Sure you mix in carrots, meat, or seafood but it’s sufficient with just peas and onions.

Fried Rice is a Chinese rice dish commonly served as a side with takeout. It’s best prepared with leftovers like cooked rice and veggies. Traditionally fried rice is stir-fried in a large wok although a cast-iron skillet or saute pan is ideal. The main ingredients are cooked rice and eggs, however, mixed vegetables like peas, scallions, or even meat and seafood are commonly seen in fried rice recipes.

Fried rice is best when enjoyed the day it is made, however, leftovers are good too!! Place leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, you can place in the microwave or reheat on the stove-top until heated through. PRO TIP: adding about 1 tablespoon water when reheating will help keep the moisture in the rice and make leftovers just as scrumptious as when first served.

Is Fried Rice Unhealthy? Nope! In fact, you can make it even healthier by using brown rice and reduced sodium soy sauce. Another great option is to use cauliflower rice in place of the white/brown rice.

What can I use in place of chicken? Shrimp, diced ham, pork, or ground beef are all great options to use in place of the chicken. You can also omit altogether for a meatless meal.
How do I add a bit more flavor? Feel free to add more soy sauce to this recipe to fit desired taste. You can also add a splash of Sriracha sauce to each plate upon serving.
Can I freeze the leftovers? Yes!! Simple place in a freezer safe container or bag and freeze up to 2 months. Thaw and reheat prior to serving. Works great!

I’ve used egg and a basic mix of frozen chopped vegetables – because I totally buy into the whole “snap frozen” thing and this is intended to be super quick ‘n easy. Just carrots, peas and corn (still frozen, don’t even need to thaw).
But don’t let my laziness influence you! Feel free to use fresh veggies – whatever you want. Try adding proteins like chicken, shrimp/prawns, tofu.

The rice needs to be cold, day old rice because the rice dries out in the fridge so the Fried Rice will have the right texture. Freshly cooked rice is too wet so it makes the rice clump together. But it’s still tasty – so don’t
Nope. A skillet will work just fine – just make sure it’s a big one so you can toss the rice around without it flying everywhere (the shape of woks is designed especially for wild tossing!).

Fried Rice is so good, I’d happily scoff down an entire bowl of it as a meal. But let’s face it, it’s not the most well rounded meal.
So serve it as a side for any Chinese or Asian main dish, or make a larger banquet. Here are some ideas:

Make a meal out of dishes ordinarily served as starters by adding a side of Fried Rice. Things such Hot and Sour Soup, Chinese Corn Soup, Spring Rolls, Chinese Lettuce Wraps (San Choy Bau) or Egg Foo Young.
