Homemade Tomato Soup is a classic soup recipe made with fresh ripe tomatoes and fresh herbs blended with a hint of cream.
The tomatoes are roasted with a hint of garlic to bring out the natural flavor and then blended to a creamy finish. Velvety rich, jam-packed with flavor, and easy to make!!

TOMATOES FOR SOUP Any kind of tomatoes will work but of course use the ripest, reddest ones you can find as they’ll have the best (and sweetest) flavor. In a pinch you can use canned tomatoes, they won’t have the same flavor as roasted tomatoes but are still great. Use a portion of canned fire-roasted tomatoes for extra flavor.
Homemade Tomato Soup Recipe
The tomatoes are roasted along with a bit of red bell pepper. The red pepper adds a bit of sweetness to balance out the acidity of the tomatoes. Cooked carrots will also work (I add shredded carrots to marinara for sweetness too).
Of course, this varies based on the variety of tomato but to give you a general idea here are the approximates. This recipe is forgiving so it is ok if there’s a little bit more or less.
This recipe calls for heavy cream which is optional. I don’t generally add the cream, however, sometimes tomatoes can be very tart (depending on the variety) so the addition of extra cream can help smooth out the flavor.

Other additions for a tart soup include a shredded carrot cooked with the mixture, pinch of sugar, a couple of pats of butter or some coconut milk (make sure it’s unsweetened).
I generally add some cream if the tomatoes are extra tart, most often nice ripe tomatoes won't require the cream. Taste the soup once blended and decide if you'd like to add the cream. Stir in a little at a time.

Minute Dairy Free Tomato Basil Soup
Being making this easy tomato soup by combining tomatoes, onion, and garlic in a large bowl. Toss the ingredients with olive oil, salt and pepper and stir until evenly distributed.

Next, spread the tomato mixture onto a baking sheet in a single layer and roast for 15 minutes. After 15 minutes, remove the tomatoes from the oven, stir, and roast for an additional 15 minutes, broiling during the last 3 minutes so that some of the tomatoes get lightly charred.
One the tomatoes, onion and garlic are roasted, add the mixture to the container of a high-powered blender (Vitamix), making sure to scrape all the contents from the baking sheet into the blender. Add fresh basil and blend the mixture on high speed until smooth (about 50 seconds).

My favorite way to thicken soups, stews, gravy, etc. is by making a roux, which is how we do it in this tomato soup recipe. Begin by melting the butter over medium-high heat in a large pot.
Then, add flour to the melted butter and whisk to combine. Cook until butter and flour mixture is golden brown (30-60 seconds).
Next, add the blended mixture to the pot and whisk to combine. If desired (for a creamier soup) add ¼ to ½ cup heavy cream. Cook over medium-low heat for 15 minutes, taste and adjust salt and pepper as desired.

Since the tomato soup is pureed at the end, you can save time processing them through a food processor versus hand chopping!
Like many tomato-based foods, the flavor actually improves the next day making it perfect for leftovers or to chill and eat it cold.

Easy Creamy Vegan Tomato Soup Recipe
Though difficult to capture in the photo, the mixture will be more golden in color and the thickening is obvious when stirring the mixture.
STEP 6: With the heat on low, allow the mixture to simmer, stirring occasionally, until the onions are cooked and the tomatoes are soft (approximately 30 minutes). Do not bring to a boil!
