Garlic Herb Slow Cooker Potatoes. These potatoes are a game changer! A must-save for Thanksgiving, Christmas or any event where you don’t want to use your stove/oven to cook potatoes.

I’ve cracked the code on a simple fall side dish. These tender potatoes, thrown into a slow-cooker with a dash of olive oil and herbs and… that’s it. Yup. Couldn’t be easier. Especially for my friends who don’t love to cook

I admit I was a little skeptical that potatoes would taste this good in a slow-cooker. I wanted to come up with a simple side dish that would get us through the following months. A potato recipe for times where we don’t really want to cook, times when the stove and oven will be packed with other items, like Thanksgiving, and times when we want to use our slow-cooker, but not for soup.

Best Loaded Slow Cooker Potatoes Recipe

These crockpot potatoes do double, triple duty. All of the above and customizable for whatever flavor profile you’d like. I’m partial to herbs and garlic so that’s what we are going for. These would also taste fantastic with curry powder, paprika or chili powder. If it will taste good on a potato, it will work in this dish.

I choose fingerling potatoes for this recipe, but any small potato will work. Fingerling potatoes are one of my favorite potato varieties with its delicate yellow skin and warm yellow center.

This varietal delivers a rich and authentic potato flavor – earthy with a natural nutty finish. The taste is full and sumptuous, requiring little seasoning or embellishment. Perfect for theseslow cookerpotatoes! They really don’t need much.

Cheesy Crockpot Potatoes

To prevent sticking, lightly coat the inside of aslow cookerwith nonstick spray. Place the potatoes, olive oil, garlic, herbs and salt/pepper into the pot. For a richer taste, you can substitute melted butter, regular or non-dairy, instead of olive oil.

Stir together, then cover and cook on low heat for 4 to 5 hours or on high heat for 2 to 3 hours, until potatoes are fork-tender.

Just before serving, add lemon juice and toss until combined. For an extra hit of umami flavor, my husband loves to sprinkle parmesan cheese on these potatoes while warm. Dairy-free parmesan cheese can also be used.

Slow Cooker Cheesy Scalloped Potatoes Recipe

Dried herbs are move convenient and cost-effective, which is why I call for them here. However, you can substitute fresh herbs if you’d like. You can also swap in different herbs, like rosemary or Italian seasoning, if you’d like.

These potatoes are best suited for a slow cooker, but can be made on the stove top as well. Because they’ll need more moisture, you’ll need to add vegetable broth to the potatoes.

Combine all ingredients as directed along with a cup of vegetable broth. Cover and simmer over low heat until potatoes are tender, about 15-20 minutes. As needed, add more broth to prevent the potatoes from sticking to the bottom of the pain.

How To Make Crock Pot Baked Potatoes

These herb potatoes don’t work as well in the Instant Pot as they get too mushy. For Instant Pot potatoes, I recommend myInstant Pot Mashed Potatoesinstead. Ready in just 15 minutes!

Highly recommend saving this recipe for Thanksgiving or Christmas. They are the perfect holiday food because you don’t need to make extra room on the stove or in the oven for potatoes!

Of course these potatoes are a no-brainer in the cold winter months, but I also love cooking potatoes in the slow cooker in the spring and summer because I can make them without turning on the stove or oven, keeping my kitchen oh-so cool.

This recipe couldn’t be easier to make and is one of my go-to side dishes for busy weeks or fun get-togethers with family & friends.

Simply add your small potatoes, olive oil, garlic, and salt to your crockpot, and then let your slow cooker work it’s magic.

After it’s cooked, you can add any fun extras that you want (like fresh herbs, an extra drizzle of olive oil, or flaky salt) & you’re ready to dig in!

Slow Cooker Sweet Potatoes

And, because nearly all of my slow cooker vegetables are dump-and-go (meaning there is no pre-browning or sautéing required) the prep is fast and easy.

As a bonus, the slow cooker takes the load off the oven and stove top, making it a fantastic option for potlucks, parties, and holiday meals.

You can also use a mixture of potatoes (as I did in the photos you see here) – I used a mix of baby yellow potatoes and small red potatoes, and to ensure even cooking, I halved the red potatoes so everything cooked through evenly.

Tip: Please note that this recipe will not work with large russet potatoes. If you want to use large russet potatoes, make this easy slow cooker roasted potatoes recipe instead!

Potatoes: Unpeeled, small potatoes (such as small red potatoes, baby yellow potatoes or even fingerling potatoes) work best for this recipe. You can even use a variety of those mixed together. But note that this method will not work with large russet potatoes. If you prefer to use russet potatoes try this slow cooker roasted potatoes recipe, or this slow cooker baked potato recipe.

Extra virgin olive oil: I love the light, buttery flavor of the extra virgin olive oil in this recipe. But you can also use any other neutral flavored oil in its place like avocado, vegetable or canola oil.

Garlic Herb Slow Cooker Potatoes

Garlic cloves: Fresh minced garlic definitely elevates this simple recipe, but if you’re very short on time or don’t have any on hand, 1 teaspoon of granulated garlic powder can be substituted.

Kosher salt: Look for kosher salt with the regular iodized salt at the grocery store (it has a subtler flavor). Use less iodized salt if that’s what you have on hand.

If you want to add more vegetables to the potatoes: add 1 pound carrots, scrubbed and cut on a 1-inch diagonal in place of 1 pounds of the potatoes.

Seasoned Chicken, Potatoes And Green Beans

If you want to make garlic-herb potatoes: add fresh chopped herbs (like flat leaf parsley, basil, thyme or rosemary) after cooking and toss while the potatoes are still hot. Also, be sure to use fresh garlic (instead of the garlic powder) for maximum garlicky flavor.

If you want to make garlic-Parmesan potatoes: simply sprinkle some fresh Parmesan cheese (traditional or vegan Parmesan) on top of the potatoes after cooking. I like to add mine just before serving for the best flavor.

Tip: You can also build your own nourishing bowl with these slow cooker potatoes as the base. Then just add any fresh greens, protein of choice, fresh or cooked veggies, and top with your favorite easy dressing or sauce.
