French Dip Recipe
Chuck roast is slow-cooked in beef broth and onions until perfectly melt in your mouth tender. It’s set on a crusty roll and dipped in the juices for the perfect sandwich!
BREAD French Dip sandwiches scream for baguette-style French rolls. I love a crusty roll with a bit of chew plus it softens when dipped without falling apart.

Truthfully, any bread that is dense enough to hold all the meat and dipping into the au jus will do just as well! Kaiser rolls? Yes! Onion rolls? Yes? Even heavy burger buns will do in a pinch!
Classic French Dip Sandwich
BEEF Most French dip recipes are made with chuck or rump roast. The beef cooks until tender and we find it easiest to pull the beef into big chunks instead of cutting it. As long as it is braised in liquid and extra tender, it will be perfect in French dips!
AU JUS This is the juices in the slow cooker we use for dipping. I add plenty of onions plus a sprig of rosemary for flavor.
CHEESE I do not shy away from cheese however I don’t usually add cheese to this sandwich. If you want to add cheese, provolone is a great choice!
French Dip Sandwich
Technically, the ‘au jus’ is simply the liquid in the slow cooker that the chuck roast and other ingredients were cooked in.
I like to add the tiniest bit of cornstarch mixed with water to the slow cooker while the meat rests. The just shouldn’t be thickened like it would when making make gravy but I do like to add a tiny bit to it.
You should have lots of flavorful juice in the slow cooker. Once shredded or cut, you can add the beef back to the juices to keep it warm. This is a great way to serve a crowd

Don’t forget to serve with a side of savory coleslaw or some oven baked french fries to really round out this meal.
Option: Combine 1-2 teaspoons of cornstarch with an equal amount of water. Add the the juices in the slow cooker while the meat is resting. You do not want to thicken the jus but this just adds a bit of body.

Slow Cooker Easy French Dip Sandwiches Recipe
This simple recipe is pretty much perfect as is. For a lighter au jus, you could swap the beef broth for vegetable broth. For a lower sodium option, you can skip the au jus sauce mix and add homemade Italian seasoning instead of Italian dressing mix.

Feel free to swap the Provolone for mozzarella if you prefer. Try adding some caramelized onions or roasted mushrooms to your sandwiches to take them up a notch!
Because it’s traditionally served on a French roll. That was easy…huh? We like it on a hoagie because you can really hold on while you dip in that amazing sauce.
Classic French Dip Sandwiches
For this French Dip recipe, you want a creamy white cheese such as mozzarella, Provolone, or if you live in St. Louis like me, Provel is an awesome option!
The au jus sauce will automatically be made in the slow cooker as the beef cooks. If you need more sauce you can always prepare extra according to package instructions on an au jus packet. But you should have plenty of sauce made in your crockpot as your beef cooks.
We use a top or bottom round roast (boneless chuck roast) for this French Dip Au Jus Recipe. It’s okay to use a tougher cut for this recipe because it will get super tender in the crockpot.
Crockpot French Dip Sandwich Recipe
I recommend storing the meat, cheese, au jus, and buns separately until ready to reheat. Store the French dip beef and au jus sauce in separate airtight containers in the refrigerator for up to 4 days. Follow step 8 in the recipe to reheat.
You can freeze the French dip meat and au jus separately in airtight containers for up to 3 months. Let thaw overnight before reheating.

Serve these delicious French dip sandwiches with homemade french fries or air fryer potato wedges to sop up all of that delicious au jus. Sandwich shop sides like coleslaw and potato chips would be just the perfect complement.

This is a hunka hunka burnin’ love. I mean beef. It’s a boneless rib loin, and if you cut it into individual steaks, you would have ribeye steaks. Translation: This hunk of beef is darn expensive. You can substitute a hunka hunka sirloin instead! It’s not as tender, so you’ll just want to slice it a lot more thin. Either works! I tied it a couple of times with string to hold the piece of meat together a little better.

French Dip Sliders
In a small bowl, mix together some salt, pepper, ground oregano, and ground thyme. A winning combo for any piece of beef.
Sprinkle the seasoning mix liberally over the beef and use your hands to rub it all over the surface and in the cracks and crevices. Keep in mind that this will be roasted and then sliced, so each slice of meat will only get the small rim of flavor around the edge. You can’t over season!
Place the meat on a roasting rack in a roasting pan and roast it to medium-rare, about 20 to 25 minutes, until it registers about 125 to 130 degrees on a meat thermometer. This will be rare to medium-rare, so if you like things a little less red in the middle, you can take it to 135 degrees. Don’t overcook the meat, though! An overcooked ribeye is a tragic occurrence!
French Dip Sliders (with Caramelized Onions)
Take the meat out of the pan, set it aside on a cutting board, and cover it with foil. Place the roasting pan on the stovetop burner over medium-high heat, then throw in some sliced onions and minced garlic. (Obviously, don’t clean the pan first. That would be a tragic occurrence, too!)
Stir it all together, then pour in a can of beef consomme, which will forever make me think of my mom, some beef broth, dry sherry (or white wine), Worcestershire sauce, soy sauce (just a little!), and a cup of water. Bring the mixture to a boil, then turn the heat to low and simmer it for 45 minutes, until the flavors are deep, rich, and magical.
Remove it from the heat after the cooking time and pour it through a fine mesh strainer. Reserve both the liquid and the onions for the sandwiches!
