banana Fritters are a favorite dish across the globe but especially in Southern Asia, India, Africa, where Banana Fritters originated, and the Caribbean. Depending on who is making them, they can range from savory to sweet and from donut-like to more of a patty. Some parts of the world use plantains instead of bananas, which would also make a wonderful substitution in this recipe too!
A batter that is dropped into frying oil and cooked is generally called a fritter. These are usually sweet, but there are savory versions, such as corn fritters and sometimes hushpuppies get lumped into the definition as well. As a side note, because Banana Fritters are dolloped, fried batter, you can not use your air fryer for this recipe.

Today, I find myself seated on the sofa typing away as my daughter sings along to Frozen for the 100, 000th time. Harmony dances around the living room in her pajamas and to be honest, I’m still in mine too. We’re adjusting to a new normal that, for all intensive purposes, is not normal. Some days are harder than others but still, we find ways to laugh, rejoice and tap into that inner Queen Elsa (or Princess Anna, depends on the day).

It is also exciting because I think about the joy I feel as a newer parent, and feel it is so appropriate to congratulate my friend Julianne of Beyond Frosting who is due super soon with her baby boy!
